AUNT RHONDA'S CASSEROLE
Steps:
- Preheat oven to 350°F. Saute onion and garlic in butter in large pot. Add ground meat and brown. Add sugar, Worcestershire sauce and tomato sauce until thick and drain grease.
- In a bowl, combine sour cream and cream cheese until creamy.
- Lightly grease casserole dish. Layer ingredients as follows: noodles, cream cheese mix and meat. Repeat until all ingredients are used. Top with grated cheese.
- Bake for 30 minutes. Enjoy!

RHONDA'S ONION CASSEROLE
This is the best Onion Casserole I've ever eaten! Don't even remember where it came from a long time ago.

- Put Thinly Sliced Onions in the bottom of a 13 X 9 Dish. Crush Potato Chips all over top of Onions. Shred Cheese over top of Potato Chips. Spoon Cream of Mushroom Soup over top. Make another layer. After you have finished, put 1/2 cup milk in Soup Can and Stir. Pour over all. Bake at 350 Degrees until golden brown and onions are tender.
AUNT ANNE'S BROCCOLI-CHEESE RICE CASSEROLE
This is everyone's favorite casserole, not least because on Thanksgiving Day it's the only rice dish on the table (and my Korean family loves rice). When my cousin Becky finally learned how to make broccoli-cheese rice casserole from her Aunt Anne, whose Southern food I always thought tasted so good, she usually made two vats of it because it's the one dish everyone wants leftovers of. (It also happens to reheat especially well-a key requirement for any Thanksgiving side dish, in my book.) What I love most is how much this recipe has changed over time. I call it Aunt Anne's Broccoli-Cheese Rice Casserole because she's the catalyst for the dish, but really it's "Eric's interpretation of Becky's Broccoli-Cheese Rice Casserole, which she maybe learned from her mother, Julia, who learned it from her sister Anne." Like a game of telephone, the recipe has been tweaked and misremembered, and now tastes like a mere version of that first casserole we had as kids, which is fine because we're not kids anymore. And I love that. This kind of culinary evolution is what defines Thanksgiving for me. As for the broccoli, sometimes I like to use only florets because that's my favorite part of the vegetable, but my mother likes it the way Aunt Anne makes it, which was often with frozen chopped broccoli (stems and everything). The original had Velveeta cheese, as well, but I enjoy the sharpness of cheddar and the ease of ready shredded cheese, which is what I call for here.

- Preheat the oven to 350 degrees F. Grease a 9 × 13-inch baking dish with softened butter.
- In a large skillet, melt the 1 stick of butter over medium high heat. Add the onion, sprinkle with the sugar, and season with salt and pepper. Reduce the heat to medium-low and cook, stirring occasionally, until the onion is slightly caramelized, 15 to 20 minutes.
- Add the bread to the buttery onions, increase the heat to medium, and sauté until slightly toasted, 10 to 12 minutes. Remove from the heat.
- In your biggest bowl, use your hands to toss together the rice, frozen broccoli, cheddar, sour cream, milk, 2 teaspoons salt, and the buttery onion-bread mixture until well mixed. Spread evenly into the greased baking dish. (You can make this ahead up to this point; see Cook's Note.)
- Bake the casserole until bubbling, warmed through, and slightly browned at the edges, 30 to 40 minutes. Serve warm. Refrigerate leftovers in an airtight container for up to 4 days.
RHONDA'S CHICKEN SPAGHETTI
This is a wonderfully pleasing, filling, pot luck that will have them raving for more! This recipe has a little spice too it, but there are loads of cheese, mushrooms, and black olives to make up for the slight heat in this dish. If you do not enjoy heat omit the Rotel and use regular diced tomatoes. It's worth it to put the Rotel in in my opinion it's not to hot. Overall this is a delicious dish that will have them debating every last ingredient and begging for the recipe. Enjoy!

- Preheat oven to 350 degrees. Lightly grease 4 quart baking dish. In large dutch oven, melt butter over medium heat. Add pepper, onion, cook 5 mins or until tender. Stir in chicken, tomatoes, mushrooms, peas, broth, soup, olives, salt & pepper until combined. Fold cheese & stir til melted. Add pasta, tossing gently to combine. Spoon into prepared dish. AUNT BETTE'S CASSEROLE
Old family recipe, likely originated from the back of a can in the 50's. This makes a wonderful, warm, bubbly alternative to green bean casserole. Perfect for Thanksgiving, Christmas, or any large format meal.The slivered almonds add a great texture and flavor to top it off.

- Using a 9"x14" pan, spray bottom and sides lightly with cooking spray.
- Spread corn and beans on the bottom of the pan.
- In a medium sauce pan melt one stick of butter and add onion, cans of soup, sour cream, and cheese. Mix well while stirring frequently over medium heat until thoroughly blended.
- Pour the hot mixture over the layered corn and beans.
- In a small fry pan melt the last stick of butter and carefully brown the Ritz cracker crumbs. Spread them over top of the casserole and sprinkle the almonds over the top.
- Bake uncovered for 45 - 60 minutes in a 350 degree oven until bubbling nicely around the edges. Place in oven on a foil covered cookie sheet to catch any dripping.
