NONNIE'S PERSIMMON PUDDING

When she wasn't able to make it anymore, my husband asked if I would take over. I did, and am now required to bring this to every fall family gathering! - Preheat an oven to 350 degrees F (175 degrees C). Spray a 9x13 inch baking pan lightly with nonstick spray; set aside.
- Mix the persimmon pulp with the 2 cups sugar in a large bowl; set aside.
- Whisk together the eggs and baking soda in a small bowl. Add the egg mixture to the persimmon mixture and beat well; set aside.
- Whisk together the 1 cup flour, salt, baking powder and cinnamon in a bowl. Add 1/4 of the flour mixture to the persimmon mixture. Add 1/4 of the buttermilk and mix well. Continue alternating flour and buttermilk, adding 1/4 each time, and mixing well after each addition, until all of the flour mixture and buttermilk are incorporated. Stir in cream, honey, and melted butter until well combined.
- Pour the pudding batter into the prepared pan.
- Bake in the preheated oven until set, about 1 hour. While baking, do not stir; Turn off the oven at the end of the baking time, but do not remove the pudding from the oven.
- Meanwhile, when the pudding has about 10 minutes of baking time left, make the sauce. Boil the water in a small saucepan. Whisk 1/2 cup sugar and 1 tablespoon flour together, and whisk sugar mixture into the boiling water, whisking until smooth. Boil the sauce for 5 minutes and remove from heat. Stir in vanilla.
- Pour the sauce mixture evenly over the pudding, and leave the pudding to cool in the warm oven for 20 more minutes, being sure that the oven is off so that the pudding does not continue to cook.

GRANDMA'S PERSIMMON PUDDING
My grandma has made this for as long as I can remember. In the last couple of years, I have taken up making this, but have taken to cutting the "sauce" part in half and baking in an 8x8 or 9x9 pan instead for just a little longer (for a thicker and more dense/cakelike pudding, rather than the thinner and more "pudding like" pudding). If you choose the smaller pan, you will want to increase the cooking time slightly.

GRAMMA EDNA'S PERSIMMON PUDDING
This is an old fashioned baked persimmon pudding -- great for the holidays! It came to me via my mother in law from her mother who was born in 1902. One large hachiya persimmon, two large fuju persimmons, or three large Virginia (American) persimmons will give you about 1 cup of persimmon pulp. If your hachiya or Virginia persimmons bright orange (no yellow spots) but still hard, stick them in the freezer for 24 hours then thaw to accelerate the ripening process. Don't use these varieties while they're still hard -- they'll be full of tannins and your pudding will taste terrible!

- Preheat oven to 350°F.
- Sift together the sugar, flour, baking soda, baking powder, salt, cinnamon, allspice, and cloves. Make sure the dry ingredients are thoroughly mixed and the spices are consistently blended throughout.
- Blend the egg, milk, vanilla extract, and butter together.
- Slowly add the persimmon pulp, a couple of spoonfuls at a time, until thoroughly combined.
- Carefully add the dry ingredients to the wet ingredients one cup at a time, until a heavy batter is formed; if you are using an electric mixer blend these together on a low speed so that excess gluten is not formed in the flour.
- Place batter in a heavy covered baking dish (Dutch oven or Pyrex is best) and bake for 35-55 minutes until the edges are firm and the center is still soft.
- Let cool until the pudding is set up and easy enough to handle. If you are not going to eat the pudding immediately, wrap it well in aluminum foil. These puddings can be frozen for 3-4 months, and mailed via priority.

AUNT EDNA'S SUGAR COOKIES
My husband's aunt worked as a personal chef for many years. She was one of those incredible people who never measured anything, everything had become second nature. I convinced her to measure everything when she baked a batch--and I was lucky to get a written copy of this before she passed away. They are the most delicious soft sugar cookies I have ever had. :o)

Steps:
- In a large bowl, cream sugar and shortening together.
- Add salt and eggs and mix well.
- Add vanilla and mix well.
- Add flour, baking soda, baking powder and sour cream and mix well.
- Roll the dough out to 1/4" to 3/8" thick, and cut cookies out in whatever shape you wish. Transfer cookies to a cookie sheet, and bake at 350 degrees F for 10 minutes.
- Sprinkle with sugar. Cool on a wire rack.

- Beat eggs, sugar and persimmon pulp in a large bowl.
- (To make persimmon pulp collect 2/3 of a plastic grocery bag full of wild or tame persimmons and mash through a fruit sieve).
- Wisk buttermilk and baking soda together in a 2 cup container (buttermilk will expand in volume).
- Add to mixture and blend.
- Fold in flower, spices, baking powder, and salt.
- Add melted butter last and blend well.
- Pour mixture in an 9" x 13" buttered baking dish and bake 40 minutes at 350 degrees F.
- Add all ingredients for sauce to a small sauce pan and boil for several minutes until thick.
- Remove pudding from oven, pour sauce over it and allow to cool.
