VANILLEKIPFERL (AUSTRIAN VANILLA CRESCENT COOKIES)
Crisp and buttery with a nutty, almond flavor, this recipe for delicate Vanillekipferl, or Austrian Vanilla Crescent Cookies, creates cookies that look pretty on a platter and are sure to be a hit at your holiday party.

- Place the butter and flour in to the bowl of your food processor. Pulse to combine until the mixture resembles coarse crumbs. Place the mixture in a large bowl.
- Add the ground almonds, powdered sugar, vanilla sugar, salt, and egg yolks to the mixture. Knead the dough with your hands in the bowl until it comes together, 5 min.
- Divide the dough into 4 equal pieces, shape each into a ball. Place the balls in a sealed plastic bag or covered bowl in the refrigerator for at least half an hour, up to 2 days, to develop flavor.
- Preheat the oven to 350F. Remove the dough from the refrigerator.
- Remove one ball of dough from the refrigerator. Roll it into a rope, 12 inches long. Cut the rope into 12 even pieces. Roll each piece into a 3-4 inch rope and shape it into a crescent. Place the shaped crescents onto a baking sheet lined with parchment or a non-stick baking mat, ½ inch apart. Repeat with the remaining dough, removing one ball of dough from the refrigerator at a time, until you have filled one tray.
- Bake the cookies, one tray at a time, for 11-12 min, until the tips of the crescents just start to turn a light golden brown.
- Remove the pan from the oven. (And place your second, cool tray with shaped cookies in the oven to bake, if necessary.)
- Let the baked cookies rest on the baking sheet for 2-3 minutes while you prepare your sugar mixture. Mix ½ c powdered sugar and 1 Tbsp vanilla sugar together in a shallow bowl.
- Take the warm cookies from the baking sheet and carefully coat them in the sugar mixture. Place the coated cookies on a wire rack to finish cooling.
- Repeat as needed with the remaining cookies.
- Leave the cookies out overnight to harden, and then transfer them to an air tight container to store for up to 1 week.

- In a bowl, combine flour, chopped almonds and sugar. Mix in butter until dough is just combined. On a floured surface, roll the dough to 1/8-in. thickness. Cut with a 2-in. round cutter and place 1 in. apart on greased baking sheets. Cover and refrigerate for 1 hour., Uncover and bake at 375° for 7-10 minutes or until the edges are lightly browned. Remove to wire racks to cool completely. Spread jam on half of the cookies; top with another cookie. , For frosting, combine chocolate, confectioners' sugar and butter. Spread on tops of cookies. - In a large bowl, beat butter until creamy. Beat in egg yolks, 2 at a time. Gradually beat in flour., Divide dough into 3 portions. Shape each into a disk; wrap in plastic. Refrigerate overnight., Preheat oven to 350°. In a small bowl, using clean beaters, beat egg whites on medium speed until foamy. Gradually add confectioners' sugar, 2 tablespoons at a time, beating on high after each addition until sugar is dissolved. Continue beating until stiff glossy peaks form. Fold in walnuts., On a lightly floured surface, roll each portion of dough to 1/8-in. thickness. Cut with a floured 3-in. round cookie cutter. Spread each cookie with 1 teaspoon walnut mixture to within 1/4-in. of edges. Fold dough almost in half over filling, allowing filling to show. Place 1 in. apart on ungreased baking sheets., Bake 8-10 minutes or until light brown. Remove from pans to wire racks to cool completely., Dust cookies with additional confectioner's sugar. Store in airtight containers in the refrigerator.

- Place the flour, sugar, cubed butter, and hazelnuts in the food processor. Process shortly to form a crumbly dough. Transfer the dough to the working surface and knead briefly to bring it into shape. Form a disc, wrap it tightly in plastic foil and place it in the fridge for at least one hour.
- Preheat the oven to 175 degrees Celsius/ 350 degrees Fahrenheit. Line one or two baking trays with baking paper, you will have to work in batches.
- Form a long roll and cut it into small pieces. To check, form one ball, it should be roughly the size of a larger cherry. Form the dough pieces into crescents and place them on the baking tray. Don't make the ends too thin, you don't want them to get too brown in the oven.
- When a tray is full, bake the first batch, in the middle of the oven, for about 13-15 minutes or until very lightly browned around the edges. While the first crescents are baking, form the next batch.

- Make the dough: Add all the ingredients for the cookies into a big bowl. Rub the butter with the other ingredients with your fingers, then work it with your palms. The dough will be very crumbly at first, but a minute later or so it will come together. You should have a smooth ball of dough. The dough can also be kneaded with a stand mixer fitted with a paddle attachment - mix at the lowest speed until smooth dough forms.
- Chill the dough: Divide the dough into 4 parts, roll each part into a thick log. Wrap each log in plastic foil and put in the fridge for 50 minutes.
- Shape the crescents: After this time, take one log out of the fridge and cut into 1/2-inch / 1 cm slices. If the dough is cold, shape the cookies with your finger until they resemble a crescent. If the dough is more warm you can try to roll the slice of the dough between your palms until it forms a cylinder and then bend each end into a crescent shape. Repeat with the other logs.
