PRAWN RISOTTO (SHRIMP)



Prawn Risotto (Shrimp) image

This is a great everyday prawn risotto that's a cut above basic risottos. Searing the prawn (shrimp) makes a terrific flavour base that compensates for not using a homemade seafood stock. And as long as you use a large pot, you don't need to stand at the stove for 20 minutes to stir constantly and add hot broth a ladle at a time for ultra creamy risotto - read more in post. 1 - 2 tbsp olive oil
400 - 500g (14oz - 1 lb) prawns/shrimp, raw, peeled (Note 1)
Salt and pepper
1 1/2 tbsp (20g) butter
1/2 onion (, finely chopped)
2 garlic cloves (, minced)
1/3 cup (85 ml) dry white wine ((or water))
1 1/2 cups (270g) Arborio rice (, uncooked (Note 2))
3 cups (750ml) chicken broth (, low sodium, at room temp)
1 cup (250 ml) milk (, room temp (full or low fat))
1 cup (150g) frozen peas (, thawed)
1/3 cup (40g) grated parmesan
1 - 2 tbsp (15 - 30g) Extra Butter
Grated parmesan
Finely chopped parsley ((optional))

Steps:

  • Heat 1 tbsp oil in a large heavy based pot over medium high heat. Spread half the prawns in a single layer, sprinkle with salt and pepper. Cook for 1 ½ minutes, then turn and cook the other side for 1 minute. Remove into bowl.
  • Add a touch more oil and repeat with remaining prawns. Set aside and keep warm.
  • Turn heat down to medium. Melt butter in pot then add onion and garlic. Cook for 2 minutes until translucent.
  • Add wine, and stir, scraping the bottom of the pot to mix the brown bits from the prawn into the liquid. Bring to simmer and cook for 2 minutes until harsh alcohol smell is gone.
  • Add rice and stir for 30 seconds until rice is translucent on edges.
  • Add about 2/3 of the chicken broth. Stir, bring to simmer. Adjust heat so it's simmering gently.
  • Simmer for 5 minutes. Stir, then simmer for a further 2 minutes until broth is mostly absorbed and rice is visible on the surface (see video and photos).
  • Add remaining broth and milk. Stir, simmer for 3 minutes. Stir, simmer for 2 minutes.
  • Risotto should be soupy and rice still a tiny bit undercooked.
  • Add peas and parmesan, quickly stir.
  • Taste, then add salt and pepper, then quickly stir.
  • Add Extra Butter, then stir vigorously for 10 seconds (this is the step that makes it very creamy).
  • Lastly, gently stir through prawns (tip in any juices too).
  • Remove risotto from heat, it should be porridge-like. (Note 3, see video) To loosen, add hot tap water 2 tbsp at time and stir through.
  • Give it a good final stir just before serving. Then ladle into bowls (it should ooze a bit, not be sticky lump). Garnish with parmesan and parsley if desired.

2 tablespoons extra virgin olive oil
2 bulbs fresh lemon grass, chopped
1 tablespoon minced ginger
2 cloves garlic, minced
1/4 cup finely chopped shallots
2 cups unsweetened coconut milk
2 cups fish stock
1 cup dry white wine
1 tablespoon Vietnamese fish sauce (nuoc mam)
Juice of 2 limes
1 1/2 cups Arborio rice
1 1/2 pounds medium shrimp, shelled and deveined
3 tablespoons minced mint
Salt and ground white pepper

Steps:

  • Heat oil in a heavy saucepan. Add lemon grass, ginger, garlic and shallots and sauté over low heat until soft. Meanwhile, place coconut milk, stock, 1/2 cup wine, fish sauce and lime juice in another saucepan. Bring to a gentle simmer.
  • Add rice to saucepan with lemon grass and cook, stirring, a minute or two. Add remaining wine and cook, stirring, until it is absorbed. Add 1/2 cup coconut milk mixture and stir until it is absorbed, then continue adding the mixture, 1/2 cup at a time, stirring constantly. Rice should be al dente after about 15 minutes.
  • Stir in shrimp; cook until they turn pink, 3 to 5 minutes. Fold in mint. Season with salt and pepper and divide among soup plates. Serve.

2 1/2 cups fish or vegetable stock
1/3 cup olive oil
3 tablespoons unsalted butter
1 small onion, minced (about 1/2 cup)
1 1/3 cups Carnaroli or Vialone Nano rice
1/2 cup dry white wine
8 small clams, such as Manila
8 mussels, scrubbed and debearded
4 ounces squid, cleaned and cut into thin rings
4 medium sea scallops
1/2 cup peeled, crushed, and seeded plum tomatoes
1/2 cup loosely packed chopped fresh flat-leaf parsley
1/2 teaspoon chopped garlic
1 tablespoon brandy
1 tablespoon extra-virgin olive oil
1/2 cup freshly grated Parmigiano-Reggiano, optional
Salt and freshly ground black pepper
N/A freshly ground black pepper

Steps:

  • 1. In a small saucepan, warm the fish or vegetable stock. Keep warm.
  • 2. In a large saucepan over moderately low heat, warm the olive oil. Add 1 tablespoon of the butter and the onion, and sauté, stirring occasionally, until tender (there should be no color), about 5 minutes. Add the rice and toast lightly for 1 minute without letting the rice or onion take on any color.
  • 3. Add the wine and cook until almost completely absorbed. Add most of the stock (it should come about 1/2 inch above the rice) and bring to a simmer. Cook the risotto, stirring occasionally, until the rice has absorbed some of the liquid, about 8 minutes.
  • 4. Add the clams, mussels, squid, scallops, and tomatoes, and continue cooking, stirring occasionally, until the seafood is cooked and the rice is al dente, about 6 minutes more. As the rice continues to absorb the liquid, add more as needed.
  • 5. Remove the risotto from the heat and add the parsley, garlic, brandy, olive oil, Parmigiano-Reggiano, if using, and the remaining 2 tablespoons butter. Stir well to release the starches and make the risotto creamy. Season to taste with salt and pepper, and serve immediately.

This is my kind of comfort food-a very untradtional but flavorful way to prepare risotto. Lots of shrimp, with garlic, ginger, pine nuts and cilantro. Risotto goes Pacific Rim! Adapted from a recipe from a local grocery store.

1 cup arborio rice
5 tablespoons butter, divided
1 (3 1/4 ounce) package shiitake mushrooms, stems removed,cut into 1/4 inch strips
1 tablespoon fresh minced garlic
1 tablespoon fresh minced ginger
3/4 lb fresh shrimp, peeled,deveined,cleaned
3 1/4 cups chicken broth
1/4 cup dry sherry
2 tablespoons soy sauce
1/2 cup red bell pepper, diced
1/3 cup pine nuts, toasted
1/2 cup cilantro leaf, chopped

Steps:

  • Melt 3 TBS of the butter in a medium saucepan over medium heat.
  • Stir in mushrooms and saute until softened, about 5 minutes, then remove to a plate.
  • Melt remaining 2 TBS butter in the same saucepan.
  • Stir in ginger and garlic, saute until fragrant, about 1 minute.
  • Stir in rice; cook over medium heat for 3 minutes.
  • In another saucepan, combine shrimp, chicken broth,sherry and soy sauce.
  • Bring to a boil; remove shrimp to a bowl.
  • Add about a third of the hot broth to the rice.
  • Cook over medium heat until broth is absorbed, stirring 2 or 3 times.
  • Continue adding a third more broth and stirring until rice is still firm but not raw tasting, about 25 minutes.
  • Stir in mushrooms,red pepper, pine nuts and shrimp; heat through, for about 4 more minutes.
  • Stir in cilantro and serve right away.
  • To toast pine nuts:can pan toast or toast in a preheated 325* oven until golden-watch carefully.
