Egg-free, Soy-free, Dairy-free Mayonnaise Substitute (Based on a recipe in the excellent Whole Foods Allergy Cookbook)

1 avocado, cut in chunks
1 tablespoon lemon juice
1 -2 teaspoon Dijon mustard (I use the grainy kind)
2 -3 teaspoons rice milk, milk alternative (rice milk, hemp milk, etc.)
2 dashes paprika
1 pinch salt
1 pinch sugar, if you like your mayo a bit sweeter

Steps:

  • Combine all ingredients-using the lower ends of the amounts-in a food processor or blender. (It works better in a food processor.) Pulse to combine.
  • Taste, and add additional bits of any ingredients to get the mayo substitute to your flavor preference.

This is a wonderful alternitive to real mayonnaise. I have been put on a strict diet and this saves the day! Makes a great salad dressing(I add a little honey), spread for sandwiches, or dip. Adapted from Raw and Living Foods. This is popular in Spain, Mexico, Central America and the Southern USA.

1 avocado (medium to large)
1/2 lemon, juice of
1/4 teaspoon salt (or to taste)
1 pinch cayenne pepper (optional)
1/4 cup extra virgin olive oil

Steps:

  • Wash the avocado and cut it in half. Scoop out the flesh and put it into the blender.
  • Add lemon juice, salt, and cayenne pepper and blend together.
  • With blender running, add olive oil slowly. You many have to stop the machine several times to redistribute ingredients. Puree to a smooth creamy mixture.
  • Makes 3/4 cup.

  • Pit the avocado. Add all ingredients to a small blender, small food processor, or cup of an immersion blender and blend. If you don’t have a small blender, you can make a chunkier version of the sauce by grating in the garlic and then whisking very vigorously to get it as smooth as possible. You also can use a standard-size blender or food processor, but you’ll need to make double the mayo to get it to blend.
  • Store 2 to 3 days in the refrigerator and place plastic wrap pressed onto the surface of the mayo to prevent browning. If the very top layer does get browned, you can simply scrape it off. (It’s fine to eat, it just doesn’t look as pretty!)

  • Greek Yogurt. Greek yogurt provides the same creamy tang as mayonnaise. Season it with salt, pepper, or herbs. Not only is it light and fresh, but it is also an egg-free mayonnaise substitute.
  • Tahini Yogurt. To liven up your yogurt dressing, mix equal parts tahini and plain Greek yogurt. Season well with salt. Substitute quantity: Replace the same amount of tahini yogurt for mayonnaise in a 1:1 ratio.
  • Sour Cream. Sour cream brings a great deal of creaminess to dishes with its sour tang. If the sour cream is too thick, thin it out by adding one or 2 tablespoons of milk.
  • Butter. Butter doesn’t offer the same acid punch as mayo, but a good spread of soft butter will add the same creamy consistency to your sandwich. Substitute quantity: Replace 1 tablespoon of butter per tablespoon of mayo on a sandwich.
  • Pesto. Pesto doesn’t look anything like mayo but can bring a whole new flavor dimension to your sandwiches. It is a bright green sauce with a salty, herbal flavor, and often contains garlic.
  • Low-fat Cottage Cheese. Cottage cheese provides the same saltiness and creamy texture as mayo. It is versatile and pairs well with various flavors. This allows you to add peppers, lemon juice, or herbs to spruce it up.
  • Tahini Sauce. Tahini is made from sesame seeds blended into a paste. Unlike mayo, it has a nutty flavor but can be a successful substitute for mayonnaise in recipes when mixed with other ingredients.
  • Hollandaise. Hollandaise sauce is the closest mayonnaise substitute you will find. It is made with the same ingredients, using the same method, except that the oil is substituted for melted butter.
  • Mashed Avocado. Avocado can provide a healthier, creamy alternative to mayonnaise. To turn avocado into a suitable mayonnaise replacement, make sure it is fully ripe and mash or blend it until smooth.
