SWEET POTATO FRIES WITH AUNT TC'S SECRET SAUCES

Sweet Potato Fries with Aunt TC's Secret Sauces image

What's my secret for super-crispy sweet potato fries? I actually have two. First, I soak the potatoes in cold water to remove the excess starch. Then, I give them a toss in a cornstarch and seltzer water mixture. The cherry on top? I dust these with a spicy-sweet spice blend and serve them with two different awesome sauces. Bet you can't eat just one!

AUNT MARION'S SWEET POTATO CASSEROLE

Aunt Marion's Sweet Potato Casserole image

This recipe belongs to my ex-husband's aunt (Aunt Marion). It was my favorite dish she prepared for every Christmas and Easter dinner. It wasn't right if this dish was missing from the meal! SIMPLE CRUSTLESS SWEET POTATO PIE

Simple Crustless Sweet Potato Pie image

This recipe is pretty versatile. I used a can of Farmer's Market sweet potato puree, and you can easily swap out for a can of squash puree or pumpkin. Unsweetened soymilk does just fine in this too, I just happened to have vanilla on hand and think that made it a little sweeter.
