GRANDMA'S OATMEAL RAISIN COOKIES

This is our family's very favorite cookie recipe. I've never tasted any like it! The oatmeal raisin cookies freeze well, too. -Susanne Spicker, North Ogden, Utah

2 cups raisins, chopped
2 cups boiling water
3/4 cup butter-flavored shortening
1 cup sugar
3 large eggs
2-1/2 cups all-purpose flour
2 cups old-fashioned oats
1-1/4 teaspoons baking soda
1/2 teaspoon salt
2 cups chopped walnuts

Steps:

  • Place raisins in a small bowl. Cover with boiling water; let stand for 5 minutes. Drain and set aside., In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs. Combine the flour, oats, baking soda and salt; gradually add to creamed mixture and mix well. Stir in walnuts and raisins., Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Flatten with a glass. Bake at 325° for 8-10 minutes or until bottoms are browned. Remove to wire racks.

Fill the biscuit tin with these rustic cookies. Soaking the raisins gives a boost to the texture and stops them from burning during cooking

100g raisin
150ml vegetable oil
200g golden caster sugar
1 large egg, beaten
1 tsp ground cinnamon
1 tsp vanilla extract
140g plain flour
¼ tsp bicarbonate of soda
300g oats

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line 2 baking trays with baking parchment. Pour 50ml/2fl oz boiling water over the raisins and leave to soak for 20 mins until plump. Drain, reserving the liquid.
  • Meanwhile, in a large bowl, mix together the oil and sugar. Gradually beat in the egg, along with the reserved water from the raisins, the cinnamon and vanilla extract. Sift the flour, bicarbonate of soda and a pinch of salt into the bowl, then add the oats. Finally, mix in the raisins.
  • Drop heaped tbsps of the cookie dough onto the baking trays, well spaced apart as they will spread when cooking. Bake for 12-15 mins until golden. Leave to cool on the trays for 10 mins before tucking in, or transfer to a cooling rack to cool completely. Will keep in an airtight container for up to 3 days.

Asda great stuff range is a range for kids that has controlled fat, controlled salt, no preservatives or colours and much more, so when I saw these in their magazine I had to post it, what's more, this is egg free!!!

50 g dried apricots
125 g butter, room temperature
75 g soft brown sugar
100 g self-raising flour
75 g porridge oats
4 (14 g) boxes raisins

Steps:

  • pre heat the oven to 180 degrees.
  • line 2 baking trays with some baking paper.
  • cut the apricots into small pieces.
  • put the butter and sugar in a large mixing bowl.
  • cream them together until they become creamy.
  • add the flour, oats, apricots and raisins and mix them together.
  • roll out the oat mixture into balls, about the size of a ping pong ball and put them on the baking trays.
  • flatten each ball slightly.
  • put them in the oven and bake for 15 minutes.
  • leave to stand for 5 minutes, then trandfer them to a cooling tray.

  • Preheat the oven to 180C/160C Fan/Gas 4. Line 2 baking trays with baking paper. Put the baking spread, oil, sugar, egg and vanilla extract in a large bowl. Beat with a wooden spoon until well combined.
  • Put rounded teaspoons of the mixture on the baking tray. Leave a 3cm gap between them to allow them to spread slightly.
  • Bake for 12-14 mins until golden. Leave on the tray for 10 mins then transfer to a wire rack to finish cooling. Best eaten on the same day.
