Las tradicionales arepas colombianas se complementan de sabor al ser rellenadas con camarones, queso y aguacate.

2/3 taza de agua
3/4 taza de granos de elote (maíz) congelados; descongelar antes de usar
1-1/2 taza de masa harina
1 taza de leche
2 cucharadas de aceite
1 chile jalapeño, picado
3 dientes de ajo, bien picaditos
1 libra de camarones medianos, crudos, pelados y sin venas
1/2 taza de tomate (jitomate) picado
1 cucharada de cilantro fresco picado
1 cucharada de jugo de limón verde (lime)
1 taza de queso mozzarella parcialmente descremado, de baja humedad y desmenuzado KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
1 aguacate, en 12 rebanadas

Steps:

  • Licúa el elote con el agua en la licuadora hasta obtener una mezcla homogénea; viértela en un tazón grande. Agrega la masa harina y la leche; revuélvelas hasta formar una masa suave. Divídela en 6 porciones; aplástalas en círculos de 5 pulgs. Dándoles vuelta de vez en cuando, cocínalos en una plancha o comal grande a fuego medio-alto durante 12 min. o hasta que estén bien doraditos por ambas caras.
  • Calienta el aceite en una sartén grande a fuego medio. Agrega los pimientos y el ajo; cocínalos y revuélvelos 1 min. Incorpora los camarones; cocínalos y revuélvelos de 2 a 3 min. o hasta que estén rosados. Agrega los tomates, el cilantro y el jugo de limón; mézclalos un poco. Retira la sartén del fuego.
  • Abre las arepas; rellénalas con el queso, la mezcla de camarones y los aguacates.

These arepas have a crispy crust while the cheese inside stays melty and gives you that cheese-pull that everyone knows and loves.

1 (8 ounce) package low-moisture mozzarella cheese
2 cups pre-cooked white cornmeal (such as P.A.N.®)
2 ½ cups warm water
1 ½ teaspoons kosher salt, divided
¼ cup canola oil, divided

Steps:

  • Shred 3 ounces of the mozzarella and cut remaining 5 ounces into 1/2-inch cubes. Transfer shredded cheese to a large bowl and cubed cheese to a medium bowl.
  • Add cornmeal, 1 teaspoon salt, and warm water to the shredded cheese and mix to combine. Set aside for 10 minutes to allow cornmeal to absorb liquid. The mixture should resemble soft Play-Doh.
  • Preheat the oven to 200 degrees F (95 degrees C).
  • With damp palms and fingers, place 1/4 cup arepa mixture into your palm and flatten into a 2 1/2-inch disk. Place 3 to 4 cubes of the mozzarella into the center. Gently fold edges of dough over to cover mozzarella cubes completely, patting to form a cake. Repeat until all dough and cheese has been used.
  • Heat 1 tablespoon oil in a large nonstick skillet over medium heat. Add 3 or 4 arepas and cook until both sides are golden brown and charred in spots, 4 to 5 minutes per side. Remove to a parchment-lined baking sheet and season with a pinch of the remaining salt. Place in the preheated oven to keep warm. Repeat with remaining oil, arepas, and salt.

Homemade Arepas image

It was at a New York City hole-in-the-wall eatery where I first fell in love with a stuffed white corn cake. Halfway through my first arepa, one stuffed with black beans, beef, plantains, and salty cheese, I vowed to learn how to make these at home. It's a truly magnificent delivery system for any number of your favorite fillings. I went with some spicy pork and avocado, but I made a version a few days later stuffed with caramelized plantains and salty goat feta.

2 ½ cups lukewarm water
1 teaspoon salt
2 cups pre-cooked white corn meal (such as P.A.N.®)
¼ cup vegetable oil, or as needed

Steps:

  • Stir water and salt together in a bowl. Gradually stir corn meal into water with your fingers until mixture forms a soft, moist, malleable dough.
  • Divide dough into 8 golf ball-size balls and pat each one into a patty about 3/8-inch thick.
  • Heat oil in a skillet over medium heat until shimmering. Working in batches, cook corn patties in hot oil until golden brown, 4 to 5 minutes per side. Transfer cooked arepas to a paper towel-lined plate to drain until cool enough to handle.
  • Slice halfway through each cake horizontally with a thin serrated knife to form a pita-like pocket.
