1 medium avocado, halved, seeded, and peeled
¼ cup low-fat buttermilk
3 tablespoons whipped reduced-fat cream cheese
1 tablespoon lime juice
2 cloves garlic
⅛ teaspoon cayenne pepper
½ teaspoon salt
Dash cayenne pepper
Fresh vegetable dippers, such as red sweet pepper strips, cucumber slices, celery sticks, Belgium endive leaves, and/or fresh cauliflower florets

Steps:

  • Set aside one-fourth of the avocado. In a blender or food processor combine the remaining three-fourths of the avocado, the buttermilk, cream cheese, lime juice, garlic, the 1/8 teaspoon cayenne pepper and salt. Cover and blend or process until smooth. Coarsely chop the reserved avocado; stir into pureed mixture. Cover and chill in the refrigerator for 30 minutes to 24 hours.
  • Spoon into a serving bowl; sprinkle with the dash cayenne pepper. Serve with fresh vegetables.

2 cups all-purpose flour
1/4 cup sugar
1 cup butter
1 (5/8 ounce) box lime Jell-O gelatin
1 cup hot water
8 ounces cream cheese, softened
1/2 cup sugar
8 ounces Cool Whip
2 (5/8 ounce) boxes lime Jell-O gelatin
1/4 ounce unflavored gelatin, 1 envelope
1/2 cup sugar
2 cups hot water
2 cups ripe avocados, mashed
1/2 cup mayonnaise
1/2 cup milk

Steps:

  • Heat oven to 350 degrees.
  • FIRST LAYER:.
  • Mix first 3 ingredients in a 9X13 pan and press in the pan to form crust. Bake for 20-30 minutes or till a light, golden brown.
  • SECOND LAYER:.
  • Mix 1 box lime jello and 1 cup hot water in a bowl, set aside to cool.
  • Then in a mixing bowl, mix the cream cheese and 1/2 cup sugar well. Fold in the cool whip. Pour cooled jello into mixture and stir till blended. Pour into cooled crust and refrigerate till very firm.
  • THIRD LAYER:.
  • Mix the 2 boxes of lime jello, gelatin, sugar and hot water. Set aside to cool.
  • Put avocado, mayonnaise and milk in food processor or blender. Blend well, add cooled jello mixture to the processor or blender and mix well. Spoon mixture onto the second layer and refrigerate overnight.
  • Cut into squares and get ready for heaven!

This is a very rich, creamy pie my mom used to make over 40 years ago for her St. Patrick's Day parties. I make a low-fat version of this for my family by replacing the ingredients with non-fat or low-fat creams.

1 (14 ounce) can sweetened condensed milk
1 (8 ounce) package cream cheese
⅓ cup lemon juice
1 teaspoon vanilla extract
1 (9 inch) graham cracker crust
1 (8 ounce) container sour cream
1 tablespoon white sugar
1 teaspoon vanilla extract

Steps:

  • Blend avocados, sweetened condensed milk, cream cheese, lemon juice, and 1 teaspoon vanilla extract in a blender until smooth; pour into the graham cracker crust.
  • Mix sour cream, sugar, and vanilla extract together in a bowl; pour over avocado filling. Refrigerate pie until set, about 4 hours.

This is a simple recipe that's sure to please. The only caution I would give is to not let the rolls sit out too long.

1 avocado
1/2 cup cream cheese
2 tablespoons sun-dried tomatoes
1 1/2 tablespoons pine nuts
3 egg roll wraps
1/3 cup Thai sweet chili sauce

Steps:

  • Half and remove the skin of the Avocado. Cube the Avocado and Cream Cheese into 1/2-inch to 1-inch squares (it doesn't have to be perfect). Divide all ingredients equally onto the 3 Egg Roll Wrappers.
  • Roll them up and deep fry until golden. You can use a narrow pan, and have the oil deep enough to reach half the height of a roll, making sure to turn the rolls over to fry each side.
  • Makes 3 whole rolls. Cut them diagonally to make 6 half rolls. The deeper the cut, the prettier your finished dish!
  • Serve with the Sweet Thai Chili Sauce as a dip.

2 cans (8 oz. each) refrigerated crescent dinner rolls, divided
2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 tsp. vanilla
1 egg, beaten
3/4 cup sugar, divided
2 Tbsp. ground cinnamon

Steps:

  • Heat oven to 350°F.
  • Unroll 1 can of dough onto bottom of 13x9-inch pan sprayed with cooking spray; pat out to evenly cover bottom of pan, firmly pressing perforations and seams together to seal.
  • Beat cream cheese, vanilla, egg and 1/2 cup sugar with mixer until blended; spread over dough in pan.
  • Unroll remaining crescent dough onto large sheet of waxed paper; firmly press perforations and seams together to form 13x9-inch rectangle. Invert over cream cheese mixture; remove and discard waxed paper.
  • Bake 30 to 35 min. or until golden brown. Combine remaining sugar and cinnamon; sprinkle over dessert before cutting into squares to serve.

2 (8 ounce) cans refrigerated crescent roll dough
2 (8 ounce) packages cream cheese
1 cup white sugar
1 teaspoon vanilla extract
½ cup margarine, melted
¼ cup white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
  • Press one can of the crescent rolls into the bottom of the prepared pan. In a medium bowl, mix together the cream cheese, 1 cup of sugar, and vanilla until smooth and creamy. Spread over the crescent layer. Unroll the second can of crescent rolls and lay them on top of the cream cheese layer. Do not press down. Pour the melted margarine over the entire pan. Combine the remaining 1/4 cup of sugar and cinnamon; sprinkle over the top.
  • Bake for 25 to 30 minutes in the preheated oven, or until the top is crisp and golden.

I got this recipe from my girlfriend, after tasting this at her house party, I have been making these bars ever since, they are so delicious, and very rich, also, I have made these for parties, cut them small and served them in tiny muffin cups....I have never had any leftover. Also, I have used this base mix recipe, omiting the preserves of course, in lots of other recipes that call for a base, it always turns out flakey and light, with a wonderful buttery taste! (note: prepare ahead, these squares have to stay in the fridge overnight)

1/2 cup butter, melted (no substitutions)
1/2 cup almonds, finely chopped or ground
1 1/2 cups apricot preserves

1/8 teaspoon salt
1 teaspoon vanilla
1 egg
1/3 cup apricot preserves
1/2 cup coconut

  • Set oven 350 degrees.
  • Set rack to second lowest position.

With a pizza cutter or knife, slice the puffed pastry into approximately 2-inch by 2-inch squares. From the one thinly rolled large sheet of frozen puffed pastry, I created 18 squares.
  • On half the squares (9 squares for me), place a dollop of avocado, then cream cheese, then salsa, season with salt and pepper. Use the remaining squares as the lids and place one lid over the filling mounds. Seal the pastry packages by pressing the edges with a fork, taking care to seal the edges well, pressing the fork in repeatedly, so no filling escapes during baking.
