SPINACH AND ARTICHOKE PIZZA



Spinach and Artichoke Pizza image

My from-scratch pizza has a whole wheat crust flavored with beer. Top it with spinach, artichoke hearts and tomatoes, then add chicken or ham and fresh basil if you want to include meat. -Raymonde Bourgeois, Swastika, Ontario

Number Of Ingredients 13

1-1/2 to 1-3/4 cups white whole wheat flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon each dried basil, oregano and parsley flakes
3/4 cup beer or nonalcoholic beer
TOPPINGS:
1-1/2 teaspoons olive oil
1 garlic clove, minced
2 cups shredded Italian cheese blend
2 cups fresh baby spinach
1 can (14 ounces) water-packed quartered artichoke hearts, drained and coarsely chopped
2 medium tomatoes, seeded and coarsely chopped
2 tablespoons thinly sliced fresh basil

Steps:

  • Preheat oven to 425°. In a large bowl, whisk 1-1/2 cups flour, baking powder, salt and dried herbs until blended. Add beer, stirring just until moistened., Turn dough onto a well-floured surface; knead gently 6-8 times, adding more flour if needed. Press dough to fit a greased 12-in. pizza pan. Pinch edge to form a rim. Bake until edge is lightly browned, about 8 minutes., Mix oil and garlic; spread over crust. Sprinkle with 1/2 cup cheese; layer with spinach, artichoke hearts and tomatoes. Sprinkle with remaining cheese. Bake until crust is golden and cheese is melted, 8-10 minutes. Sprinkle with fresh basil.

I used leftover crabmeat and artichokes from another meal, and this turned out delicious! Enjoy! Fresh pizza dough can often be found in the deli section of supermarkets.

1 pound fresh pizza dough
¼ teaspoon red pepper flakes
1 (6 ounce) can crabmeat - drained and cartilage removed
1 (6 ounce) jar quartered artichoke hearts in water, drained
2 tablespoons olive oil
1 ½ tablespoons minced garlic
½ cup shredded Parmesan cheese
1 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a pizza pan.
  • Roll out pizza dough on a floured surface to a 14 or 16 inch circle; place onto a pizza pan. Sprinkle dough with red pepper flakes, then top evenly with crab and artichokes. Drizzle with olive oil, then sprinkle with garlic, Parmesan cheese, and mozzarella cheese.
  • Bake in preheated oven until the cheese has melted and the crust is no longer doughy, about 20 minutes. Set oven to broil, and cook pizza for 5 minutes more until the cheese has begun to brown.

It seems I'm always entertaining at the last minute. I keep many of the ingredients for this rich pizza on hand so I can make it at a moment's notice.

1 prebaked 12-inch pizza crust
1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and chopped
1 cup shredded Parmesan cheese, divided
1 cup shredded part-skim mozzarella cheese, divided
1 cup mayonnaise
6 garlic cloves, minced
1/2 cup sliced grape tomatoes

Steps:

  • Place crust on an ungreased 14-in. pizza pan. In a small bowl, combine the artichokes, 3/4 cup of each cheese, mayonnaise and garlic; spread over crust. , Top with tomatoes. Sprinkle with remaining cheeses. Bake at 450° for 15-20 minutes or until edges are lightly browned.

10 black olives
4 marinated artichokes, separated
6 chestnut mushrooms, sliced
200 g mozzarella cheese, grated
1 cup tomato sauce (I like my Tomato Fondue #160495)
2 prepared pizza crust

Steps:

  • Heat up your oven as hot as it gets.
  • Prepare pizza crusts - you can use ready made or use your favourite dough recipe.
  • Spread tomato sauce evenly to the both pizzas. Add the grated cheese - yes, the cheese goes under the toppings.
  • Spread the mushrooms, artichokes and olives on the pizza.
  • Bake in the oven for about 10 minutes or longer, depending on how hot your oven is. Pizza is done when the crust is golden.

1/4 cup extra-virgin olive oil, plus more for pans
10 baby artichokes, trimmed and quartered
1 small shallot, finely chopped
1/2 cup dry white wine
1/2 cup water
2 teaspoons marjoram leaves
Coarse salt and freshly ground pepper
Quick Basic Pizza Dough
6 ounces fresh mozzarella, cut into 1/2-inch dice
1/4 cup freshly grated Parmesan

Steps:

  • Preheat oven to 500 degrees. Lightly oil two 14-inch pizza pans. Set aside. In a medium skillet, heat 1/4 cup oil over high heat. Add artichokes, and cook, stirring, for about 1 minute. Add shallot, and cook, stirring, 1 minute more. Add wine and 1/2 cup water; bring to a boil. Cover, and lower heat to simmer. Cook until artichokes are tender when pierced with the tip of a knife, 8 to 9 minutes. Add marjoram, and stir to combine. Season with salt and pepper. Set aside.
  • Divide dough in half. Cover one half with plastic wrap while working with the other. Working on a lightly floured surface, use fingers to flatten and stretch dough into a rough 8-inch circle. Transfer to one of the prepared pans or onto a pizza peel. Continue pressing dough outward until it just fits inside rim of pan or reaches almost to the edge of the stone. Dough should be less than 1/4 inch thick. Drizzle with olive oil. Repeat with remaining dough.
  • Sprinkle each round with half the mozzarella. Transfer to oven, and bake for 10 minutes. Remove from oven. Divide artichokes evenly between pizzas, and sprinkle each with 2 tablespoons Parmesan. Return to oven until crusty and golden, 10 to 15 minutes more. Serve immediately.

  • Prepare pizza dough through step 5, including preheating the oven to 475°F (246°C). Cover the shaped dough lightly with plastic wrap and allow it to rest as the oven preheats.
  • To prevent the pizza toppings from making your pizza crust soggy, brush the shaped dough lightly with olive oil. Using your fingers, push dents into the surface of the dough to prevent bubbling. Top the dough evenly with chopped roasted garlic, then add parmesan cheese, mozzarella cheese, artichokes, and spinach on top. Finish with an extra sprinkle of parmesan cheese on top, if desired.
  • Bake pizza for 12-15 minutes. Remove from the oven and top with fresh ground pepper, if desired. Slice hot pizza and serve immediately.
