Prosciutto-wrapped asparagus, roasted in the oven until crisp, is such an easy way to make your asparagus extra special. Great for Easter, Mother's Day, graduation parties, or any spring meal!

1 pound asparagus, preferably thick spears
3 to 3 1/2 ounces sliced prosciutto
1 to 2 tablespoons olive oil
Ground black pepper
Lemon zest, optional
Freshly grated Parmesan cheese, optional

Steps:

  • Heat the oven to 400°F: Line a large sheet pan with parchment paper and set aside.
  • Prepare the asparagus: Rinse and pat dry the asparagus. Snap off the tough ends of the asparagus. Set asparagus spears aside. (Reserve the snapped ends for another meal, if you like.)
  • Wrap the asparagus with prosciutto: Cut prosciutto slices in half down their length. Wrap each spear of asparagus with one strip of sliced prosciutto. Tug the prosciutto a little as you wrap it around the asparagus to give it tension. This helps to ensure that the prosciutto wraps around the asparagus tightly. Lay the wrapped asparagus spears on the lined sheet pan.
  • Drizzle the asparagus with 1 to 2 tablespoons of olive oil: Sprinkle a pinch of black pepper on top.
  • Bake the asparagus for 8 to 10 minutes: When done, the asparagus will be bright green and easily pierced with a fork, and the prosciutto will be crisped around the edges.

16 large asparagus spears, tough ends removed
salt
16 slices prosciutto, sliced thin
3 tablespoons unsalted butter, cut into small bits
1/3 cup grated parmesan cheese
ground pepper

Steps:

  • Preheat an oven to 400°F.
  • Butter a baking dish large enough to hold the asparagus.
  • Bring a sauce pan 3/4 full of water to a boil.
  • Add the asparagus and salt and cook until the spears are just beginning to bend when lifted by the stem, 5-7 minutes.
  • Drain and rinse under cold water to stop the cooking.
  • Wrap each asparagus spear in one slice of prosciutto and place in the baking dish.
  • Dot with the butter and sprinkle with the cheese and pepper.
  • Bake in the oven until the cheese melts, about 10 minutes.
  • Serve hot directly from the dish.

Sing along with me now, "these are a few of my favorite things" I like the way the fontina melts a little into the spicy marinara sauce, and the flavor of the grilled asparagus with the crisped up prosciutto... wow, my mouth is watering just talking about this! (p.s. you will have lots of sauce left over. It's great on pasta or anything really. (bread dipping is my favorite)

1 lb asparagus (medium thickness)
1/2 lb prosciutto di Parma (sliced thin but not PAPER Thin)
4 tablespoons olive oil
salt and pepper
3 tablespoons olive oil
1 large onion, chopped
6 garlic cloves, sliced
1 lb fresh mushrooms, sliced
1 teaspoon dry crushed red pepper
1 (28 ounce) can Italian plum tomatoes, chopped, juices reserved
1 (15 ounce) can tomato sauce
1 teaspoon sugar
1/4 cup basil, chopped
1 tablespoon oregano, chopped
1/2 cup fontia cheese (grated)

Steps:

  • Prepare the spicy marinara sauce:.
  • Heat oil in heavy large skillet over medium heat.
  • Add onion; sauté until tender, about 10 minutes.
  • Add garlic; sauté 1 minute.
  • Add mushrooms and crushed red pepper; sauté until mushrooms just begins to soften, about 5 minutes.
  • Add tomatoes and reserved juices. Cover and simmer 15 minutes. Add tomato sauce, sugar, basil and oregano. Cover and cook 15 minutes.
  • Uncover and simmer until slightly thickened, about 5 minutes longer. Season with salt and pepper.
  • Prepare asparagus:.
  • Wash and trim tough bottoms off of asparagus. Dry well on paper towels or tea towel. Drizzle asparagus with olive oil to coat well. Sprinkle all over with salt and pepper. (use very little salt as the prosciutto has a lot of salt).
  • Wrap each asparagus in one slice of prosciutto, so that both the top and bottom ends are sticking out. Secure with a toothpick.
  • Prepare grill to medium low heat. Grill the wrapped asparagus till the ends are lightly browned (slight charring) and the proscuitto is crispy.
  • Assemble:.
  • Spoon a thin layer of the spicy marinara on the bottom of a each plate (or blanket the bottom of a serving platter) Remove toothpicks from the asparagus and arrange nicely on top of the sauce. Top with even portions of the grated fontina cheese. Place a few more small spoonfuls of the tomato sauce decoratively on and around the cheese topped asparagus. Garnish with additional chopped basil or some chopped parsley.

1 cup balsamic vinegar
Salt
12 asparagus spears
12 thin slices prosciutto
Extra-virgin olive oil, to serve
Freshly ground black pepper
Fleur de sel

Steps:

  • Pour the vinegar into a small pot and bring it to a boil over high heat. Turn the heat to medium low and reduce the vinegar by about 1/4, or until it is thick. Let cool.
  • Put a pot of salted water over high heat. Trim the asparagus spears to that they are all the same length. Peel the bottom half of the spears with a vegetable peeler. Tie the asparagus together into a bundle using kitchen string. When the water is boiling, lower the asparagus into the pot and cook until just tender, about 3 minutes. Plunge the asparagus into a bowl of ice water to stop the cooking. When it is completely cold, remove the spears and lay them out onto a rack to dry.
  • Roll a slice of prosciutto around each asparagus spear. Arrange them on a platter and drizzle over some olive oil. Sprinkle with some pepper and salt. Finally, dribble on some of the reduced balsamic vinegar. Serve immediately.

1 tablespoon olive oil
16 spears fresh asparagus, trimmed
16 slices prosciutto

Steps:

  • Preheat the oven to 450 degrees F (220 degrees C). Line a baking sheet with aluminum foil, and coat with olive oil.
  • Wrap one slice of prosciutto around each asparagus spear, starting at the bottom, and spiraling up to the tip. Place the wrapped spears on the prepared baking sheet.
  • Bake for 5 minutes in the preheated oven. Remove, and shake the pan back and forth to roll the spears over. Return to the oven for another 5 minutes, or until asparagus is tender, and prosciutto is crisp. Serve immediately.

6 tablespoons butter
2 egg yolks from pasteurized eggs (these are identified in stores as "pasteurized" and although not cooked, they have been sufficiently heated for food safety)
1 1/2 teaspoons fresh lemon juice
1/8 teaspoon ground white pepper
Dash salt
16 asparagus spears, tough ends snapped off, and boiled until just tender but still bright green
16 slices prosciutto, thinly sliced

Steps:

  • Clarify butter by melting it in a very small pot or metal container over low heat and scooping out the foam that rises. Then, spoon off the clear butterfat to a clean bowl or container, being careful not to disturb the water or milk solids at the bottom. The clear portion is clarified butter. Set this aside briefly in a warm place. Combine the egg yolks, lemon juice, white pepper, and salt in a blender and process at high speed for about 60 seconds. Leaving the blender running, pour the clarified butter through the feed opening of the blender in a slow steady stream and mix until thickened. Pour into a shallow plate. Dip each asparagus spear into the sauce so that three-fourths of the stick is covered to hold prosciutto in place, then wrap a slice of prosciutto over the sauce on each asparagus spear, leaving a dry end for guests to serve themselves.

2 shallots, finely diced
1/4 cup white wine vinegar
1/4 cup dry white wine
1/3 cup heavy cream
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 cup (2 sticks) cold unsalted butter, cut into small pieces
Beurre Blanc Variations, recipes follow

Steps:

  • Preheat the oven to 400 degrees F.
  • Remove the woody ends of the asparagus spears trimming the spears to the same length.
  • Bundle 3 asparagus stalks together and wrap each grouping with one slice of prosciutto, leaving the tips exposed. Drizzle the bundles with olive oil.
  • Roast the bundles for 10 minutes, or until the asparagus ends and the prosciutto slices are crisp.
  • Drizzle each prosciutto-wrapped asparagus bundle with the prepared beurre blanc and serve.
  • Bring the shallots, vinegar, and wine to a boil in a heavy-bottomed saucepan until the liquid is reduced to 2 tablespoons, about 5 minutes.
  • Add the cream, salt, and pepper and bring to a boil for 1 minute. Reduce the heat to low and whisk in a few tablespoons butter. Continue to whisk and add a few pieces at a time of the remaining butter. Wait until each addition is incorporated before adding more butter. The sauce should remain warm, but never hot or the sauce will break.
  • Remove the sauce from the heat and season with salt, and pepper, to taste. If desired, strain the sauce through a sieve to remove the shallot. Discard the shallot. Serve the sauce immediately.
  • Beurre Rouge: Replace the white wine in the original recipe with red wine and the white wine vinegar with red wine vinegar.
  • Beurre Citron: Replace the vinegar and wine in the original recipe with 1/4 cup citrus (lemon, lime, and/or orange) juice and add 1 teaspoon citrus zest.
  • Lime-Ginger: Replace the vinegar in the original recipe with an equal amount of lime juice and add 1 teaspoon minced fresh ginger.
  • Saffron: Add a pinch saffron threads to the reduction.
