FLUFFY BANANA PANCAKES

I love to make pancakes for my family on Saturday mornings. Since we often have ripe bananas, I decided to add them to a batch of pancake batter. The results were delicious!-Lori Stevens, Riverton, Utah

Number Of Ingredients 13

1 cup all-purpose flour
1 cup whole wheat flour
3 tablespoons brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 large eggs, room temperature
2 cups buttermilk
2 tablespoons canola oil
1 teaspoon vanilla extract
1 ripe medium banana, finely chopped
1/3 cup finely chopped walnuts

Steps:

  • In a large bowl, combine the first 7 ingredients. In another bowl, whisk eggs, buttermilk, oil and vanilla until blended. Add to dry ingredients, stirring just until moistened. Fold in banana and walnuts., Pour batter by 1/4 cupfuls onto a hot griddle coated with cooking spray. Cook until bubbles begin to form on top and bottoms are golden brown. Turn; cook until second side is golden brown. Freeze option: Freeze cooled pancakes between layers of waxed paper in a freezer container. To use, place pancakes on an ungreased baking sheet, cover with foil and reheat in a preheated 375° oven 5-10 minutes. Or place 2 pancakes on a microwave-safe plate and microwave on high for 40-50 seconds or until heated through.

2 cups Original Bisquick™ mix
1 1/4 cups milk
1/4 cup chocolate-flavor syrup
1 egg
2 medium bananas, sliced
2 cups sliced strawberries
Whipped topping, chopped peanuts, additional chocolate-flavor syrup and maraschino cherries, if desired

Steps:

  • In medium bowl, stir Bisquick mix, milk, 1/4 cup chocolate-flavor syrup and the egg with wire whisk or fork until blended (batter may be thin).
  • Brush griddle or skillet with vegetable oil or spray with cooking spray; heat griddle to 375°F or heat skillet over medium heat.
  • For each pancake, pour slightly less than 1/4 cup batter onto hot griddle. Cook until edges are dry. Turn; cook other side until golden brown.
  • Serve with remaining ingredients.

1 cup all-purpose flour
1 tablespoon white sugar
2 teaspoons baking powder
¼ teaspoon salt
1 egg, beaten
1 cup milk
2 tablespoons vegetable oil
2 ripe bananas, mashed

Steps:

  • Combine flour, white sugar, baking powder and salt. In a separate bowl, mix together egg, milk, vegetable oil and bananas.
  • Stir flour mixture into banana mixture; batter will be slightly lumpy.
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.

BLUEBERRY SAUCE:
1 can (6 ounces) pineapple juice
1 tablespoon quick-cooking tapioca
2 tablespoons sugar
2 cups fresh or frozen blueberries, thawed
PANCAKES:
1 cup biscuit/baking mix
1 egg, lightly beaten
1/2 cup milk
1 teaspoon vanilla
3 medium ripe bananas, cut into 1/4-inch slices

Steps:

  • For the sauce, in a large saucepan, combine the pineapple juice and tapioca; let stand for 5 minutes. Stir in the sugar. Bring to a boil; cook and stir for 2 minutes or until slightly thickened. Add blueberries. Return to a boil; cook and stir for 5-10 minutes or until sauce reaches desired thickness., For pancakes, in a large bowl, combine the biscuit mix, egg, milk and vanilla. Fold in the bananas. Pour batter by 1/4 cupfuls onto a greased hot griddle. Turn when bubbles form on top cook until second side is golden brown. Serve with blueberry sauce.

1.5 tsp of baking powder
.5 tsp baking soda
.5 tsp of salt
1.5 cups of buttermilk (I just sour regular milk with lemon)
1 egg
3 bananas, 1 smashed and 2 sliced

Steps:

  • 1. In a bowl, whisk flour, flax-seed, sugar, baking powder, baking soda, and salt. 2. In another bowl, whisk buttermilk, egg, and mashed banana. Pour wet ingredients into dry ones; mix only just until moistened. 3. Spray grill/pan well on medium and drop pancake batter on pan. Arrange 3 or 4 banana slices on uncooked side. Cook until no longer runnny. Can top with remaining slices.
