BABY BEAR SOUP

Split Pea Soup, just like Mom used to make. She called it "Baby Bear Soup" to entice me to eat it when I was a little girl. She got the idea from a local restaurant called "Tumenello's" after my grandparents took us all out to eat when I was a toddler.

1 tablespoon olive oil
1 medium onion, chopped (about 1 cup)
1 medium carrot, chopped (about 1 cup)
1/2 cup celery, chopped
1 garlic clove, chopped
1 (16 ounce) package split peas, dried
5 -6 cups water (start with 4, add more as necessary)
1 medium potato, chopped
1 bay leaf
1/4 lb lean ham, chopped (or meaty ham bone)
1/4 teaspoon tarragon
2 -3 dashes hot sauce
1/4 teaspoon white pepper
1/4 teaspoon red pepper flakes
1/2 teaspoon salt (add more to taste when soup is ready to serve)
1 teaspoon molasses or 1 teaspoon brown sugar

Steps:

  • In a large soup pot, sweat onion, carrots, celery, and garlic in 1 tablespoon olive oil over medium heat until tender, stirring often.
  • Wash peas several times until water runs clear, removing any discolored peas. Add water, peas, potato, bay leaf, ham, and seasonings. Turn heat to medium-low and simmer for several hours, adding water as needed.
  • 3. Taste and add more salt or hot sauce before serving.

I am a purist when it comes to Baby Lima Bean Soup and don't like to make it fancy but to keep it simple just like Monty's. I do add a few more seasonings for flavor but that's all. It's...

SOAK BEANS OVERNIGHT
1 lb baby lima beans, dried
8 - 10 c water to cover
COOK BABY LIMA BEAN SOUP NEXT DAY
water to cover
4 c vegetable broth
1 medium onion, diced
4 - 5 medium carrots, diced
1 medium meaty ham bone
1 medium sized piece of ham, you'll dice later
2 - 3 clove garlic,minced
1 tsp celery salt
1 Tbsp dried celery flakes
salt & pepper

Steps:

  • 1. Sort and rinse beans before soaking. Then place in a medium sized bowl the sorted beans and 7-8 cups of water.
  • 2. Let them soak overnight.
  • 3. Drain and rinse the baby lima beans.
  • 4. Add to your cooking pan/pot, Ninja Cooking System or crockpot.
  • 5. Add your vegetable broth, carrots, onions, garlic and the rest of the ingredients. Add water to cover ham bone. You'll cook your soup for 3 - 4 hours on a medium heat. Stirring occasionally and checking to see if you need to add any more water.
  • 6. When soup is ready, I take out the ham bone and ham. I dice up the ham in small pieces and place back down in the soup. I usually put the ham bone back into the soup till I'm ready to freeze up what is left over.

  • Rinse and sort beans. Add 1 pound of beans to a pot filled with 8 cups of hot water and on high heat, boil beans in a rapid boil for 3 to 5 minutes. Remove from heat, cover with a lid, and set aside for 1 hour. Drain water and rinse beans again in cold water.
  • In a large heavy soup pot or a slow-cooked pot, sauté on medium heat the vegetables and pancetta in olive oil until the pancetta are cooked and onions and celery have softened about 5 minutes.

  • Place the ancho chiles in a bowl, cover with 2 cups boiling water, and let them sit for 10 minutes until they plump up and rehydrate.
  • In a soup pot, heat the butter and oil over medium heat. Once the butter is melted and bubbly, add the onion and cook for 4 to 5 minutes, until softened and the edges begin to brown. Add the garlic, stir and cook for a minute until fragrant. Increase the heat to medium-high and incorporate the chopped tomato, cook for 6 to 7 minutes, until softened. Sprinkle the flour on top of the cooking vegetables, stir well, and let cook for another minute or so, stirring frequently, until the flour starts to brown and smell toasty. Pour in the broth or water and bring to a simmer.
  • Meanwhile, place the ancho chiles along with a cup of their soaking water into a blender, and puree until completely smooth. Add the chile puree, along with the thyme, marjoram, oregano, cumin, bay leaf, salt, pepper, pickled jalapeño and its vinegar to the soup, and mix well. Once it returns to a simmer, reduce the heat to medium, and let it cook for 15 minutes with the lid ajar.
  • Add the carrots, potatoes, and fish pieces and continue to cook for 10 more minutes, until vegetables and fish are completely cooked through.
