This family recipe dates back to the 1930s, when my grandmother started making her clever breakfast roll-ups. -Janet Abate, North Brunswick, New Jersey

Yield 10 roll-ups.

Number Of Ingredients 9

1/3 cup finely chopped onion
1 tablespoon butter
3 cups cubed day-old bread
1/4 teaspoon celery salt
1/4 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon pepper
1 large egg, lightly beaten
10 bacon strips

Steps:

  • In a small skillet, saute onion in butter until tender. In a large bowl, combine the bread cubes, celery salt, garlic powder, salt, pepper and onion mixture; toss to mix evenly. Add egg; toss to coat bread cubes. Roll into ten 1-1/4-in. balls. Wrap a bacon strip around each ball. Secure with a toothpick. Repeat with remaining ingredients., In a large skillet, cook bacon roll-ups on all sides over medium heat for 18 minutes or until bacon is crisp and a thermometer inserted into stuffing reads at least 160°. Drain on paper towels.

These roll-ups from our Test Kitchen are sliced thick, then stacked slightly askew to resemble a backbone. Feel free to use other fillings.

Number Of Ingredients 8

3/4 cup garlic-herb spreadable cheese
6 flour tortillas (8 inches), warmed
1 cup fresh baby spinach
6 thin slices deli ham
12 thin slices hard salami
6 slices provolone cheese
1/2 cup chopped green pepper
1/2 cup chopped sweet red pepper

Steps:

  • Spread 2 tablespoons of spreadable cheese over each tortilla. Layer with spinach, ham, salami and cheese. Sprinkle with peppers. Roll up tightly and wrap in plastic. Refrigerate for 1 hour or until firm. , Unwrap and cut each into six slices. On a serving plate, stack roll-ups to resemble a spine.

Boneless chicken breasts stuffed with cream cheese and chives. I serve it with homemade rice pilaf and steamed broccoli. The cheese sauce is also delicious on the rice and broccoli!

4 skinless, boneless chicken breast halves
1 (8 ounce) package cream cheese with chives
2 tablespoons melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Pound meat to between 1/4 and 1/8 inch thick.
  • Spread about a tablespoon of seasoned cream cheese on the bottom of each breast half. Roll up, and place in a casserole dish. Drizzle melted butter over rollups.
  • Bake in the preheated oven for about 30 minutes, or until chicken is cooked through and juices run clear.
  • Melt extra cream cheese with chives in the microwave, and use as sauce for the chicken.

Number Of Ingredients 8

2 lbs round steaks, pounded thin (or if you can find them, get precut, thin beef cutlets)
1 1/2 lbs bacon
1 large onion, sliced
2 cups sliced button mushrooms
kosher salt
pepper
1 tablespoon cornstarch
3 tablespoons water

Steps:

  • If not precut, cut beef into strips.
  • Lay a piece of bacon on top of each piece of beef and roll up. Secure each with a toothpick.
  • Season with salt and pepper.
  • Fry remaining bacon in large skillet and crumble. Reserve bacon fat in pan.
  • Sear roll-em-ups on all sides in bacon fat.
  • Put roll-em-upa, bacon pieces,onion,and mushrooms in a crock pot set to low.
  • Add more salt and pepper to your taste.
  • Cook 6 hours.
  • Stir together cornstarch and water and mix in gently to thicken sauce.
  • Serve over or alongside mashed potatoes.(remember to remove toothpick!).
  • Enjoy!

2 (3 ounce) packages cream cheese with chives (softened)
1 tablespoon milk or 1 tablespoon mayonnaise
25 slices mixed grain bread (crusts removed & cut in half)
25 slices bacon (cut in half)
parsley sprig (optional)

Steps:

  • Combine cream cheese and milk (or mayonnaise) stirring until of spreading consistency.
  • Spread 1 teaspoon of cheese mixture on each halved bread slice.
  • Roll tightly from the smallest end.
  • Wrap with bacon and secure with toothpick.
  • Place on broiler pan.
  • Bake at 350 degrees Fahrenheit for 30 minutes.
  • Turn if necessary.
  • Garnish with parsley if desired.
  • Note: These may be assembled ahead of time and frozen before cooking. To serve, remove frozen rollups from freezer and allow to thaw in the refrigerator over night. Then bake at 350 degrees Fahrenheit for 30 to 40 minutes.
