Steps:
- In a large bowl, beat the first 8 ingredients until smooth. Stir in nuts; pour into crust. Bake at 350° for 55-60 minutes or until set. Cool completely. Garnish with whipped cream if desired.

AUNT BERNICE'S CORNBREAD
I received this recipe from my cousin Leslie when putting together our family cookbook. The recipe belonged to her grandmother, Bernice Peters Chastain (my grandpa's sister). She said that she originally used white cornmeal, but her family always thought it looked "anemic" so they used yellow cornmeal. I believe this is the perfect southern cornbread recipe! It's actually the only cornbread that my step-son will eat!

Steps:
- Preheat oven to 400°F.
- Combine all ingredients except for 2 tablespoons of shortening; Mix well.
- In an iron skillet, place 2 tablespoons shortening.
- Place skillet in oven for a few minutes, until shortening is melted.
- Remove skillet from oven and pour cornbread batter on top of melted shortening.
- (Don't mix) Bake for 25 minutes, or until top is golden brown.
- ~NOTE~If you don't have an iron skillet, you may use a 8-inch round cake pan, using the same directions.

AUNT BERLINE'S PECAN PIE
I required a magazine from a feed store called "Out Here". There was a wonderful recipe in it that I had to share. I have not made it yet, but plan too for this 2005 Thanksgiving year. It has no corn syrup which I really liked! Recipe from Joyce Shelly-Baz

Steps:
- Melt butter pour into mixint bowl.
- Add all the other ingredients and mix well.
- Pour into pie shells.
- Bake 35 to 45 minutes at 350 degrees.

PECAN FUDGE PIE
Steps:
- Preheat the oven to 350°F. Line a 10-inch pie plate with the rolled-out crust.
- Melt the chocolate chips in a double broiler, stirring occasionally. Combine the eggs, corn syrup, butter, vanilla, and salt and stir until thoroughly combined. Gradually add the chocolate to the egg mixture while stirring rapidly. Stir in the pecans. Spread the filling evenly in the crust.
- Bake for 55 minutes, or until set, when a knife inserted in the center comes out clean. Cool on a wire rack for 1 hour before slicing. Serve at room temperature.
DELICIOUS CHOCOLATE FUDGE PECAN PIE
My husbands friends wife made this pie and he brought one home for me to try. It was delicious! I just had to get her recipe.

Steps:
- Melt butter and blend in cocoa.
- Mix cocoa mixture with sugar.
- Add eggs and mix well.
- Add milk and mix.
- Add vanilla and mix.
- Add pecans and mix.
- Pour into unbaked pie shells (2).
- Bake at 450 degrees for 10 minutes.
- Reduce heat to 350 degrees and bake for 20 minutes or until set.
- Pie will puff when done.
- Do not overbake or pie will be dry.
- Take pie out of oven when pie is still shaking in center.
- Let cool off completely then store in refrigerator.
AUNT BERNICE'S FUDGE PECAN PIE
Steps:
- Make a pie crust and bake for 10 mins. Beat eggs slightly. Add rest of the ingredients and stir together. Pour into prebaked crust. Bake for 45 min at 360 degrees. Do not overbake or chill.
