Two 14-ounce cans artichoke hearts, drained and roughly chopped
1 cup mayonnaise
1/2 cup hummus
1/2 cup crumbled feta
1/2 cup pitted kalamata olives, chopped
1/2 cup pitted Castelvetrano olives, chopped
1/4 cup pimientos, chopped
1/4 cup sour cream
2 tablespoons roughly chopped fresh parsley
2 cloves garlic, minced
3 cups grated Monterey Jack cheese
1 cup grated Parmesan cheese
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, add the artichoke hearts, mayonnaise, hummus, feta, kalamata olives, Castelvetrano olives, pimientos, sour cream, parsley, garlic, 2 cups of the Monterey Jack and 3/4 cup of the Parmesan and season with salt and pepper. Fold to combine. Spoon the mixture into an 8-inch baking dish. Top with the remaining 1 cup Monterey Jack and 1/4 cup Parmesan.
  • Bake until the cheese is melted and bubbly, about 25 minutes. Cover and take to the party!

280g jar chargrilled artichokes in oil, drained, 2 tbsp of the oil reserved
340g jar pitted green olives , drained, 1 olive reserved, to serve
25g pine nuts
50g parmesan (or vegetarian alternative), finely grated
juice ½ lemon

Steps:

  • Put the artichokes, olives, pine nuts, Parmesan and lemon juice into a food processor and whizz to a rough paste. Can be made up to a day ahead and chilled. When ready to serve, put into a bowl, swirl the reserved oil from the artichokes over the top and finish with the remaining olive. If made ahead, bring it to room temperature about an hour before serving to let the flavours develop.

10 whole Black Olives
8 oz. weight Cream Cheese (1 Pack)
1 c. (Real) Mayonnaise
1 whole Egg
1/4 c. Red Onion, Diced
1/4 c. Grated Parmesan Cheese
3 dashes Worcestershire Sauce
Salt And Pepper, To Taste
Cayenne Pepper (for Spice)

Steps:

  • Combine all ingredients in the bowl of a food processor. Pulse 5 to 8 times until mixture is combined but not totally liquefied. Stir and check seasonings, then pour into a small casserole dish. Bake at 350 degrees for 20 to 25 minutes, or until hot and bubbly.Serve with Stacy's Simply Naked chips.Delicious!

BAKED ARTICHOKES WITH OLIVES AND RICOTTA CHEESE



Baked Artichokes with Olives and Ricotta Cheese image

1/4 cup extra-virgin olive oil
4 shallots, thinly sliced
4 cloves garlic, finely minced
1 cup Nicoise olives, pitted
1 cup white wine
1/4 cup Spanish capers
8 globe artichokes, cleaned and stored in a bowl of water mixed with juice of 1 lemon
One 14-ounce can peeled San Marzano tomatoes, broken apart with your hands
Kosher salt and freshly ground black pepper
1 cup ricotta cheese
1/2 cup grated Pecorino Romano
Canola oil, for frying
1/4 cup fresh tarragon, chopped

Steps:

  • In a shallow Dutch oven or braising pan, heat the olive oil over medium heat. Add the shallots and garlic and cook, stirring occasionally, until soft but not browned, about 5 minutes. Add the olives, white wine and capers and cook about 2 minutes.
  • Halve 6 of the cleaned artichokes and place them in the braising liquid. Add the tomatoes and their liquid and season with salt and pepper. Be sure to taste, as the olives and capers can make the sauce very salty. Cover the mixture, bring to a simmer and cook over medium heat until the artichokes are tender (a knife should go through without resistance) and the liquid has reduced by half, about 40 minutes.
  • Preheat the oven to 375 degrees F. Drop dollops of the ricotta cheese on each artichoke, then top with the grated Pecorino. Bake in the oven covered for 20 minutes. Uncover and bake until golden brown, about 25 minutes.
  • In the meantime, heat 2 inches canola oil in a Dutch oven or fryer to 350 degrees F. Slice the remaining 2 artichokes extremely thin using a mandolin slicer or by hand. Pat the slices dry with paper towels. Drop the artichoke slices into the hot oil and fry until golden brown and crispy, about 5 minutes.
  • Top the baked artichoke with the fried artichoke slices and tarragon serve.

SPINACH, OLIVE AND ARTICHOKE DIP

3 tablespoons unsalted butter, melted
8 ounces cream cheese, room temperature
1/2 cup sour cream
10 ounces frozen spinach, thawed and squeezed dry
1/2 cup pitted green olives
One 14-ounce can quartered artichoke hearts, drained
1/2 cup grated mozzarella
1/2 cup grated Pecorino Romano
1 cup grated Parmesan
1 clove garlic, chopped
1/4 teaspoon grated nutmeg
Kosher salt and freshly ground black pepper
12 dough balls frozen dinner rolls, such as Rhodes, thawed

Steps:

  • Preheat the oven to 400 degrees F. Brush a shallow 2-quart baking dish (round or rectangular) with 1 tablespoon of the melted butter.
  • In a food processor, combine the cream cheese, sour cream, spinach, olives, artichoke hearts, mozzarella, Pecorino and 3/4 cup of the Parmesan. Then add the garlic, nutmeg, and salt and pepper to taste. Pulse to roughly chop.
  • Place dough balls around the edge of the prepared baking dish. Fill the center of the dish with the dip, spreading to even. Press any remaining dough balls into the top of the dip. Brush the dough with the remaining 2 tablespoons melted butter, and then sprinkle the dough and the dip with the remaining 1/4 cup Parmesan.
  • Bake until the dip is bubbling and the rolls are golden and cooked through, about 20 minutes.

1/2 cup extra virgin olive oil
2 teaspoons fresh lemon juice
1 garlic clove, minced
1 cup pitted green olives, finely chopped
fresh ground pepper

Steps:

  • Drain artichoke hearts and rinse in cool water.
  • Pat them dry with paper towels and place in a food processor with olive oil, lemon juice and garlic.
  • Puree until smooth, 2 to 3 minutes.

  • BOIL artichokes in 3 quarts water with 1 tsp salt and lemon juice for 30 minutes.

a 14-to-16 ounce can whole artichoke hearts, rinsed well, drained, and patted dry
1/4 cup olive oil
1 garlic clove, minced and mashed to a paste with 1/4 teaspoon salt
1/2 cup brine-cured green olives such as picholine, pitted and chopped
3 tablespoons finely chopped fresh parsley leaves
Garnish: fresh parsley sprigs
Accompaniment: 2 medium fennel bulbs (sometimes called anise), stalks trimmed flush with bulbs and bulbs cut lengthwise into strips or triangles for dipping

Steps:

  • In a food processor purée artichoke hearts with oil until very smooth, about 2 minutes. Transfer purée to a bowl and stir in garlic paste, olives, and salt and pepper to taste.   • Set your oven to 400 degrees. Cut the top off the head of garlic and place it in a small baking dish, cut side up. Drizzle it with the oil and place it in your oven.
