This vintage Calico Beans recipe is a must-make for everything from summer picnics to cool winter evenings. Serve as a main dish or a side dish.

1 pound lean ground beef
4 ounces bacon (4 slices)
2/3 cup diced white onion
1/2 cup brown sugar (100 grams)
2 tablespoons white vinegar (31 grams)
1 tablespoon mustard (15 grams)
1 teaspoon salt (5 grams)
1/2 cup ketchup (4 ounces)
15 ounces lima beans (1 can, drained)
15.5 ounces kidney beans (1 can, rinsed and drained)
28 ounces pork and beans (with juice)

Steps:

  • In a skillet over medium high heat, brown the ground beef along with the bacon and onion. Cook and stir until the beef and bacon are fully cooked. Then drain off any fat.
  • In a medium bowl, whisk together the brown sugar, vinegar, mustard, salt and ketchup. Set aside.
  • In a large dutch oven or oven safe casserole dish, add the drained lima beans, rinsed and drained kidney beans and then add the whole can of pork and beans, juice and all.
  • Add the beef/bacon mixture and then add the sauce. Mix well until it is all combined.
  • Preheat the oven to 300ºF.
  • Cover the beans (if you don't have a lid that works, use aluminum foil), then bake for 45 minutes or until heated through and bubbling.
  • Serve warm.
  • Store any leftovers in an airtight container in the refrigerator for up to 4 days.

This recipe was among my Mom's handwritten recipes. It is an old one and got a lot of use at family gatherings.

1 lb lean ground beef
1 c finely diced onion
1/2 lb bacon, cut in bite sized pieces
1 can(s) (15 ounces) pork and beans
1 can(s) (15 ounces) butter beans, drained
1 can(s) (15 ounces) kidney beans, drained
1 c brown sugar, firmly packed
1/2 c catsup
1 Tbsp apple cider vinegar
1 tsp dry mustard
1/2 tsp salt

Steps:

  • 1. Brown beef and onion in a large, deep skillet. Drain. Add bacon and cook until bacon is done but not crisp. Do not drain. Add remaining ingredients, mix well, and cook, uncovered, on low heat, at a simmer for about 30 minutes. Stir frequently. Serve hot.

Easy and wonderful. I normally don't like baked beans but I fell in love with these when Aunt Charolette brought them to a family reunion. I have taken them many times to potluck dinners and am always asked for the recipe.

1 lb hamburger
3/4 cup brown sugar
1/2 cup chopped onion
1 teaspoon mustard
1/2 cup catsup
1 can kidney bean
2 teaspoons vinegar
1 can pork and beans
1/2 lb bacon, cubed
1 can butter beans

Steps:

  • Brown hamburger.
  • Add onion and cook until onions are transparent.
  • Drain.
  • Mix hamburger mixture and everything else together.
  • Pour into baking dish and bake uncovered at 350 for 1 ½ hour.

This is one of my favorite cookout side dishs! My Aunt Char makes these all the time and I finaly got the recipe from her! They are a great side dish with hamburgers, hotdogs, potato salad...the list goes on and they are yummy!

1 lb ground beef
6 slices bacon
1/2 cup chopped onion
1/2 cup ketchup
1 teaspoon salt
1 teaspoon dry mustard
2 teaspoons vinegar
3/4 cup brown sugar (packed)
1 (15 ounce) can kidney beans
1 (15 ounce) can pork and beans
1 (15 ounce) can butter beans

Steps:

  • Fry bacon until crisp.
  • Drain.
  • Fry ground beef in fat until tender.
  • Combine onion, ketchup, salt, mustard, vinegar, brown sugar, and partly drain beans in a 3 quart oven container.
  • Mix well.
  • Add hamburger and crumbled bacon.
  • Bake at 350 degrees for 40 minutes.

1 cup chopped onion
3 tablespoons white wine vinegar
1 teaspoon mustard powder
½ cup chopped celery

Steps:

  • Preheat oven to 350 degrees F (175 C).
  • Place bacon and ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.
  • In a four quart casserole dish, mix together the bacon, ground beef, pork and beans, kidney beans, butter beans, lima beans, ketchup, onion, vinegar, dry mustard and celery.
  • Cover and bake for 1 hour.

1 (15 ounce) can kidney beans, undrained
1 (16 ounce) can baked beans with pork
1 (15 ounce) can butter beans, undrained
½ cup ketchup
2 teaspoons white vinegar
1 tablespoon dry mustard
¾ cup packed brown sugar
1 pound lean ground beef
4 ounces bacon, chopped
½ cup chopped onion
salt to taste
ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium heat, fry the ground beef, bacon and onion together until ground beef is no longer pink. Drain fat.
  • In a large mixing bowl, combine the kidney beans, baked beans with pork and butter beans. Stir in the ketchup, white vinegar, dry mustard, brown sugar and cook beef mixture. Mix thoroughly, adding salt and pepper to taste.
  • Pour the bean and meat mixture into a 9x13 inch baking dish. Bake in preheated oven for 30 to 40 minutes.

These are my Aunt Jessie's famous baked beans. She makes them for all our family picnics and everyone loves them. I make them vegetarian by eliminating the bacon and ground beef. It isn't necessary to replace the eliminated items but you can substitute tofu crumbles for the beef.

6 slices bacon
1/2 lb ground beef
1 medium onion, chopped (1/2 cup)
1/2 cup ketchup
1 teaspoon salt
3/4 cup firmly packed brown sugar
1 teaspoon dry mustard
2 teaspoons vinegar
1 (16 ounce) can pork and beans or 1 (16 ounce) can vegetarian baked beans
1 (16 ounce) can kidney beans
1 (16 ounce) can lima beans or 1 (16 ounce) can butter beans

Steps:

  • Cook bacon in skillet until crisp, then crumble and set aside.
  • Cook beef in skillet until no pink remains. Add onion, sauté just until tender.
  • Combine beef, onion, ketchup, salt, brown sugar, mustard and vinegar in a 3 qt baking dish or crock pot. Partially drain all the beans (I don't drain the baked beans) and add to the baking dish or crock pot, stirring gently to mix. Sprinkle with bacon.
  • Bake at 350 F for 40 minutes or cook in crock pot until heated through.
  • For vegetarian version just sauté onion and add to bean mixture. If using dry tofu crumbles it isn't necessary to rehydrate them first, I just stir them into the mixture. It may require addition of water to the mixture if it gets too thick, I just play it by ear. When using frozen crumbles or gimme lean ground "beef" I heat it up in the pan with the onion before adding to the bean mixture.
