THREE CHEESE HOT ARTICHOKE DIP
A hot and cheesy artichoke dip for your next gathering.

Steps:
- Preheat oven to 350 °F.
- In a large mixing bowl, beat the cream cheese with a hand held electric mixer until smooth. Then beat in the mayonnaise until smooth. Add remaining ingredients and stir together until combined. Transfer the dip to a pie plate or shallow gratin dish. Bake in a preheated oven for 30 to 40 minutes until the top is golden brown and the dip is bubbling. Serve hot with crackers, tortilla chips, crostini or veggies.
CHEESY ARTICHOKE SQUARES
This is an old family favourite. I can't remember where I got the recipe, but I have been making these squares for 25 years. These spicy squares are excellent served hot or cold. If you are not a fan of alot of herbs, than please, add the amount you would prefer, this dish is very versatile.

Steps:
- Preheat oven to 350°.
- Drain juice from one jar of artichokes into frying pan.
- Sauté onion and garlic in the artichoke juice, simmer and cool.
- Chop artichokes and mix with the cooled onions and garlic.
- Combine artichoke mixture, breadcrumbs, cheese, eggs, salt, pepper, parsley, oregano, basil, thyme, rosemary and Tabasco sauce together until well blended.
- Pour the artichoke mixture into a greased 8x8-inch or 9x9-inch pan.
- Bake in a 350° oven for 40 minutes.
- Let cool 5 minutes; cut and enjoy.
ARTICHOKE DIP
This easy artichoke dip recipe from Paula Deen is a cheesy vegetarian appetizer perfect for tailgating. Ingredients include cream cheese, diced artichoke hearts and sour cream. Prep time is about 10 minutes and cooking time is 25 to 30 minutes at 350 °F.

- Preheat the oven to 350 degrees F. Lightly spray an 11 by 7-inch baking dish with nonstick cooking spray.
- In a large bowl, combine the artichokes, cream cheese, mayonnaise, sour cream, 1/2 cup Parmesan cheese, 1/2 teaspoon salt, pepper and hot sauce if desired. Stir well. Spoon into the prepared baking dish. Sprinkle the remaining 1/4 cup Parmesan on top. Bake until bubbly, 25 to 30 minutes.
- In a small skillet, heat the oil until hot. Add the leeks and fry, stirring constantly, until crisp, about 5 minutes. Drain on paper towels and sprinkle with salt if desired. Sprinkle over the dip before serving. Serve warm with baguette slices or assorted crackers.
- Cook's Note: Dip can be made ahead up to 24 hours, refrigerated and reheated. Sprinkle with the leeks just before serving.
SPINACH ARTICHOKE SQUARES WITH CHICKEN
This is a great appetizer. Very tasty and different. I brought it to a party and everyone really enjoyed it and I had to pass out the recipe. I adapted this recipe from Pillsbury. Enjoy!

- Heat oven to 375 degrees. Spread crescent dinner rolls on the bottom of a 12x15 sheet pan. Bake 10-12 minutes until lightly golden.
- Meanwhile, in medium bowl, combine all remaining ingredients except mozzarella cheese; mix well. Spread mixture evenly over partially baked crust.
- Top with Mozzarella Cheese.
- Bake at 375°F for an additional 10-12 minutes or until topping is thoroughly heated. Serve Warm.

- Preheat the oven to 350 degrees F. Grease a casserole dish with nonstick spray.
- Heat the spinach in a microwave oven on high for 5 minutes and squeeze dry. Drain the artichoke hearts and coarsely chop in a food processor.
- Combine all the ingredients except the jack cheese in a large bowl. Stir well. Scrape into the prepared casserole dish and sprinkle the jack cheese on top. Bake for 30 minutes.
