ARLENE'S PRIZE-WINNING CINNAMON ROLLS
My go-to recipe for cinnamon rolls or just plain dinner rolls. I won 2 awards at the Stafford KS County Fair, Hudson Cream Flour Bake-fest with these, along with overwhelming approval from friends and family!

- 1. In large mixing bowl, combine 1 1/2 cups flour with yeast. Using a microwave safe 2 cup measuring cup, heat milk, sugar, and Crisco to very warm-about 130F. Add to flour mixture, mix well and let rest for a few minutes.
- 2. Add egg and salt, mix for 3 minutes with electric mixer or by hand with a wire whisk. Stir in remaining 2 cups flour with large rubber spatula, adding the 2nd cup gradually until a soft dough forms.(Humidity may affect texture of dough and amount of flour needed)Spray a clean mixing bowl with cooking spray, place dough in bowl and cover with plastic wrap. Dough may be placed in refrigerator to rise overnight, or left to rise at room temperature for immediate use.
- 3. After dough has doubled in size, punch down and let rest for 5 minutes. On a large floured surface, roll dough into a large rectangle. Spread with softened butter and sprinkle with cinnamon sugar mixture. Roll up tightly and pinch seam together. Cut into 1 inch slices with sharp knife. Place slices evenly on large (approx. 12" X 16") sheet cake pan sprayed with cooking spray. Cover with clean dish towel or waxed paper and let rise until double. Preheat oven to 375F. Bake rolls for approx. 10-15 minutes until they are light golden brown. Watch rolls closely! Remove from oven.
- 4. For the icing, melt butter in microwave safe dish until it boils. Add powdered sugar and mix well. Add vanilla and cream until icing is thin enough to drizzle over warm rolls.
- 5. Options and helpful hints: Substitute about 1/2 cup whole wheat flour for the white flour when mixing with yeast. Sometimes the dough has to be kneaded a few times to reach the right consistency and more or less flour may be needed. Use a long piece of dental floss to cut slices...slide floss underneath, cross at top and pull through dough. Maple flavoring and chopped pecans may be added to the icing for a different taste experience.
CINNAMON ROLL STICKY BUNS
Awesome cinnamon roll recipe to enjoy not only for breakfast, but anytime. This recipe stands on its own without frosting, but you can frost the rolls with your favorite type of buttercream or cream cheese frosting!

- Combine 2 cups flour, yeast, and cinnamon for dough in the bowl of a stand mixer fitted with the paddle attachment.
- Combine milk, sugar, and salt in a microwaveable bowl; microwave on high in 1-minute increments until very warm, but not hot to the touch, 2 to 3 minutes.
- Add milk mixture to the dry ingredients; mix on low speed until combined. Add melted butter; mix until well combined. Mix in eggs until incorporated.
- Scrape the paddle attachment and switch to the dough hook. Mix in the remaining flour until dough is fairly easy to handle. Turn out into an oiled bowl and cover with plastic wrap. Place over a bowl of hot (not boiling) water and let rest until doubled in size, about 1 hour.
- Punch dough down and turn out onto a floured surface. Roll into a 1/2-inch thick rectangle. Spread softened butter evenly over the surface, then sprinkle with cinnamon, and finally brown sugar. Roll up the rectangle jelly roll-style and cut into 12 equal parts. Place the rolls flat on a parchment-covered cookie sheet and cover with plastic wrap and a towel. Let rise in a warm, draft-free place until doubled in size, 40 minutes to 1 hour. Don't worry if they don't touch, they will continue to rise when baking.
- While the rolls are rising, preheat the oven to 375 degrees F (190 degrees C).
- Bake rolls in the preheated oven until golden brown on top, 20 to 25 minutes. Remove from the oven and brush with the remaining softened butter. Serve hot.

- Combine potatoes, potato water, butter, sugar, salt and hot water in large mixing bowl. Stir until butter melts; set aside and let cool. Combine yeast and 1/2 cup warm water in small bowl. Let rest 5 minutes. Add eggs, 2 cups flour and yeast mixture to potato mixture. Beat until well mixed. Continue adding flour, 1 cup at a time until soft dough forms.
- Knead on a lightly floured surface until smooth and elastic (about 4 to 6 minutes), OR knead with electric mixer using dough hook. Place in a greased bowl, turning to coat. Cover.
- Let rise in a warm, draft free area about 1 hour, until doubled in size. Punch dough down; divide in half.
- Roll one portion of dough on a lightly floured surface to a 12 x 18-inch rectangle. Spread with half the butter. Combine sugar and cinnamon; sprinkle half of the mixture over surface. Roll up tightly lengthwise, sealing edges. Cut into 12 slices. Place in greased 13 x 9-inch pan. Repeat with remaining dough. Cover.
- Let rise 30 to 45 minutes until nearly doubled.
- Bake in preheated 350 degrees F oven for 25 to 30 minutes.
- Cool for 15 minutes. Combine icing ingredients and drizzle over rolls.

- Dissolve yeast in warm milk. In another bowl, combine sugar, butter, eggs, salt, yeast mixture and 2 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Mix brown sugar and cinnamon. Punch down dough; divide in half. PRIZE-WINNING ROLL DOUGH & CINNAMON ROLLS
This is a recipe from my mother. We grew up with this recipe which was used for our rolls, cinnamon rolls, and tea-rings at Christmas time. The mashed potatoes are a huge key, so make sure not to leave them out. You can quickly cook some up and mash them, or use instant in a bind.

- Mix together the first three ingredients (milk, yeast and sugar). When the yeast becomes active, add the eggs, potatoes and 4 cups of flour. When that mixture is bubbly, add salt, oil and the flour (don't add all of it until you make sure you need it all -- you don't want it too stiff). When too thick to stir, pour onto flourered board and knead. Dough should be soft--almost sticky. Place in greased bowl and cover with a damp cloth. Let rise until double in bulk. Punch down. Let rise again. divid dough into easy to handle portions.
- For dinner rolls: roll into balls and place in greased pan. When raised, bake at 375 degrees until golden brown (about 15 to 18 minutes).
- For cinnamon rolls: roll dough 1/4-inch thick. Spread with melted butter, cinnamon, brown sugar and nuts (if desired). Roll up and slice into 1 1/2 -inch sections and place in greased pan. Let them raise until almost doubled in size. Bake at 375 degrees until golden brown (12 to 15 minutes). Glaze with frosting (milk, butter, powdered sugar, cream cheese and vanilla).
OVERNIGHT CINNAMON ROLLS I
Make the night before, rolls rise in the fridge overnight and bake the next morning. Easy and delicious. Enjoy!

- Heat the milk in a small saucepan until it bubbles, then remove from heat. Add the butter and stir until melted; let cool until lukewarm.
- In a large mixing bowl, dissolve the yeast in the milk mixture. Add the sugar, 3 cups of flour, salt and eggs; stir well to combine. Add the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and supple, about 8 minutes.
- Lightly oil a large mixing bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
- Deflate the dough and turn it out onto a lightly floured surface and roll into a 10x 14 inch rectangle. Lightly brush the far edge with water. In a small bowl combine the cinnamon and 3/4 cup brown sugar and sprinkle over the rectangles. Then sprinkle the raisins and chopped nuts over the dough. Roll up the dough into a log and seal the seam.
- Cut the dough into 12 equal pieces; place the pieces in a greased 9x13 inch baking pan, or 12 inch deep dish pizza pan. Cover with plastic wrap and place in the refrigerator to rise overnight.
- The next morning, preheat oven to 375 degrees F (190 degrees C). Take the rolls out of the refrigerator and let stand at room temperature for 30 minutes.
- Bake the rolls for 25 to 30 minutes or until golden. Meanwhile, combine the corn syrup with the vanilla in a small bowl. Whisk in the powdered sugar and enough cream to make a thick glaze; set aside. Drizzle the glaze over the rolls and serve warm.
