- Preheat the oven to 350°F.
- Add the milk, vanilla, shortening, and egg to a bowl and whisk together.
- Add the flour, sugar, baking powder and salt to the bowl and gradually combine with the milk mixture until it comes together into a dough.
- Place the dough on a lightly greased baking tray, with a slight rim, and spread out towards the edges. Scatter the apples evenly over the dough.
- In a small bowl, combine the topping ingredients. Crumble the topping evenly over the apples.
- Bake the kuchen for about 40 minutes, until the crumble has turned golden brown and the apples have softened.

- Preheat oven to 350 degrees F (175 degrees C).
- Beat milk, shortening, egg, and vanilla extract together in a bowl until smooth. Stir 1 1/2 cups flour, 1/2 cup sugar, baking powder, and salt into milk mixture until dough comes together. Spread dough out into the bottom of a rimmed baking sheet.
- Spread apples over the dough on the baking sheet.
- Stir 1 cup sugar, melted butter, 1/4 cup flour, and cinnamon together in a bowl until topping is combined. Sprinkle topping over apples.
- Bake in the preheated oven until apples are tender and topping is golden, about 40 minutes.

MOM'S FRESH GERMAN APPLE KUCHEN
While we were stationed in Germany our land lady used to make the most fantastic apple cake. So I decided to come up with my own recipe for fresh apple cake and I hit the jack pot. I have been making it ever since, it is so simple you can do it with your eyes closed.

- 1. Preheat oven at 375* Lightly grease and flour 9 inch baking pan.
- 2. In bowl cream Oil, sugar, and eggs, beat after each addition. Add flour and baking soda, and salt, add vanilla, you can add the apples to the mix or spread apples on top and press apples into mixture. I prefer the apples on top, sprinkle with nutmeg on top.
- 3. The mixture will be thick in consistency. Place in oven and bake for 1 - 1 1/2 hour. Till knife inserted comes out clean. Let cool on cake rack, serve with powder sugar sprinkled on top. Great warm or cold

- Make the crust: Preheat oven to 375 degrees. Whisk flour, baking powder, sugar, and salt in a large bowl. Using your fingers, work in butter until just incorporated. Press into a 9-inch pie plate.
- Make the filling: Stir sugar and cinnamon in a small bowl. Arrange apple evenly over crust, overlapping if necessary. Sprinkle with cinnamon-sugar.
- Bake 15 minutes. Whisk together half-and-half and eggs. Raise oven temperature to 400 degrees. Pour egg mixture over apples. Bake until set, about 20 minutes. Let cool on a wire rack at least 1 hour.
APPLE KUCHEN WITH HONEY AND GINGER

- Make the cake: Heat oven to 325 degrees and position a rack in the middle of the oven. Butter and flour a 9-inch cake pan, preferably a springform pan.
- With an electric mixer, cream the butter and sugar, then add honey and whip for 1 minute, until fluffy. Beat in eggs one at a time, until well incorporated, then whip for 2 minutes. Stir in grated ginger, candied ginger and lemon zest.
- Whisk together flour, salt and baking powder and add to bowl, mixing briefly to make a stiff batter. Pour batter into prepared pan.
- With a paring knife, cut slits in each of the apple quarters on the rounded, outer part of the wedge, slicing partway through at 1/8-inch intervals. Arrange apple quarters slit-side-up over the batter. Sprinkle surface with 1 tablespoon sugar.
- Place cake pan on a baking sheet and put on middle rack of oven. Bake for about 45 minutes, or until an inserted skewer emerges dry. If cake is browning too rapidly, tent with foil until done. Cool on a rack, then carefully unmold.
- Make the glaze: Put sugar, honey and lemon juice in a small saucepan over medium heat, stirring until sugar is dissolved and mixture bubbles, about 2 minutes. Paint surface of cake and apples with warm glaze. Cake will keep for several days, tightly wrapped, at room temperature.

- Preheat oven to 350°. Place 2 cups flour and salt in a food processor; pulse until blended. Add 1 cup butter; pulse until butter is the size of peas. While pulsing, add just enough ice water to form moist crumbs. Press mixture onto bottom of a greased 13x9-in. baking pan. Bake until edges are lightly browned, 20-25 minutes. - 1. Preheat the oven to 325ºF. Grease a 12-cup Bundt pan. 2. In large bowl, whisk flour, sugar, baking soda, baking powder, cinnamon (if using) and salt. 3. In a separate bowl, mix applesauce, yogurt, egg, oil and vanilla. Add to dry ingredients and stir until just combined. 4. Pour into prepared pan. 5. Bake for 50-60 minutes, or until toothpick inserted in center comes out clean. Mine have consistently been done at 55 to 60 minutes. 6. Cool 15 to 30 minutes or longer - I think I let mine sit for 45 minutes before turning it out onto a cooling rack. Before turning it out, you might want to run a paring knife around the center circle to loosen it a bit.
AUNT ROSE'S APPLE KUCHEN RECIPE

- Preheat oven to 400 degrees. Peel and thinly slice apples. Place slices in a bowl of water with fresh fruit or whatever you use so the apples won't turn brown. Precook apples in the microwave. About 2 cups of slices in a bowl with 1 cup of water. Cover and heat for about 6-8 minutes. They will be done when you can put a fork in and they are soft but not mushy. Like a cooked potato. Repeat this process until all apples are precooked. Put in strainer and run cold water over so they stop cooking and set aside. Dough: 2 cups flour 1/2 tsp salt 2 tsp baking powder 1/2 cup sugar Mix all these ingredients together. Add 3 T melted Crisco. Beat 1 egg in 1/2 cup milk. Add each to dry mixture. Place on a floured board and knead dough until all thoroughly mixed together. It will be a little lumpy. Roll out dough and place in a jelly roll sized greased pan. Bring it up the sides and trim at the top. You can either flute it or just trim at top. Custard: Beat 7 eggs and a can of evaporated milk together. Add 1/2 cup sugar and beat in with eggs an milk mixture. Place all the apple slices in a single layer side by side in dough lined pan. Pour the custard mixture over top. Sprinkle generous amount of cinnamon on top. Pan will be filled to the top. Place in a preheated oven 400 degrees for 35-40 minutes or until toothpick comes out clean. You can eat this warm or cold. Keep refrigerated.
