1 1/2 cups sugar
1 cup shortening
2 eggs, beaten
1 (8 ounce) carton sour cream
2 tablespoons grated orange rind
3 tablespoons orange juice
4 cups all-purpose flour, plus
2 tablespoons all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 (16 ounce) package powdered sugar, sifted
2 tablespoons grated orange rind
5 tablespoons orange juice
1 teaspoon vanilla extract

Steps:

  • Combine first 4 ingredients in a large bowl; beat until smooth and creamy.
  • Add orange rind and juice; beat well.
  • Combine flour, baking powder, soda, and salt; gradually add to creamed mixture, beating well.
  • Drop dough by teaspoonfuls onto greased cookie sheets; bake at 350 degrees for 14-16 minutes or until edges just begin to brown.
  • Cool on wire racks.
  • Spread tops of cookies with orange glaze.
  • Orange Glaze: Combine all ingredients; beat until smooth.

2 medium navel oranges
1/2 cup butter-flavored shortening
1 cup sugar
1/2 cup milk
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2-1/2 cups confectioners' sugar
1 tablespoon butter, melted

Steps:

  • With a sharp knife, score each orange into quarters; remove peel. Use knife to remove white pith from peel and fruit; discard. Quarter oranges and place in a blender. Add peel; cover and process until smooth (mixture should measure 3/4 cup)., In a large bowl, cream shortening and sugar until light and fluffy. Beat in milk and 6 tablespoons orange mixture. Combine the flour, baking powder, baking soda and salt; gradually add to creamed mixture until blended. , Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 10-13 minutes or until set and edges are lightly browned. Remove to wire racks to cool., For frosting, in a small bowl, combine confectioners' sugar, butter and enough of the remaining orange mixture to achieve spreading consistency. Frost cookies.

1/3 cup butter
1/3 cup brown sugar
1 cup granulated sugar
1 cup flour
2/3 cup raisins
1/2 cup pecans
1 egg
2 tablespoons heavy cream
1 tablespoon lemon juice
1/2 teaspoon nutmeg
1/2 teaspoon vanilla extract
1 (8 ounce) package cream cheese

Steps:

  • Preheat oven to 350*.
  • Cream butter w/ brown sugar. Toss together flour raisins and pecans (set aside one cup for topping).
  • Add dry ingredient to creamed mixture and hand mix to a crumbly consistancy. Press this mixture into an 8" square ungreased glass baking pan. Bake for 15 minutes. Set aside and cool.
  • In the meantime, cream the cream cheese and granulated sugar in a medium mixing bowl. Add egg, cream, juice and vanilla and beat with hand mixer until smooth. Spread over baked crust ans sprinkle top with resrved crumbles.
  • Bake the finished preperation in 350* oven for an additional 20-30 minutes (the center will be firm). Take from oven and cool.
  • Cut into bite-sized squares.
