Grilled Asian Steak with Cilantro Basil Chimichurri image

2 1/2 - 4 lbs tri-tip roast ((also known as triangle steak or bottom sirloin cut)*)
1 1/2 cups fresh cilantro leaves and stems, packed
1/2 cup fresh basil leaves, packed
1/2 cup fresh mint leaves, packed
4 garlic cloves, peeled
1 inch ginger, peeled, roughly chopped
4 green onions, roughly chopped
1 jalapeno deveined, seeds separated, roughly chopped
3 tablespoons olive oil
2 tablespoons rice wine vinegar
1 tablespoon fish sauce ((may sub soy sauce))
1 teaspoon toasted sesame oil
1/4 teaspoon salt
1/4 teaspoon pepper
1/3 cup Vegetable oil
1/4 cup reduced sodium soy sauce
1/4 cup packed brown sugar
2 tablespoons fish sauce
2 tablespoons rice wine vinegar
2 tablespoons Asian sweet chili sauce
1 tablespoon toasted sesame oil
2 tablespoons Asian Chimichurri ((above in directions))

Steps:

  • Asian Chimichurri: Pulse the cilantro, basil, mint, garlic, ginger, green onions, and jalapeno (without seeds) in food processor until coarsely chopped, pushing sides down as needed. Add olive oil, rice wine vinegar, fish sauce, toasted sesame oil and salt and pepper and continue to pulse until finely chopped and well combined. Taste and add desired amount of jalapeno seeds for additional heat (optional). Remove 2 tablespoons Chimichurri to a large resealable plastic bag. Refrigerate the remainder separately.
  • Asian Marinade: To the Chimichurri in the plastic bag, whisk in all of the Asian Steak Marinade ingredients. Pierce steak all over with a fork and add to marinade. Massage marinade into steak and seal bag. Refrigerate 5 hours up to overnight, turning bag occasionally.
  • Grill: When ready to grill, remove Chimichurri and steak from refrigerator to bring to room temperature (about 30-45 minutes). Grease and preheat grill to 400 degrees F. Sear roast for 3-5 minutes per side, cover, and turn heat down to 350 degrees F. Grill for 15 minutes, flip, cover, and cook an additional 10-20 minutes, depending on the size of your steak cut and how well done you want your steak. Watch closely that your temperature stays around 350 degrees F.
  • Check for doneness with a meat thermometer inserted right in the middle of the steak. Thermometer should read: 135 degrees F for medium rare, 145 degrees F for medium. The outside of the roast will get quite dark with a charred crust which is exactly what you want with this cut of steak.
  • Remove steak from grill, loosely tent with foil and let rest 10 minutes before slicing THINLY across the grain. Serve with Asian Chimichurri.

The hallmarks to perfect grilled steaks are a great charred crust with some grill marks, seasoning generously and nailing the temperature (doneness). Always consider the thickness of the steak when cooking, knowing the thicker the steak, the longer the cook time (see the Cook's Note below). Chimichurri is a great sauce to know because it belongs to a group of uncooked condiments that touch so many cultures and dishes. If you can make chimichurri, you can make salsa verde and pesto. A rule of thumb is chimichurri is herbal, salsa verde is acidic and pesto is nutty. Choose the right sauce to pair perfectly with your protein or vegetable. Flank steak is a heavily used muscle but will grill amazingly. It's pleasantly chewy with great flavor.

1 cup (60 g) packed fresh parsley
3 tablespoons (8 g) chopped cilantro
1 teaspoon dried oregano
3 cloves garlic, finely minced
1/2 cup (120 ml) olive oil
1/4 cup (60 ml) red wine vinegar
1/4 teaspoon crushed red pepper
1 teaspoon Maldon sea salt
2 pounds (910 g) flank steak
Kosher salt and freshly ground pepper
2 tablespoons (30 ml) olive oil
1 tablespoon (15 ml) soy sauce
1 large red onion, sliced into 1/2-inch-thick (1.3-cm) rings
Vegetable oil or nonstick cooking spray, for greasing

Steps:

  • Make the chimichurri sauce: Add all the sauce ingredients to a small food processor. Pulse 4 to 6 times, until the herbs are roughly chopped and chunky. Transfer to a serving bowl.
  • Cook the steak: Pat the flank steak dry with a paper towel. Season generously with salt and a pinch of ground pepper. Place in a medium bowl and drizzle with the olive oil and soy sauce. Add the onion to the bowl and give it all a massage until combined.
  • Heat a grill to high for at least 5 minutes. If using a charcoal or gas grill, wipe the grill grates with a lightly oiled paper towel right before cooking to clean off any char and debris. This will give you a great grill mark and help keep the beef from sticking. Alternatively, place a grill pan over high heat and preheat for at least 5 minutes. Rub a little oil on the pan or spray with nonstick cooking spray.
  • Grill the steak for about 3 minutes, or until well browned on one side. Turn the steak over and add the onion to the grill. Cook for another 2 minutes, or until the internal temperature reaches 125 degrees F (52 degrees C) for medium-rare, or to your desired doneness (see Cook's Note). You just want the onions slightly charred but still crunchy. Transfer the steak and onions to a cutting board and allow to rest, tented with foil, for 5 minutes. Slice the steak against the grain into 1-inch (2.5-cm) planks. Serve the steak over the onions and drizzle with the chimichurri sauce.

  • Preheat a grill, grill pan or broiler on high heat. Cook the steak for 2-1/2 to 3 minutes per side for rare to medium-rare. Allow to rest for 5 to 7 minutes before slicing across the grain. Serve with Asian chimichurri sauce for dipping.

  • Zest all of the oranges to make approximately 4 tablespoons of zest. Add 2 tablespoons of the zest to a gallon freezer bag and 2 tablespoons to the bowl of a food processor for the chimichurri sauce. Squeeze the juice from 2 of the oranges into the gallon freezer bag and save the other orange for another use. Set 1 cup of the canola oil aside for the chimichurri to add later, and add the remaining 2 tablespoons of the canola oil to the freezer bag with 5 of the peeled garlic cloves roughly chopped or smashed. Add the other peeled and smashed garlic cloves to the food processor. Roughly chop the peeled and smashed ginger and add half to the marinade and half to the food processor along with the fresh herbs, rice wine vinegar, and sesame oil.   • To finish off the marinade, add the soy sauce and brown sugar to the gallon bag, seal the bag and massage the marinade together, add the steak, seal, and marinade at room temperature for 30 minutes or refrigerate up to 24 hours.
  • Preheat the grill to high. Pull the steak from the marinade and allow to rest at room temperature for 30 minutes if refrigerated. Place the steak on the hot grill ad baste with the remaining marinade, cooking for for 5-7 minutes on each side for medium rare, or until steaks come to 125 degrees F. Transfer to a plate or cutting board and rest for 10 minutes.
  • Going against the grain, cut the flank steak into thin slices and dress with the chimichurri sauce and serve.
