You can never have enough spareribs recipes. This recipe is for the true "BBQ Master" as there are some unique steps to this recipe. This recipe came from one of my all time favorite books...Cook's Illustrated

2 pork spareribs
1 tablespoon ground black pepper
2 teaspoons cayenne pepper (optional)
2 tablespoons chili powder
2 tablespoons ground cumin
2 tablespoons dark brown sugar
1 tablespoon granulated sugar
1 tablespoon dried oregano
4 tablespoons paprika
2 tablespoons table salt
1 tablespoon ground white pepper
3 tablespoons celery salt
3 tablespoons garlic powder
4 tablespoons unsalted butter
1 small onion, chopped
2 medium garlic, minced
1 teaspoon paprika
1 tablespoon ground black pepper
2 tablespoons lemon juice
1 teaspoon dry mustard
1/2 teaspoon hot pepper sauce
1/2 teaspoon table salt
1/4 cup cider vinegar
1 (15 ounce) can tomato sauce

Steps:

  • Mix all dry rub ingredients together in a medium bowl. Measure out 3/4 cup of the dry rub and place in separate bowl. Reserve remaining rub for future use. Rub 3 tablespoons dry rub on each side of the 2 racks of ribs. Let ribs stand at room temperature for up to an hour, (wrap them in plastic wrap and refrigerate if you need to hold them any longer).
  • Preheat grill.
  • Wrap about 2 cups of hickory wood chips in a foil packet and poke packet with a fork. Lay foil packet on top of the grilll.
  • Turn the ribs every thirty minutes for a total cooking time of two to three hours. At 1 1/2 hours, keeping the temperature constant at 250 degrees. If the meat is nearing doneness, the meat will start pulling away from the bones and have a distinct rosy glow on the exterior.
  • Immediately after taking the ribs off the grill, completely wrap them in aluminum foil. Put the foil wrapped ribs in a brown paper bag and fold the paper bag over the ribs. Allow to rest at room temperature for one hour or more.
  • Meanwhile, prepare barbecue sauce. Heat butter in a medium saucepan. Add onions and garlic; sauté until onions soften, 3 to 4 minutes. Stir in next 6 ingredients; cook over medium heat to blend flavors, about 5 minutes. Add vinegar and tomato sauce; bring to simmer. Simmer uncovered until sauce thickens slightly, about 15 minutes. After ribs have rested for at least an hour, unwrap and brush with barbecue sauce (or pass sauce separately). Cut into individual servings and serve.

1 tablespoon olive oil
1 onion, peeled and minced
4 cloves garlic, minced
1/4 cup peanut oil
3 cups (24 ounces) tomato puree
2 cups brown sugar
1/2 cup Worcestershire sauce
1 ounce white wine vinegar
1 tablespoon chili powder
1 tablespoon paprika
2 tablespoons kosher salt
2 tablespoons black pepper
2 teaspoons cayenne pepper
3 tablespoons brown sugar
1 tablespoon ground cumin
2 teaspoons ground allspice
2 tablespoons chili powder
3 tablespoons paprika
2 teaspoons garlic powder
1 teaspoon dry mustard
8 pounds pork spareribs, about 3 full racks
1 cup dry rub (from recipe above)
1 cup barbecue sauce, with the remaining 3 cups set aside and served on the side (from recipe above)

Steps:

  • Barbeque Sauce: Heat butter and olive oil in a large pan over medium heat. The butter should begin to bubble and foam as it heats. Once the foam subsides, add onions and saute over medium heat for five minutes, until just soft. Add garlic and saute for one minute. Add tomato puree, brown sugar, Worcestershire sauce, white wine vinegar, chili powder and paprika and bring to a simmer.
  • Cook uncovered until thickened, about one and a half hours. Remove from heat, let cool and separate one cup of sauce to be used to baste and three cups to be served as sauce on the side. Refrigerate until ready to use.This sauce will be used to baste the ribs during the final 10 minutes of cooking time on the barbecue.
  • Dry Rub: Combine all ingredients and set aside. Placed in an airtight container, this rub will keep for about three months.
  • Pork Ribs: pare the grill: Place a drip pan filled with water in the barbecue - the ribs will cook above it. If using a gas grill, place the pan to one side and only light half of the burners. If using charcoal, get the coals hot and spread them out from the middle, creating a well for the drip pan to sit in. Rub pork spareribs with dry rub mixture. Note: It is not necessary to apply the dry rub hours beforehand; applying just before cooking yields the same results.
  • Check grill to see if it's reached the proper temperature, 200 degrees F. Place ribs on grill over drip pan, close barbecue lid and cook for about 1 1/2-2 hours at 200 degrees F. Turn ribs every 20-30 minutes, adding coals or adjusting gas to maintain a steady 200 degrees F. Some fluctuation is okay (and unavoidable if using charcoal), but the goal is to stay between 190 degrees F-220 degrees F.
  • Begin basting ribs with sauce in the final 10 minutes of grill time (after about 1 1/2 hours). Any earlier and the sauce will simply dry out. Once the ribs are cooked, wrap them tightly in aluminum foil and place inside paper bags. Set aside for 30 minutes to allow them to steam and tenderize the meat further without overcooking. Remove and serve with remaining sauce on the side.

4 pounds pork spareribs, cut into serving-size pieces
1 medium onion, quartered
2 teaspoons salt
1/4 teaspoon pepper
SAUCE:
1/2 cup packed brown sugar
1/2 cup cider vinegar
1/2 cup ketchup
1/4 cup Worcestershire sauce
1/4 cup chili sauce
2 tablespoons chopped onion
1 tablespoon lemon juice
1/2 teaspoon ground mustard
1 garlic clove, minced
Dash cayenne pepper

Steps:

  • In a Dutch oven, place ribs and onion; sprinkle with salt and pepper. Add enough water to cover ribs; bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours or until meat is tender; drain. , Meanwhile, in a small saucepan, combine sauce ingredients. Simmer, uncovered, for 1 hour or until slightly thickened, stirring occasionally. , Arrange ribs on a rack in a broiler pan. Brush with sauce. Broil 5 in. from the heat for 5 minutes on each side, brushing frequently with sauce.

Our family's favorite. Slightly sweet and spicy, with a light non-tomato based baste that doesn't overpower the delicious falling-off-the-bone meat. We have also used this recipe on pork shoulder. Divine! BBQ sauce is never needed, but if you must, only use your favorite! Enjoy!

6 pounds pork spareribs
½ cup packed brown sugar
2 tablespoons chili powder
1 tablespoon paprika
1 tablespoon freshly ground black pepper
2 tablespoons garlic powder
2 teaspoons onion powder
2 teaspoons kosher salt
2 teaspoons ground cumin
1 teaspoon ground cinnamon
1 teaspoon jalapeno seasoning salt
1 teaspoon cayenne pepper
1 cup apple cider
¾ cup apple cider vinegar
1 tablespoon onion powder
1 tablespoon garlic powder
2 tablespoons lemon juice
1 jalapeno pepper, finely chopped
3 tablespoons hot pepper sauce
kosher salt and ground black pepper to taste
2 cups wood chips, or as needed

Steps:

  • In a medium bowl, mix together the brown sugar, chili powder, paprika, black pepper, 2 tablespoons garlic powder, 2 teaspoons onion powder, kosher salt, cumin, cinnamon, jalapeno seasoning, and cayenne pepper. Rub generously onto the pork spareribs. Cover, and refrigerate for at least 4 hours, or overnight.
  • Prepare an outdoor grill for indirect heat, or preheat a smoker to 250 degrees F (120 degrees C). Soak wood chips (apple or cherry are our favorites).
  • While the grill heats up, prepare the mop sauce. In a medium bowl, stir together the apple cider, apple cider vinegar, 1 tablespoon onion powder, 1 tablespoon garlic powder, lemon juice, jalapeno, hot pepper sauce, salt and pepper.
  • When the coals are gray and ashed over, place 2 handfuls of soaked woodchips directly on them. Place the ribs on the grill grate bone-side down. Cover, and cook for 3 1/2 to 4 hours. Add more coals as needed. Baste with the mop sauce, and throw handfuls of soaked woodchips onto the coals every hour. Keep the temperature of the grill or smoker from going below 225 degrees F (110 degrees C). Ribs are done when the rub has created a wonderful crispy blackened 'bark', and the meat has pulled away from the bone. Discard any leftover mop sauce.

I saw a Celebrity Chef use this braising method for baby back ribs, so I decided to give it a try for pork spare ribs. I changed the seasonings and increased the cooking time and I have been very pleased with them every time. They're really tender and the meat is so flavorful that you don't have to add BBQ sauce unless you want to. My neighbor is the one who told me about the fajita seasoning, and she was right on!

1 cup brown sugar
½ cup fajita seasoning (such as Fiesta®)
2 tablespoons Hungarian sweet paprika
2 racks pork spareribs, fat trimmed
1 cup beer
3 cloves garlic, minced
1 tablespoon honey
3 tablespoons Worcestershire sauce
1 tablespoon prepared brown mustard

Steps:

  • Mix the brown sugar, fajita seasoning, and paprika in a bowl. Rub both sides of the pork spareribs with the brown sugar mixture. Place the spareribs in a 9x13-inch baking pan; cover and refrigerate overnight.
  • Preheat an oven to 250 degrees F (120 degrees C). Whisk together the beer, garlic, honey, Worcestershire sauce, and mustard in a bowl. Set aside.
  • Tear off 2 large sheets of heavy duty aluminum foil and lay them shiny-side down. Place a rack of spareribs on each sheet, meaty-side up. Tear off 2 more sheets of foil and place them on top of the ribs, shiny-side up. Begin tightly folding the edges of the foil together to create a sealed packet. Just before sealing completely, divide the beer mixture evenly into each packet. Complete the seal. Place the packets side-by-side on an 11x14-inch baking sheet.
  • Bake in the preheated oven until the ribs are very tender, 3 hours and 30 minutes to 4 hours. Carefully open each packet, and drain the drippings into a saucepan. You may only need the drippings from one packet. Set ribs aside. Simmer the drippings over medium-high heat until the sauce begins to thicken, about 5 minutes. Brush the thickened sauce over the ribs.
  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
  • Place the ribs back into the oven and broil until the sauce is lightly caramelized, 5 to 7 minutes.

Rub both sides of ribs with mustard and brown sugar. Wrap tightly and store in the refrigerator 6 hours to overnight. If you're in a real hurry, you can skip the refrigeration and just start the cooking process.
  • Set smoker to smoke with the lid open for 5 minutes. Unwrap ribs and place on grill. Close lid. Smoke ribs for 3 hours.
  • Remove plastic wrap and transfer to a large piece of heavy duty aluminum foil (twice the length of the ribs) in such a way that the package can hold liquid. Before sealing up, pour vinegar over ribs. Wrap tightly and bake in preheated 250 degree F oven for 3 hours.
