APRICOT-CRANBERRY NOODLE KUGEL

This delicious dairy lokshen kugel (noodle pudding) is made with sour cream, cream cheese, apricot jam, and Cinnamon Toast Crunch™ cereal. It's a family favorite.

1 (16 ounce) package egg noodles
1 (16 ounce) container sour cream
1 (12 ounce) container whipped cream cheese
3 large eggs
2 teaspoons salt
1 teaspoon vanilla extract
1 ½ cups apricot preserves
1 teaspoon ground cinnamon, or to taste
4 cups cinnamon bite-sized cereal (such as Cinnamon Toast Crunch™ )
3 tablespoons unsalted butter, softened, or more to taste
1 cup sweetened dried cranberries (such as Craisins®)

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Liberally butter a deep 8-inch square baking dish.
  • Fill a large pot with generously salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes.
  • Drain egg noodles and rinse in cold water to stop the cooking. Drain again and mop up any excess moisture with paper towels.
  • Beat sour cream, cream cheese, eggs, salt, and vanilla with an electric mixer until well combined. Mix in apricot preserves and cinnamon.
  • Crush cereal in a food processor or by hand until it's broken up enough that it's no longer identifiable as cereal. Mix in softened butter until well distributed.
  • Place noodles in the prepared baking dish. Pour sour cream mixture over top and stir to combine. Mix in cranberries. Sprinkle crushed cereal mixture evenly over top.
  • Bake in the preheated oven until the top is browned and crusty, 1 to 1 1/2 hours, checking every so often starting at 45 minutes. If the top looks like it's headed towards burning, stick some foil on the top. At the end, if the top's not crusty enough, put it under the broiler until the butter bubbles a bit and the the color gets nice and rich looking, 1 to 3 minutes.
  • Remove from the oven and let it sit for 15 minutes before serving.

No flour in this pudding, the sponge topping is made with ground almonds, good warm or cold but best warm with lightly whipped cream and at its very best warm with vanilla ice cream!!

1 lb cooking apple
2 ounces brown sugar
1/2-1 teaspoon ground cinnamon
1 cup cranberries (when you use dried cranberries add 2 tablespoons apple or orange juice)
4 ounces soft butter or 4 ounces margarine
4 ounces sugar
2 large eggs, beaten
4 ounces ground almonds

Steps:

  • Preheat oven to 350F.
  • Peel, quarter, core and slice the apples.
  • Put them in a saucepan with the brown sugar, cinnamon and cranberries bring to the boil and simmer for 1 to 2 minutes.
  • Pour this mixture into a greased ovenproof dish, 3 inch deep, 9 inch diameter, (the dish needs to be deep to avoid fruit bubbling out during baking).
  • Cream the butter and sugar until light and fluffy.
  • Add the beaten eggs a little at the time and incorporating them well before adding more egg.
  • Fold in the ground almonds.
  • Spoon this almond cake mix on top of the apple-cranberry mixture in the dish and even it out a little bit.
  • Put the dish in the oven and bake for 45 to 55 minutes.

1 (12 ounce) package egg noodles
3/4 cup butter, melted
1/2 cup sugar, divided
2 teaspoons cinnamon, divided
4 large eggs
1 1/2 cups pineapple juice
3 apples, peeled, cored, and sliced 1/4-inch thick
1 (16 ounce) can whole cranberry sauce
3/4 cup toasted walnuts, chopped
2 tablespoons butter, melted
1/2 cup toasted walnuts, finely chopped
1/4 cup firmly packed brown sugar

Steps:

  • Set oven rack in the middle position; preheat oven to 350°.
  • Coat a 13 x 9 inch ovenproof glass baking dish with vegetable spray.
  • Cook noodles in a large pot of boiling water for 7-10 minutes, or until just tender.
  • Drain noodles and rinse under cold water.
  • Place noodles in a big bowl.
  • Add in melted butter, 1/4 cup sugar, and 1 teaspoon cinnamon.
  • Whisk eggs with pineapple juice to blend, add to noodles, and stir to combine; set aside.
  • Mix the remaining 1 teaspoon cinnamon with remaining 1/4 cup sugar and toss with apples in another bowl.
  • Spread half of the noodles in prepared baking dish; add all of the apples in an even layer.
  • Spread cranberry sauce over the apples.
  • Sprinkle evenly with walnuts.
  • Layer remaining noodles on top.
  • Topping: toss melted butter with walnuts to coat and scatter over top of pudding.
  • Sprinkle with brown sugar.
  • Bake 35 to 45 minutes, or until pudding is bubbling and top is golden brown.
  • Serve warm or at room temperature.
  • Store leftovers in a clean dish covered with wax paper in the refrigerator.
