I'm a huge fan of taking classic dishes and adding some flair to them. I also like to change up heavier dishes, like Cobb salad. I've traded out typical chicken for crunchy falafel that's just as satisfying. - Jenn Tidwell, Fair Oaks, California

1 package (6 ounces) falafel mix
1/2 cup sour cream or plain yogurt
1/4 cup chopped seeded peeled cucumber
1/4 cup 2% milk
1 teaspoon minced fresh parsley
1/4 teaspoon salt
4 cups torn romaine
4 cups fresh baby spinach
3 hard-boiled large eggs, chopped
2 medium tomatoes, seeded and finely chopped
1 medium ripe avocado, peeled and finely chopped
3/4 cup crumbled feta cheese
8 bacon strips, cooked and crumbled
1/2 cup pitted Greek olives, finely chopped

Steps:

  • Prepare and cook falafel according to package directions. When cool enough to handle, crumble or coarsely chop falafel., In a small bowl, mix sour cream, cucumber, milk, parsley and salt. In a large bowl, combine romaine and spinach; transfer to a platter. Arrange crumbled falafel and remaining ingredients over greens. Drizzle with dressing.

1 loaf (1 pound) unsliced Italian bread
1/2 cup balsamic vinaigrette or dressing of your choice
5 ounces fresh baby spinach (about 6 cups)
1-1/2 pounds sliced deli ham
4 hard-boiled large eggs, finely chopped
8 bacon strips, cooked and crumbled
1/2 cup crumbled Gorgonzola cheese
1 cup cherry tomatoes, chopped

Steps:

  • Cut loaf of bread in half lengthwise; hollow out top and bottom, leaving a 3/4-in. shell (discard removed bread or save for another use). Brush vinaigrette over bread halves. Layer spinach, ham, eggs, bacon, cheese and tomatoes on bread bottom. Replace top. Cut loaf in half lengthwise from top to bottom; cut crosswise 5 times to make 12 pieces.

1 (6 ounce) bag fresh Baby Spinach
2 ounces thick slab bacon, cut into 1/2 inch cubes
1 hard-boiled egg, chopped
2 ounces chicken breasts
1 tablespoon olive oil
salt and pepper, to taste
your favorite balsamic vinaigrette

Steps:

  • In a medium skillet, cook chicken in olive oil until brown;remove from skillet and cut into 1/2-inch strips.
  • Add bacon cubes to skillet and cook over medium heat for 2 minutes or until crisp; reduce heat to low and add vinaigrette dressing to bacon, cook, stirring for 30 seconds.
  • Place baby spinach in a large bowl; pour dressing over the baby spinach and toss well; add the chicken strips and cooked egg.
  • Serve immediately.

100 g small black olives

Steps:

  • Whisk together the olive oil and the lemon juice.

  • Season the salad with sea salt and freshly ground black pepper.

1 piece skirt steak (4 ounces)
Coarse salt and ground pepper
1 tablespoon olive oil
1 tablespoon red-wine vinegar
3 cups baby spinach (from a 5-ounce bag)
1/2 cup seedless red grapes, halved
1 ounce blue cheese, crumbled
1 tablespoon coarsely chopped walnuts

Steps:

  • Heat toaster-oven broiler (or oven broiler), with rack set 4 inches from heat. Season steak with salt and pepper; place on a broilerproof pan. Broil 4 to 6 minutes, without turning, for medium-rare. Let rest 5 minutes.
  • Meanwhile, in a medium bowl, combine oil and vinegar; season with salt and pepper, and whisk to combine. Add spinach; toss to combine. Thinly slice steak crosswise. Place spinach, grapes, and steak on a serving plate. Sprinkle with cheese and walnuts.
