1 tablespoons olive oil
2 cloves garlic (minced)
½ teaspoon salt
¼ teaspoon freshly ground black pepper
2 tablespoons Parmesan cheese
2 tablespoons panko breadcrumbs
1 lb (one bunch) asparagus (trimmed of 2-inches of the woody stalk ends)
Garlic Aioli (for serving, click for recipe)

Steps:

  • Heat oven to 400°F and line a baking sheet with parchment or aluminum foil. Spray the parchment or foil with cooking spray.
  • Place all ingredients except the asparagus in a resealable plastic zipper bag and shake to mix.
  • Add the asparagus and massage the ingredients to evenly coat the asparagus spears.
  • Empty the bag onto the prepared baking sheet and separate the asparagus out so the spears are not touching one another.
  • Bake 15-20 minutes or until the asparagus is tender and the panko is golden brown.
  • Serve with Roasted Garlic Aioli and...

1 tablespoon olive oil
1 1/2 cups mayonnaise
2 teaspoons apple-cider vinegar
1/2 teaspoon black pepper
1/4 teaspoon salt
3 tablespoons chopped fresh chives
2 lb medium asparagus, trimmed

Steps:

  • Put oven rack in middle position and preheat oven to 400°F.
  • Cut off and discard tops of garlic heads to expose cloves, then brush each head with 1/2 tablespoon oil. Wrap heads together in foil and bake until tender, about 45 minutes. Cool to warm.
  • Squeeze garlic from skins into a food processor and purée with mayonnaise, vinegar, pepper, and salt. Transfer aioli to a bowl and stir in chives.
  • Peel lower two thirds of each asparagus stalk with a vegetable peeler. Cook asparagus in a wide 6- to 8-quart pot of boiling salted water, uncovered, until crisp-tender, about 5 minutes. Drain well in a colander and rinse under cold water until asparagus is cool. Drain and pat dry with paper towels. Serve asparagus with roasted-garlic aioli.

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Divide asparagus stalks into groups of 3 to 5 stalks, depending on the thickness of the asparagus. Wrap each asparagus bundle tightly with 1 piece of bacon, overlapping slightly as you wrap and tucking the ends under the bacon so it holds securely.
  • Place asparagus bundles in a single layer on a piece of aluminum foil. Spray bundles lightly with olive oil spray and top the bacon with cracked pepper.

For the asparagus:
1 pound fresh asparagus
7 ounces panko breadcrumbs
1 teaspoon ground black pepper
For the vegan egg:
2 tablespoons flaxseed meal
7 teaspoons water
For the aioli sauce:
1 cup Hellmann's® Carefully Crafted Dressing and Sandwich Spread
3-4 garlic cloves, minced
2 teaspoons fresh parsley, finely chopped
1 teaspoon extra-virgin olive oil
¼ teaspoon salt

Steps:

  • In a small bowl, add the flaxseed meal and water and with a spoon, stir until combined. Let it sit until thickened, about 3-5 minutes. In the meantime, combine the aioli ingredients in a small bowl. Set aside.
  • Preheat oven to 375°. Line a baking sheet with parchment paper and set aside.
  • On a flat plate, combine the panko breadcrumbs, salt, and pepper.

2 eggs, separated
3/4 cup beer, lager or pale ale
3/4 cup all-purpose flour
3/4 cup white cornmeal
1 teaspoon salt

1/2 teaspoon black pepper
4 cups peanut oil
Sea salt
Garlic Aioli, recipe follows
1 cup mayonnaise
1/3 cup fresh lemon juice
1/2 tablespoon Dijon mustard
1 lemon, zested
4 tablespoons finely minced garlic
1 tablespoon minced fresh tarragon leaves
1/4 teaspoon black pepper
1/8 teaspoon cayenne pepper

Steps:

  • In shallow pan, soak asparagus in buttermilk 12 to 24 hours. Remove from buttermilk, but do not rinse.
  • In a large bowl, combine well the egg yolks, beer, flour, cornmeal, salt, cayenne pepper and black pepper. In large deep sided pot, heat oil to 350 degrees F. Meanwhile, in a large clean bowl with an electric mixer, beat egg whites to stiff peaks. Gently fold beaten egg whites into batter mixture. Dip spears, 1 at a time into batter, then carefully lay in oil. Do not overcrowd pan. Fry in batches, if necessary. Fry for 2 to 3 minutes, turning the spears with tongs to ensure even cooking. Drain on a paper towel-lined plate. Sprinkle with sea salt, to taste. Serve immediately with Aioli.
  • In a food processor, combine all ingredients well. Refrigerate for 1 hour before serving.
