SPOON BREAD

Steps:
- Preheat the oven to 350 degrees. Lightly butter a 1 1/2-quart souffle dish.
- Combine the cornmeal, salt, and sugar and stir slowly into scalded milk in saucepan. Over low heat, blend in butter. Remove saucepan from heat and beat in egg yolks and baking powder. Let cool.
- Beat egg whites with a pinch of salt until stiff. Gently fold into cornmeal mixture. Pour batter into prepared mold and bake until puffed and golden, 30 to 35 minutes. Serve immediately.
SPOON BREAD
This recipe has been in my family for over 100 years. My great-grandmother first made it in her one-room log cabin over an open fire! This recipe is still a family favorite as a side dish with pork and fresh vegetables. Add 1/2 cup of sugar or honey to turn it into a wonderful, old-fashioned dessert.

Steps:
- Scald milk (do not boil); stir in the butter, cornmeal and salt. Cook, stirring constantly, until cornmeal comes away from sides of pan and thickens. Set aside to cool until lukewarm. , Add beaten egg yolks; mix thoroughly. Fold in stiffly beaten egg whites; mix gently but thoroughly. Pour into greased 2-qt. baking dish. Bake at 375° for 1 hour or until top is golden brown. Serve immediately.

Use the freshest ingredients you can find and elaborate on this recipe to your heart's content. Wouldn't fresh parmesan be good in this? Red onion?

Steps:
- Begin by cutting the garlic clove in half and taking one half and rubbing along the inside of serving bowl.
- Toss the basil leaves, baby spinach leaves, diced fennel bulbs, cilantro leaves and radicchio together lightly in a salad bowl.
- Mince the two garlic halves, adding to the salad along with the olive oil, white wine vinegar, fennel fronds and Parmesan if using. Toss lightly.
- Serve salad with lemon wedges, a good bottle of wine and of course crusty Italian bread. Don't forget the freshly ground black pepper for the final touch!
- NOTE: *Experiment with any fresh imported Italian cheese of your choice, shaved.

- In saucepan, scald the milk; stir in cornmeal.
- Reduce heat; simmer 5 minutes, stirring constantly.
- Remove from heat; stir in butter, sugar, salt and baking powder.
- In small bowl, beat egg yolks.
- Gradually stir a small amount of the hot mixture into yolks; return all to pan and mix well.
- In mixing bowl, beat egg whites until soft peaks form.
- Fold egg whites into hot mixture until well blended.
- Pour into greased 8-inch square baking dish.
- Bake at 350° for 40-45 minutes or until well puffed.
- Use a spoon to serve.
