ARIZONA PASTA SALAD



Arizona Pasta Salad image

An easy to make southwest pasta salad. You can very the amount of heat by using mild or hot salsa and by adjusting the amount of cayenne. If you don't like black olives try subbing black beans.

2 cups small shell pasta
1 cup mayonnaise
2 cups chunky salsa
1 tablespoon chopped fresh cilantro
6 green onions, chopped
1 cup cooked corn
1 cup sliced black olives
1 red pepper, chopped
1/2 teaspoon onion salt
1/4 teaspoon cayenne pepper

Steps:

  • Cook pasta according to package directons, drain and rinse with cold water, drain again.
  • In a large bowl combine remaining ingredients and mix well.
  • Add shells, toss and chill.

8 ounces tri-colored pasta, any shape
1 cup grated parmesan cheese, from the deli
1 cup fat-free Italian salad dressing
1 red bell pepper, chopped
1 red onion, chopped
1/2 lb cheddar cheese, cut in 1/2 inch cubes
2 cups broccoli florets, steamed til barely tender
1/2 cup sliced ripe olives

Steps:

  • Cook and drain the pasta.
  • Toss all the ingredients together in a large bowl.
  • Chill for a minimum of four hours.
  • Put in your prettiest clear glass bowl, and serve.

When it's 105º F. outside, this is a perfect dish for entertaining. Easy to prepare, and easy to serve as a "make-it-your-way" one-dish meal. And Fritos work better in this dish than "real" tortilla chips.

1 head iceberg lettuce, cut up, torn up, shredded
2 lbs ground beef
4 cups pinto beans, drained (2 cans)
20 ounces Fritos corn chips
4 -6 green onions, sliced
1 (6 ounce) can sliced black olives
4 -6 tomatoes, cut into bite-sized chunks (make mine Romas!)
12 ounces pre-shredded cheddar cheese (or colby-jack, or colby, or...?)
12 ounces Pace Picante Sauce, medium spicy
1 ounce hot sauce

Steps:

  • Crumble-fry the ground beef (w/salt, pepper, garlic to taste) and allow it to cool.
  • Mix beef with beans and lettuce.
  • Stick a long spoon in the Picanté sauce jar.
  • Put remaining ingredients in individual bowls, with appropriate tongs, spoons, etc. for serving.
  • Put a layer of fritos in your bowl or on your plate.
  • Cover with beef-bean-lettuce mixture.
  • Add other ingredients as desired.
  • Apply the picanté sauce to taste. Add hot sauce as required by your palate.
  • Step aside, because the first ones through the line will be coming back for more!

12 ounces tri-color pasta
1 cup cheddar cheese (grated)
1 onion (chopped)
1 green pepper (chopped)
1/2 cup mayonnaise

Steps:

  • Prepare pasta according to box, drain.
  • Mix rest of ingredients. Mixture should have a slight creaminess.
  • Excellent warm or ice cold.
  • Variation: add diced leftover chicken for a quick main dish.

1 lb dry pasta (I like Rotini)
1 (16 ounce) can whole kernel corn
1 (16 ounce) can kidney beans
1 (16 ounce) bottle prepared French dressing
1 (16 ounce) jar prepared chunky salsa

Steps:

  • Cook the pasta according to package directions.
  • Drain and rinse the beans and corn.
  • Drain the cooked pasta, and combine with corn, beans, salsa, and salad dressing.
  • Mix well and cool for at least one hour.

Do you hate broccoli? You should try broccolini. It is similar to broccoli but more tender and mild in flavor. It is a hybrid vegetable of a cross between broccoli and Chinese kale. This salad can be served either warm or cold. Use any "tube" shaped pasta: penne, ziti, rigatoni, etc. (I like to use fresh pasta for this recipe.) Printed in our local natural foods' store flyer.

1 1/2 lbs shaped pasta (read INTRO)
1 lb Broccolini
1 (15 ounce) can chickpeas, drained (or equivalent amount of freshly cooked chickpeas)
1/4 cup walnut pieces, toasted
2 tablespoons balsamic vinegar
1/4 cup extra virgin olive oil
1 teaspoon Dijon mustard
cracked black pepper, to taste
1/2 lemon, juice of

Steps:

  • Cook the pasta until al dente. Drain and set aside.
  • Heat up a large pot of salted water to boiling. Place the broccolini stems in the boiling water. Return to boil and cook for 2-3 minutes, just until the stems are crisp-tender.
  • Drain the broccolini and rinse with cold water to halt the cooking process. Drain well again.
  • In a large serving bowl combine the broccolini with the cooked pasta. Gently stir in the chickpeas and *walnut pieces.
  • Whisk together the dressing ingredients in a small non-reactive bowl.
  • Pour dressing over the broccoli-pasta mixture. Toss gently to coat.
  • Squeeze the lemon juice over the salad and serve or cover and chill.
  • *NOTE: If you choose to serve the salad cold, stir in the walnuts just before serving.
