1 pound deli ham (thinly sliced (I like black forest ham-- but any kind will work))
1 cup Arby's Sauce (to taste (see below))
8 onion buns
2 Tbsp. butter
2 Tbsp. flour
3/4 c. milk (or more if needed)
1-2 c. cheddar cheese (shredded by hand, not pre-packaged)
salt & pepper (to taste)
1/2 cup ketchup
1 Tbsp apple cider vinegar
1 Tbsp brown sugar
2 Tbsp water
pinch of salt
1/4 tsp garlic powder
1/2 tsp onion powder
Frank's Red Hot Sauce (to taste (optional))

Steps:

  • In a medium-sized skillet over medium heat, cook deli ham until heated through (spray the pan with cooking spray to reduce sticking).
  • Spread Arby's sauce on one side of each bun and place ham on the bun.
  • Spoon on cheddar cheese sauce (see below) and serve.

Best Copycat Arby's Beef and Cheddar recipe has thin sliced roast beef, cheddar cheese sauce, and red ranch dressing piled high on an onion sandwich bun. This recipe makes 1 Beef n Cheddar sandwich.

2 Tablespoons cheddar cheese sauce
1 onion bun
2 Tablespoons Country French with Orange Blossom Honey Dressing
7 oz thinly sliced roast beef lunch meat

Steps:

  • Preheat the oven to 400 F.
  • Lay a sheet of aluminum foil flat on the counter.
  • Place the thin sliced roast beef in the center of the foil and fold up all four sides to completely enclose the beef.
  • Bake in the preheated oven for 10 to 15 minutes.
  • When the beef is almost done, heat the cheddar cheese sauce in a microwave safe bowl for 30 seconds or until heated through.
  • Place the bottom half of the onion bun on a plate and top with the Country French with Orange Blossom Honey Dressing. Click for Ken's Steak House Country French with Orange Blossom Honey Dressing.
  • Layer on the roast beef slices piled high.
  • Spread the heated cheese sauce on top of the roast beef.
  • Top the sandwich with the remaining half of the onion bun.

¼ teaspoon salt
1 cup whole milk
1 ¾ cups shredded sharp Cheddar cheese

Steps:

  • Melt butter in a saucepan over medium heat. Whisk in flour and salt until a paste forms. Slowly add milk; cook and stir until fully incorporated, about 2 minutes. Add cheese, stir to combine, and cook until melted, 1 to 2 minutes.

This sauce is as close as it gets without stealing the packets of sauce from Arby's. I have tried other recipes on this site that aren't as good, but this is spot on!

1 cup water
1/2 cup ketchup
2 tablespoons brown sugar
1/4 cup white vinegar
3/4 teaspoon garlic salt
1/2 teaspoon paprika
3 tablespoons Worcestershire sauce
1/8 teaspoon cayenne pepper
1 tablespoon cornstarch
2 tablespoons water

Steps:

  • Place all sauce ingredients in a blender and blend on high speed until thoroughly combined.
  • Pour mixture into a small saucepan, heat on medium low for 20 minute stirring occasionally.
  • Add thickening mix and stir well.
  • Reduce heat to low and let simmer 10 minute.
  • Remove from heat and cool completely before serving.
  • **Stores in covered container in the refrigerator**.
