AVOCADO SURIMI SANDWICHES
A good summer light dinner when you don't want to heat the kitchen up too much. The cook time will be less if you nuke the bacon.

Steps:
- Nuke or fry the bacon crispy.
- Cool.
- Spread split sides of rolls with softened butter and a dash of pepper.
- Grill the bread, butter side down, on griddle or large frying pan.
- Cool.
- In bowl, combine the surimi, lemon juice, dill, mayo, salt and pepper.
- Spread mixture on rolls, top with avocado, close the sandwich with the top roll.
- Serve with fresh chilled melon and seedless grapes.

- Peel, devein and wash shrimp. Mix with some salt, black pepper, and lemon juice. Set aside while you pre-heat a saute pan.
- Preheat a medium saute pan over medium-high heat. Once the pan is hot, add shrimp and cook on both sides until all pink and opaque. Once shrimp is done, take them out and set into a bowl. Let them cool a bit.
- Cut avocado in half, take out the seed and dice avocado meat. Add diced avocado into a mixing bowl and add lemon juice.
