1-1/2 cups frozen edamame (shelled)
3 Tbsp. water
1 can (15.5 oz.) chickpeas (garbanzo beans), rinsed
1 cup loosely packed fresh cilantro, chopped
2 green onions, sliced
1/4 cup chopped dry roasted peanuts
1/4 cup KRAFT Asian Toasted Sesame Dressing
1 tsp. lite soy sauce
1 clove garlic, minced

Steps:

  • Microwave edamame and water in covered microwaveable container on HIGH 4 min. or until edamame are crisp-tender, stirring after 2 min.
  • Combine remaining ingredients in medium bowl.
  • Add edamame; mix lightly.

  • Add all ingredients for sesame brittle to a small bowl. Stir until evenly coated. Spread onto the baking sheet in an even, thin layer. Bake for 23-25 minutes, then remove from oven and let cool completely before breaking up into small shards.
  • Add tamari and miso to a small mixing bowl and whisk well. If the miso paste isn't incorporating, use the back of a spoon to break up the clumps. Add in remaining dressing ingredients and whisk until smooth.
  • Add all of the salad ingredients to a large mixing bowl. Pour dressing over the vegetables and toss well to coat. Top with sesame brittle and enjoy.
