2 cups of apricots, peeled and diced, core removed.
1 jalapeno, seeded and chopped
1 cup cilantro
3 Tbs apple cider vinegar
2 cloves of garlic
1/4 cup of red onion
juice of two limes
1/4 tsp salt or to taste

Steps:

  • Prepare apricots by slitting an X into the bottom, boiling in water for one minute then plunging them in cold water for 10 seconds. The peel should be loose and come off easily. Cut in half then remove core.
  • Place all ingredients in a food processor then pulse until the desired consistency. I use about 5-10 pulses, i like my salsas a little on the chunky side.
  • Serve with chips, veggies, fish, pork, chicken.

2 Whole Apricots, chopped
½ Fresh Lime, juiced
1 (5g) teaspoon Salt
½ (2g) teaspoon Red Wine Vinegar
1 Whole Medium Tomato, finely chopped
3 Tablespoons (38g) White Onion, finely chopped
2 teaspoons (8g) Jalapeno, finely chopped
1 teaspoon (7g) Orange Blossom Honey
1 Tablespoon (3g) Cilantro, finely chopped

Steps:

  • Finely chop the tomato, onion, jalapeno, and cilantro.
  • Combine in a medium sized bowl.
  • Sprinkle with salt, red wine vinegar, and lime juice, stir until mixed.
  • Chop the apricots, remove and discard the stone, and add to the mixture.
  • Drizzle with honey and stir well.

2 teaspoons Caribbean jerk seasoning
1/4 teaspoon brown sugar
1/4 teaspoon dried thyme
1/8 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon ground allspice
4 flour tortillas (8 inches)
Cooking spray
1/2 cup salsa
1/2 cup apricot preserves

Steps:

  • In a small bowl, combine the first six ingredients. Coat both sides of each tortilla with cooking spray; sprinkle with seasoning mixture., Cut into each tortilla into eight wedges. Transfer to an ungreased baking sheet., Bake at 400° for 5-7 minutes or until golden brown. Meanwhile, in a small bowl, combine salsa and preserves. Serve with chips.

GRILLED PORK TENDERLOIN AND APRICOT-SERRANO SALSA



Grilled Pork Tenderloin and Apricot-Serrano Salsa image

1 tablespoon honey
1 tablespoon balsamic vinegar
1 teaspoon ancho chile powder
1 clove garlic, minced
1 1/2 pounds pork tenderloin
Kosher salt and freshly ground black pepper
2 cups chopped (small cubes) fresh apricots (about 3 apricots)
1/2 cup fresh cilantro, finely chopped
1/4 cup fresh lime juice
1 serrano pepper, finely chopped
1/4 red onion, finely chopped
Kosher salt and freshly ground black pepper

Steps:

  • For the pork tenderloin: Mix the honey, balsamic vinegar, ancho chile and garlic together in a large resealable plastic bag. Season the tenderloin with salt and pepper. Place the tenderloin in the bag and squeeze out as much air as possible before sealing. Place the bag in the refrigerator and marinate for at least 1 hour and up to 24 hours.
  • For the apricot-serrano salsa: In a bowl, combine the apricot, cilantro, lime juice, serrano and onion. Season the salsa with salt and pepper. Cover and refrigerate.
  • Prepare a grill for medium-high heat.
  • The key to grilling a pork tenderloin evenly is to roll it to each of its 4 sides while cooking. Grill the tenderloin on the first side for about 5 minutes (times vary per grill, so be careful not to over-char). Roll the tenderloin onto the next side and grill for another 5 minutes. Repeat on all 4 sides, 5 minutes per side, until an instant-read thermometer registers around 150 degrees F. Allow the tenderloin to rest on a platter for about 10 minutes before you slice it, to allow the juices to redistribute. Serve with the apricot-serrano salsa and enjoy!

OVEN-ROASTED TRI-TIP WITH APRICOT AND PINEAPPLE SALSA



Oven-Roasted Tri-Tip with Apricot and Pineapple Salsa image

It's too cold to grill outside, so the oven finished off this tri-tip. Served with a salsa made from dried apricots and canned pineapple tidbits, this main dish will make you think of warmer days to come. We enjoyed it with steamed white rice and broccoli.

2 teaspoons seasoned salt
½ teaspoon smoked paprika
¼ teaspoon garlic powder
¼ teaspoon ground black pepper
1 (1 1/2 pound) beef tri-tip roast
2 tablespoons extra-virgin olive oil, divided
¾ cup diced dried apricots
½ (8 ounce) can pineapple tidbits, undrained
⅓ cup diced red bell pepper
¼ cup chopped fresh cilantro
2 tablespoons minced jalapeno pepper, or to taste
2 tablespoons fresh lime juice
1 clove garlic, minced
¼ teaspoon salt, or to taste

Steps:

  • Combine seasoned salt, paprika, garlic powder, and black pepper in a small bowl.
  • Pat tri-tip dry with paper towels and place on a cutting board or plate. Rub 1/2 of the spice mixture on one side of the tri-tip, and rub the remaining mixture on the other side. Drizzle 1 teaspoon olive oil on one side of the tri-tip and use a pastry brush to lightly coat the surface. Flip the tri-tip and repeat with 1 teaspoon olive oil on the other side.
  • Tightly wrap the seasoned tri-tip in plastic wrap, or use a zip-top bag, squeezing out as much air as possible before sealing. Place in the refrigerator to marinate for at least 1 hour, or up to 8 hours.
  • Meanwhile, make the salsa by combining apricots, pineapple tidbits and juice, bell pepper, cilantro, jalapeno, lime juice, garlic, and salt in a non-reactive container. Seal and refrigerate at least 1 hour, or longer, if possible, since the apricots will soften over time.
  • Allow tri-tip to come to room temperature, about 30 minutes.
  • Meanwhile, preheat the oven to 400 degrees F (200 degrees C).
  • Heat remaining 4 teaspoons olive oil in an oven-proof, nonstick skillet over medium-high heat. Unwrap the tri-tip, and carefully place it in the hot oil. Brown each side, 3 to 4 minutes. Quickly blot any extra oil in the skillet with paper towels, held with tongs.
  • Place the skillet in the preheated oven and bake until tri-tip is firm but still pink, 15 to 20 minutes, or until desired doneness is achieved. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). A higher internal temperature is not recommended, as the meat will be tough.
  • Remove from the oven and tent with foil, about 10 minutes. Slice into thin slices, about 1/4-inch thick, across the grain of the meat. Serve with the chilled salsa.

1/2 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika
6 boneless skinless chicken breast halves (4 ounces each)
3 tablespoons canola oil
1 jar (16 ounces) salsa
1 jar (12 ounces) apricot preserves
1/2 cup apricot nectar
Hot cooked rice

Steps:

  • Combine the first four ingredients in large bowl; add chicken in batches. Turn to coat. , In a large skillet, cook chicken over medium heat in oil until a thermometer reads 165°. Stir in the salsa, preserves and nectar; bring to a boil. Reduce heat; simmer, uncovered, until sauce thickens, 2 minutes. Serve with rice.

2 scallions
6 cups diced pitted just-ripe fresh apricots, peaches, or nectarines
1 tablespoon minced peeled fresh ginger (from a 1-inch piece)

1/2 teaspoon coarse salt
1/4 cup fresh lemon verbena or cilantro, coarsely chopped
2 tablespoons thinly sliced and halved red onion
Toasted flour- or corn-tortilla wedges, for serving

Steps:

  • Roast jalapenos and scallions over the flame of a gas burner, turning with tongs, until lightly charred, 2 to 3 minutes. (Or roast under broiler, turning as needed.)
