Spinach Salad is one of those classic dishes that are great year round. It's so versatile and I like to load mine up with bacon, dried cranberries, homemade croutons, and the best spinach salad dressing around!

10 ounces fresh baby spinach, (rinsed and patted dry)
6 slices of bacon, (cooked and crumbled)
1 cup croutons
3/4 cup sliced button mushrooms, (rinsed and drained)
1/2 cup shredded Monterey Jack cheese
1/4 cup dried cranberries
1/4 cup of sliced red onions
1/4 cup chopped tomatoes
3 large hard-boiled eggs, (sliced)
3/4 cup canola oil
1/2 cup white vinegar
1/4 cup granulated sugar
1 Tablespoon grated yellow onion
1 teaspoon salt
1/4 teaspoon dry mustard
1/2 Tablespoon poppy seeds

Steps:

  • Place the spinach in a large salad bowl and top with the bacon, croutons, mushrooms, cheese, cranberries, onions, tomatoes, and egg.
  • Place all of the dressing ingredients into a blender except for the poppy seeds. Blend on high for 30-60 seconds, or until the dressing is emulsified.
  • Add the poppy seeds and pulse the blender 1-3 times or until the poppy seeds are evenly distributed.
  • Toss the salad and serve with the poppy seed dressing on the side. Place leftover dressing in an airtight container or jar and chill.

4 cups fresh baby spinach
4 cups torn iceberg lettuce
1-1/2 cups sliced fresh mushrooms
1/2 pound bacon strips, cooked and crumbled
DRESSING:
1/4 cup red wine vinegar
1/4 cup chopped red onion
3 tablespoons sugar
3/4 teaspoon salt
1/4 teaspoon ground mustard
1/2 cup canola oil
1-1/2 teaspoons poppy seeds

Steps:

  • In a large bowl, combine spinach, lettuce, mushrooms and bacon. Place vinegar, onion, sugar, salt and mustard in blender. While processing, gradually add oil in a steady stream. Transfer to a bowl; stir in poppy seeds., Divide salad among 6 plates; drizzle with dressing.

1 egg (room temperature)
⅓ cup canola oil
⅓ cup olive oil
⅓ cup cider vinegar
2 tablespoons dijon mustard
3 tablespoons honey
½ teaspoon garlic powder
½ teaspoon black pepper
1 tablespoon poppy seeds
10 oz spinach
6 slices bacon (cooked and crumbled)
4 hard boiled eggs
½ red onion (hinly sliced)
½ cup crumbled feta cheese
1 cup sliced mushrooms

Steps:

  • Place egg in a small container with 1 tablespoon of the vinegar. While blending on low (with a blender or hand mixer) pour in olive oil and canola oil as slowly as possible.
  • Add in remaining vinegar, mustard, honey, garlic powder and black pepper. Pulse until mixed. Stir in poppy seeds and salt to taste.
  • Combine all remaining ingredients except eggs in a large bowl. Toss with dressing. Add sliced eggs and serve.

This recipe quickly becomes the favorite of pretty much everyone that tries it. It's so tasty, it's easy to make, and the ingredients are interchangeable! You can use the dressing immediately or make it in advance and store in refrigerator up to a couple of days. I have substituted pears and mandarin oranges for the strawberries and feta instead of blue cheese. Be creative! YUM!

1 lb fresh strawberries, hulled and halved
1 tablespoon chopped red onion
1/4 cup of roasted pecan pieces, sprinkled with a little brown sugar when roasting... (about 5-7 minutes at 350 degrees, then cool)
