BASIC CHEESE FILLED STUFFED SHELLS-OAMC
Just the basic cheese filled stuffed shells recipe you get off the back of the box, adjusted slightly for OAMC. The prep time is long but it's well worth it to pull them out of the freezer weeks from now and have an easy and quick meal.

Steps:
- Cook noodles according to directions on box.
- Combine all other ingredients.
- Fill each shell with about 2 tbsp cheese mixture.
- Place in foil lined 9x13 pan in a single layer. Wrap in foil and freeze.
- When fully frozen, you can remove the foil wrapped shells from the pan so it takes up less space. When ready to eat, place in same pan.
- To serve, thaw. Cover with spaghetti sauce and recover with aluminum foil. Bake at 350 degrees for about 35 minutes until hot and bubbly.

BASIC MEAT FILLED STUFFED SHELLS- OAMC
Basic meat filled stuffed shells recipe taken from the side of the box of shells and adapted for OAMC. A bit intense (and messy) on the preparation side but a it's a real time saver to make a double batch and be able to pull them from the freezer whenever you want them.

Steps:
- Cook shells according to package directions.
- Brown meat; drain.
- Mix together all ingredients in large bowl.
- Fill each shell with about 2 tbsp meat mixture.
- Place in foil lined pan in single layer. Cover with foil, freeze.
- To prepare:.
- Thaw, cover with spaghetti sauce and recover with foil. Bake at 350 degrees for 45 minutes to 1 hour. Or if still frozen, cover with sauce and foil and bake at 350 degrees for about 2 hours or until hot and bubbly.

ARMADILLOS (STUFFED JUMBO SHELLS) OAMC
I adapted this recipe from traditional stuffed shells recipes because my DH and I do not like ricotta cheese. This is a GREAT recipe for kids who are picky eaters (kids think it is fun because they actually look like little armadillos!) and my nephew loves these. Great served with garlic bread or salad. Freezes well also.

Steps:
- Cook meats together (and optional onion) - be sure not to leave too many large pieces. Drain and set aside to cool.
- Bring large kettle of water to boil and add shells. After about a minute turn heat down to medium and continue to boil - this will help keep your shells from breaking apart.
- Set aside about a cup of the marinara sauce.
- Drain noodles and rinse with cool water. Allow to dry slightly.
- After meat has cooled, add remaining marinara sauce and and 1 1/2 cups cheese. The cheese should not melt if you allowed the meat to cool properly. This mixture should be at least as thick as pudding.
- Spray the bottom of your cooking pan ( I use an 8x8 Oven Gladware - best invention ever!). One at a time fill each shell with a spoonful of mixture. (This is easiest if you squeeze the ends of the shell to open it like a coin purse) Place each filled shell in the pan, seam down (this is why they look like armadillos!). I can get about 15 shells in an 8x8 pan, don't be afraid to pack them close together. When all the shells are filled there I usually have a little mixture leftover. Add the remaining marinara to make a thinner sauce and spread over the top. Add the remaining mozzarella on top. At this point you can cover, label and freeze or cook at 350 degrees for about 20 minutes - enough to heat everything through.
- *Freezer Directions: It is best to thaw in the fridge, but in a pinch you can warm slowly in a 200 degree oven for 20 minutes. Then cook at 350 for about 20 minutes. Enjoy!*.

- Cook shells according to package directions. Place in cold water to stop cooking. Drain.
- Mix together cottage cheese, mozzarella cheese, 1/2 cup Parmesan cheese, eggs, and garlic powder. Rub the dried herbs in the palms of your hands to pulverize them, and stir into the cheese mixture. Stuff mixture into the shells.
- Spread 1/3 of spaghetti sauce in the bottom of a 15 x 10 inch pan. Place shells open side up, and close together in pan. Spread remaining sauce over top, and sprinkle with remaining 1/4 cup Parmesan cheese.
- Bake at 350 degrees F (175 degrees C) for 25 to 35 minutes, or until bubbly. Let stand 10 minutes before serving.

I found this recipe on the back of the San Giorgio jumbo shells box. I've tried a lot of other stuffed shells recipes but I always come back to this one. My hubby loves it and asks for this as his special birthday meal every year. Enjoy!

- Cook pasta according to package directions; drain.
- Cool in single layer on foil or wax paper.
- Heat oven to 350°F.
- Meanwhile, in large skillet, brown meat; drain.
- In large bowl, stir together meat, eggs, bread crumbs, mozzarella cheese (if desired), onion, oregano, salt and pepper.

A really yummy way to make jumbo shells stuffed with cheese taste. It makes a large amount but could be cut in half. I think it is something you could be sure people would like and be really different. I found the basic on the back of the Barilla noodles box but fixed it up some as it would have seemed bland, so I made this and we love it.

- Boil shells with butter and salt to taste.
- Brown hamburger meat and combine with spaghetti sauce; drain shells.
- Combine the egg, ricotta cheese, mozzarella cheese, basil, garlic powder, minced onion, oregano, salt, parsley flakes, and only 1 cup of the parmesan cheese.
- Put the mixture in the shells like a tablespoon and half into each one line them up in across a three quart casserole dish.
- Pour the meat over the top and cook for 30 minutes at 350°F.

- Preheat oven to 350 degrees.
- Cook pasta according to package directions, drain.
- Melt the butter in a large skillet, add chicken and onion, and cook until chicken is done, about 7-9 minutes.
- Stir in breadcrumbs, and remove from heat.
- In a bowl, combine egg, ricotta, half the mozzarella and half the cheddar, spices, salt and pepper.
- Add the chicken mixture.
- Fill shells and place in a 11x7 inch pan.
- Combine tomato sauce, mushrooms, mozzarella and cheddar; pour mixture over shells.

SHRIMP AND RICOTTA STUFFED JUMBO PASTA SHELLS

- Bring a large pot of salted water to boil. Cook the pasta shells as per the package directions. Drain, reserving 1/4 cup of the cooking liquid. Cool the pasta shells in cold water and drain well again. Set aside.
- Set 24 of the shrimp aside in a small bowl and refrigerate until needed. Coursely chop the remaining shrimp and place in a medium bowl. Mix in the ricotta, pesto, eggs, 1/2 cup mozzarella cheese, flour, salt, pepper, and nutmeg.
- Preheat the oven to 350°F Pour the jar of pasta sauce into a large, wide baking dish; stir in the reserved pasta cooking liquid. Spoon the ricotta/shrimp mixture into the pasta shells and set them on top of the pasta sauce. Set a whole shrimp on top of each shell. Sprinkle the shells with the 1 cup mozzarella cheese and the Parmesan cheese. Cover with foil and bake 30 minutes. Uncover and bake 15 minutes more, or until the tops are golden and the sauce is bubbling.
- Suggested serving size is 4 shells each.
