WOK OR SKILLET ASIAN-STYLE FRESH GREEN BEANS
To save some time cook the green beans ahead, place in a zippered plastic bag and refrigerate until ready to use. Make certain to pat the green beans dry using a paper towel before sautéing them. If you like spicy like my family does add in 1-2 teaspoons dried chili flakes when sautéing the garlic. Just to let you know, I tried this recipe using Green Giant brand frozen whole beans and it was not as successful as using the fresh beans. Prep time does not include boiling the beans. This is a really great recipe for fresh summer green beans!

SPICY SZECHUAN GREEN BEANS
I modified this recipe to be less oily. It is almost as good as take-out Chinese green beans. It tastes wonderful with ham and a baked yam.

STIR-FRIED GARLIC GREEN BEANS

Steps:
- Bring a pot of water to a boil, season with salt and add the green beans. Boil 1 minute, drain and rinse with cold water, then place on a kitchen towel to dry thoroughly. (If vegetables aren't dry when you add them to the hot wok or pan, they will splutter and braise instead of stir-frying.) Place within reach of your wok or pan.
- Combine the soy sauce and wine or sherry in a small bowl or measuring cup and place within reach of your wok or pan. Place the garlic, ginger and red pepper flakes in another small container near the burner.
- Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the oil by adding it to the sides of the pan and swirling the pan. Add the garlic and ginger, stir-frying for no more than 10 seconds, and then add the green beans. Toss together, then add the soy sauce and sherry and stir-fry for one to two minutes, until the beans are crisp-tender. Remove from the heat and serve.

SPICY GREEN BEANS
You can buy chili oil in Asian markets or in the ethnic foods section of the supermarket. You can also substitute with olive oil and a pinch of red chili flakes or use recipe #175117. Most of the recipe can be made in advance, and you can quickly finish the beans at the last minute. This is from Firehouse Food: Cooking with San Francisco's Firefighters. Edit: You may want to start with 1 tablespoon of chili oil and adjust to your liking.

Steps:
- Prepare an ice bath by filling a large bowl with water and ice.
- Bring a large pot of lightly salted water to a boil. Add the green beans and cook until crisp-tender, about 2 minutes.
- Using a slotted spoon, transfer the beans to the ice bath; this will stop the cooking process so that the beans remain crisp. When the beans have cooled, transfer them to a colander and allow them to drain completely. Spread them on paper towels to dry. Set aside.
- Heat the olive oil in a large, heavy-bottomed skillet over medium heat. Add the onion and saute until soft and translucent, about 3 minutes. Add the bacon and continue to cook for 5 minutes, or until the bacon is crisp and the onion is golden. Using a slotted spoon, transfer the bacon and onion to a plate lined with paper towels, leaving as much fat in the pan as possible. Discard the fat, wipe the skillet with a paper towel, and put the pan back on the heat. Add the chili oil and the green beans; saute the green beans for 3 minutes. Toss in the bacon mixture, stirring until heated through. Season to taste with salt and pepper.

SPICY GARLIC GREEN BEANS
This is a great dish we have at a local chinese restaurant that I came home and played with. They're an excellent side dish. I store some thai peppers in oil that I use in place of the olive oil but regular olive oil is fine. This recipe is great if you cube up a chicken breast into 1/2" cubes and add it also.

- *: If you’re making rice get it started at this time. Follow your package’s instructions. Mine took 10 minutes on the stove top.
- Heat a large skillet over medium heat. Heat one tablespoon of the oil and add the green beans. Saute for 5 to 8 minutes, or until tender with a bit of a crunch. Remove and set aside.
- While the green beans are cooking add all of the sauce ingredients EXCEPT the corn starch and water to a mixing bowl. Mix until well combined, taste and adjust the flavors as needed. In a small bowl whisk together the corn starch and water to create a slurry. Set both aside.
- Once you remove the green beans from the skillet heat the other tablespoon of oil and add the steak along with the sauce. Saute for 3 to 4 minutes, or until you reach the desired doneness of your steak (I like mine on the rare side). Stir in the corn starch slurry and green beans allow the sauce to thicken, about 1 to 2 minutes.

- Add the green beans, ginger, and garlic to the juices left in the skillet. Toss to combine, add water, and cover with lid. Continue cooking over medium-high heat for 5 minutes. Uncover and continue tossing the green beans in the skillet constantly until the green beans are crisp-tender, about 5-7 minutes.
- Return the beef and any juices to the skillet along with the fish sauce and basil. Toss quickly to coat and cook about a minute. Sprinkle with more basil, if desired and serve immediately, by itself or over rice. Enjoy!
