Quick & Easy Banana Bread Recipe (Classic Banana Bread) image

This quick & easy banana bread recipe tastes delicious and is just like grandma's old fashioned classic banana bread. It takes only 10 minutes or so to make this banana bread before putting in the oven. In addition, it only uses simple ingredients such as butter, eggs, sugar... and of course, bananas. 8 Tablespoons Unsalted Butter ((softened))
2 Eggs ((large))
3 Bananas ((ripe & large sized))
2 Cups Flour ((all purpose flour))
1 Cup White Granulated Sugar
1 Teaspoon Vanilla Extract
1 Teaspoon Baking Soda
1 Teaspoon Baking Powder ((aluminum free))
1/2 Teaspoon Salt

Steps:

  • Preheat oven to 325 degrees F.
  • Mash bananas with a fork.
  • Soften butter in a microwave.
  • Stir eggs, bananas and butter together.
  • Mix in remaining ingredients. Stir until the batter is fully mixed.
  • Optional - If you want to enhance this easy "basic" banana bread, you can stir in 1 cup of your family's favorite dessert ingredient (i.e. chocolate chips or chopped walnuts) after you have mixed the batter.
  • Pour the finished batter into a nonstick bread pan. Smooth out the top of the batter within the bread pan.
  • Bake in the oven for 65-70 minutes or until golden brown.
  • Take out of oven and let the banana bread cool down in the bread pan for 10 minutes. Do not remove the banana bread from the bread pan during this 10 minute cool down period. Use oven mitts as the bread pan will be very hot coming out of the oven.
  • After 10 minutes, remove the banana bread from the bread pan. Place the banana bread on a cooling rack in order to completely cool. This cool down may take 1-2 hours. Gently slide a silicon spatula between the banana bread and the bread pan walls if the banana bread is stuck in the pan.

3 to 4 ripe bananas
1/4 cup melted butter
1 cup sugar
1 1/2 cups flour
1/4 teaspoon salt
1 egg, beaten
1 teaspoon baking soda
Chocolate chips (as many as you want!)

Steps:

  • Preheat oven to 350°F. Mash the bananas in a bowl. Add all the remaining ingredients and mix well with a wooden spoon. Bake in a buttered loaf pan until a toothpick stuck into the bread comes out clean, 55 to 60 minutes. Slice and serve.

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
  • Combine sugar, butter, bananas, eggs, flour, baking soda, milk, salt and vanilla extract in a large mixing bowl; beat well. Pour batter into prepared pan.
  • Bake in a preheated oven for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

I got this recipe from one of my aunts, who got it from an old woman she met in Hawaii while stationed there. It is hands-down the very best banana bread I've ever tasted!! No extra buttering required ;)

3 ripe bananas, mashed
1 teaspoon distilled white vinegar
1 ½ cups white sugar
½ cup butter, softened
2 eggs, beaten
2 ¼ cups all-purpose flour
¾ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
½ cup chopped walnuts
½ cup chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Stir the bananas and vinegar together in a bowl, and set aside. Cream the sugar and butter together in a large bowl until creamy and smooth, then beat in the eggs. Stir in the reserved banana mixture. In a separate bowl, stir the flour, baking soda, baking powder, and salt together until the mixture is free of lumps. Mix the flour mixture into the butter-sugar mixture until well blended, and stir in the chopped walnuts and chocolate chips. Spread the batter into the prepared loaf pan.
  • Bake in the preheated oven until lightly browned and a toothpick inserted into the center of the loaf comes out clean, 50 to 60 minutes. Let cool in pan about 5 minutes, then turn out onto a wire rack.

A recipe from defunct magazine, City and Country Home. I've never tasted better. Delicious warm or cold, cut in slices and buttered. I actually prefer it after its been cooled down and refrigerated. The texture is more chewy and moist.

1/2 cup butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
2 bananas, mashed
2 tablespoons milk
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 pinch salt
1/2 cup walnut pieces (optional)

Steps:

  • Cream butter; gradually add sugars. Beat in egg until mixture is light. Sitr in bananas mashed together with milk. Sift together flour, baking soda and salt and add to banana mixture. Sitr only until combined. Add walnuts.
  • Turn batter into a greased loaf pan and bake at 350F for 1 1/2 hours or until a toothpick inserted in the centre comes out clean.
  • Makes 1 loaf.

This not "just another" banana bread. I've made it time and time again throughout the years. It's from an old and yellowed recipe clipping (50 plus years old) from my local newspaper that my great aunt had written her own success notes beside. My aunt was a caterer, and she writes that this banana bread was her most requested treat for her teas and luncheons.

1/2 cup shortening
1 cup sugar
2 eggs
4 medium bananas
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup pecans, chopped

Steps:

  • Cream shortening and sugar.
  • Add unbeaten eggs.
  • Beat well.
  • Blend in well-mashed bananas.
  • Add flour in which soda and salt have been sifted together.
  • (Batter should be about the same consistency as a cake batter. If too stiff, add a small dash of milk. If too thin, add small amount of flour.) Stir in pecans.
  • Pour into a greased and floured 5 x 9 inch loaf pan.
  • Bake at 350* for about 50 minutes or until done.
