ORANGE SESAME ROAST ASPARAGUS
Roast asparagus tossed in a fresh orange sesame ginger dressing!

Steps:
- Toss the asparagus in the oil, salt and pepper, lay in a single layer on a baking sheet and bake in a 400F/200C oven until they start to caramelize, about 15-20 minutes, mixing half way through.

Steps:
- 1. Cook asparagus in a large pot of boiling salted water until crisp-tender, about 4 minutes. Drain. Transfer to bowl of ice water and cool. Drain and pat dry.
- 2. Stir sesame seeds in a heavy small skillet over low heat until light brown, about 3 minutes; transfer to a small bowl.
- 3. Whisk vinegar, mustard, soy sauce, ginger, orange peel and garlic in another small bowl. Gradually whisk in both oils. Season vinaigrette to taste with salt and pepper.
- 4. Arrange asparagus on plates. Spoon vinaigrette over. Sprinkle with sesame seeds.
ASPARAGUS WITH SESAME-ORANGE DRESSING
Serve this simple vegetable side dish with brown rice or quinoa. For variety and color, try adding freshly grated carrots or beets and tossing them with the asparagus and dressing.

- In a large skillet over medium-high heat, bring 1/2 cup water to a simmer. Add asparagus. Cover and reduce heat to medium.
- Cook 3 to 5 minutes, stirring occasionally, until asparagus are just tender. Prepare an ice bath by filling a bowl with ice cubes and water.
- Place steamed asparagus in ice bath to stop the cooking process; drain well.
- Whisk together orange juice, tahini, tamari and ginger in a large bowl.
- Add drained asparagus and toss to coat. Garnish with sesame seeds and serve.

- Bring lightly salted water to a boil in a medium skillet, add asparagus and cook until tender-crisp, about 5 minutes.
- Immerse asparagus in ice water to stop the cooking.

- Cook asparagus in a large frying pan of boiling salted water until crisp-tender, about 3 to 4 minutes, and drain well in a colander giving a cool rinse. Transfer hot asparagus to serving platter.

SHAVED ASPARAGUS SALAD WITH GINGER AND SESAME

- Make the dressing: In a small bowl, stir together rice vinegar, ginger, garlic and brown sugar. Add jalapeño and sesame oil, then season to taste with salt and pepper.
- Snap or cut off the tough bottoms of each asparagus spear. With a vegetable peeler, peel each tough-skinned spear, starting halfway down from tip and peeling toward bottom end.
- Cut the asparagus at a long diagonal into very thin slices (not paper thin - about the width of a thinly sliced onion). Place asparagus slices in a wide salad bowl. Season with salt and pepper and toss lightly. Add the ginger dressing and toss to coat well. Taste and adjust. Add scallions and lime juice and toss again.
- Garnish with mint leaves and cilantro sprigs. Sprinkle with sesame seeds and serve.

SESAME GINGER VINAIGRETTE
My decision to devote this week's recipes to salad dressings was partly a reaction to my son's request for a bottled sesame ginger dressing. "We don't buy dressings in this house," I said huffily. The next day I looked at a bottle of sesame soy ginger dressing at a local market and was horrified to see that the second listed ingredient was sugar. I thought: I can make something sort of sweet and do better than that. And so I did. This dressing is great with green salads and cooked vegetables, as well as with noodles and grains.

- Bring a pot of water to boil, add salt and asparagus and cook for 1 minute.
- Remove and rinse asparagus in cold water, drain well on paper towels.
- In a small bowl whisk together hoisin, rice wine and sesame oil.
- Heat peanut oil in a large skillet.
- Add sesame seeds to center of the pan and cook until the seeds are browned, about 5 minutes.
- Add ginger and garlic and cook 1 minute.
- Add hoisin mixture, asparagus and salt.
- Stir often until asparagus is coated and heated through, 1 minute.
