These are similar to a sloppy joe or a cheeseburger and this recipe is written specifically to make ahead and freeze until you want them. Kid friendly, works great for busy weeknights served aside some french fries or tater tots. This recipe has been in my family for years; came from my Aunt Weezie out in Indiana.

1 lb ground beef
1 small onion, diced
salt and pepper, to taste
8 -12 ounces ketchup
1 cup dill pickle, diced
3/4-1 lb muenster cheese (cubed or shredded)
8 -10 hamburger buns (regular sized)

Steps:

  • In a skillet, brown the ground beef and onion; drain and add salt and pepper to taste.
  • In a large mixing bowl, combine beef mixture, ketchup, pickles and cheese until mixed well.
  • Put mixture in buns, wrap in aluminum foil and place in a freezer-safe ziplock bag and freeze.
  • When you are ready to eat, pull them from freezer and keep them in the foil.
  • Bake in oven at 350 degrees for 20-30 minutes.

1 1/2 cups water
1 1/4 teaspoons active dry yeast (1 pkg.)
2 tablespoons brown sugar
1 1/4 teaspoons salt
1 cup bread flour
3 cups flour
2 cups water
2 tablespoons baking soda
coarse salt
2 -4 tablespoons butter (melted)

Steps:

  • Sprinkle yeast on lukewarm water in mixing bowl; stir to dissolve.
  • Add sugar, salt and stir to dissolve; add flour and knead dough until smooth and elastic.
  • Let rise at least 1/2 hour.
  • While dough is rising, prepare a baking soda water bath with 2 cups warm water and 2 tbsp baking soda.
  • Be certain to stir often.
  • After dough has risen, pinch off bits of dough and roll into a long rope (about 1/2 inch or less thick) and shape.
  • Dip pretzel in soda solution and place on greased baking sheet.
  • Allow pretzels to rise again.
  • Bake in oven at 450 for about 10 minutes or until golden.
  • Brush with melted butter.
  • Toppings: After you brush with butter try sprinkling with coarse salt.
  • Or for Auntie Anne's famous Cinnamon Sugar, try melting a stick of butter in a shallow bowl (big enough to fit the entire pretzel) and in another shallow bowl make a mixture of cinnamon and sugar.
  • Dip the pretzel into the butter, coating both sides generously.
  • Then dip again into the cinnamon mixture.
  • Notes: The longer and thinner you can make the dough rope, the more like Auntie Anne's they will be.

A cookie that is rolled around a nut filling and cut AFTER baking.

1 (8 ounce) package cream cheese, softened
½ cup butter, softened
2 cups all-purpose flour
1 cup white sugar
⅓ cup milk
½ pound ground walnuts
⅓ cup confectioners' sugar for decoration

Steps:

  • Beat together cream cheese and margarine until well blended. Add flour, mixing well. Shape into a ball, cover and chill for 2 hours.
  • In saucepan over medium heat, cook sugar and milk, stirring occasionally until milk boils and sugar is dissolved. Add the ground nuts. Remove from heat and let cool until mixture is of spreading consistency.
  • Roll out chilled dough on lightly floured surface to a rectangle about 18 X 12 inches. Cut in half lengthwise. Spread each piece with milk/nut filling and roll up like a jelly-roll, starting from the long side.
  • Cut each roll in half. Place seam side down on ungreased cookie sheets (two on a baking sheet). Leaving roll's shape intact, cut into slices 1/2 inch thick almost to the bottom of the roll.
  • Bake at 350 degrees F (175 degrees C) for 15 to 20 minutes or till done. Remove from sheet and sprinkle with confectioners' sugar. Cool on racks. Cut cookies all the way through. Refrigerate or freeze. Re-sprinkle with confectioners' sugar before serving.
  • Variations: A) In place of milk/sugar/nut filling, spread with ground filberts and red raspberry preserves. B) Before rolling, sprinkle chopped chocolate chips over milk/sugar/nuts filling.
