BABY FINGER FOOD - BROWN SUGAR SWEET POTATO FRIES
I found this one on wholesomebabyfood.com and posted it here for safe keeping. These fries bake up soft and delicious with the addition of cinnamon and brown sugar. The little ones can't keep their hands off of them! They are recommended for babies that are 6 months and older, but they also advise speaking to your pediatrician before starting your baby on solids. Also, remember to follow the RULE OF FOUR (wait 4 days after introducing new foods) and make sure your baby has had no allergic reactions to any of the foods in this recipe before serving it!

Steps:
- Preheat oven to 400 degrees (F).
- Scrub sweet potatoes, clean and/or peel them if baby cannot handle the skins.
- Cut the sweet potatoes into into strips that you may then cut down after baking.
- In a large bowl, add about 1/4 cup of olive oil.
- Stir in the cinnamon.
- Toss the cut up sweet potatoes into the bowl and stir so that the potatoes are drenched with the olive oil mix.
- Dump mixture onto a baking sheet and drizzle the remaining olive oil in the bowl over the potatoes on the baking sheet and swirl and stir them so they're all covered and the olive oil is spread out on the tray.
- Sprinkle brown sugar over the sweet potatoes.
- Bake for approx 30-45minutes or until tender.
- The skins may become crispy but the actual potato "meat" will not. They will be a bit mushy like. These will not look or bake up like regular white potato French Fries so don't be alarmed.

BAKED SWEET POTATO "FRIES"
Steps:
- Preheat the oven to 450 degrees.
- Halve the sweet potatoes lengthwise and cut each half into 3 long spears. Place them on a sheet pan and toss with the olive oil. Spread the potatoes in one layer. Combine the brown sugar, salt, and pepper and sprinkle on the potatoes. Bake for 15 minutes and then turn with a spatula. Bake for another 5 to 10 minutes, until lightly browned. Sprinkle lightly with salt and serve hot.
SWEET POTATO FRIES
These fries are made from sliced sweet potatoes and baked in the oven until crisp on the outside and chewy inside. Delicious!!!

Steps:
- Preheat oven to 350.
- Cut sweet potatoes in half and then slice into small strips that resemble standard french fries & place in large mixing bowl.
- Sprinkle potatoes with olive oil & all spices, toss until each potato is covered in oil and spices.
- Spread potatoes on boiling pans or wire racks over baking sheets (allows for excess oil to drip and not sit on fries).
- Bake for 45 minutes to 1 hour (until browned, they will still be pliable).
- Serve with sour cream or my spicy sour cream dip.

- Preheat oven to about 400°F.
- Wash and cut potatoes into fries. Use only parts with the skin on.
- Cover with whipped egg whites and then taco seasoning.
- Toss in a ziploc bag with flour. Use a lot or a little depending on how crispy you want them.
- Spray pan with Pam and cover with salt to prevent sticking.
- Lay fries out flat and don't let any touch.
- Cook for about 7 minutes then five with the broiler.
- Turn and do the same thing until they're brown but not burned.

- Wash and dry the potatoes and slice into 1/2-inch thick rounds; cut the rounds into 1/2-inch thick fries (it's your choice if you want to peel the potatoes or not prior to cutting). Toss the potatoes in a bowl with oil, chili powder, garlic powder, and salt.

- Preheat oven to 350 degrees F.
- Peel sweet potatoes and then slice into French fry style sticks.
- Line a jelly roll pan with a sheet of baker's parchment paper.

- Soak your spiralized sweet potatoes. DO NOT SKIP THIS STEP. Soak in cold water for at least 1 hour, although we usually go with the 12 hour overnight thing. It's fine if it's only one hour. The reason for this is that it draws the excess starch out of the sweet potatoes helping them to cook through better to be crispy on the outside but still tender on the inside without burning. Remove them and allow them to air dry for about 30 minutes.

- Regarding peeling the sweet potato: Peel the sweet potato if your baby is brand new to finger foods, I always find that if the baby is 6 or 7 months old they have a problem swallowing the skin. Once they become used to finger foods (around 8-9 months) then you don't have to peel anymore.
- Cut the sweet potato in half, and then cut up into 1/2 inch thick long strips, or about the size of your finger. If the piece is very long, you can chop them in half again.
- Place sweet potatoes directly on baking sheet. Pour olive oil on top and stir to coat them. Make sure they are single layer and not on top of each other.
