- Place apricots and hazelnuts in food processor. Cover and process, using quick on-and-off motions, until finely chopped. Place mixture in large bowl. Stir in cracker crumbs and milk.
- Shape mixture into 1-inch balls. Cover tightly and store in refrigerator up to 2 weeks or freeze up to 2 months.

- In a bowl, cream shortening and brown sugar. Beat in molasses. Add the eggs, one at a time, beating well after each. Combine remaining ingredients; stir into batter. Cover and refrigerate for at least 2 hours. , Shape into 1-in. balls and place 2 in. apart on greased baking sheets. Bake at 350° for 10 minutes or until browned.

- In a food processor, mix together butter, sugar, and 1 cup flour until crumbly. Spread mixture onto bottom of prepared baking pan. Bake approximately 25 minutes or until light brown; remove from oven.
- In a medium bowl, combine 1/2 cup flour, baking powder, and salt. In a small bowl, gradually beat brown sugar into eggs; add to four mixture and stir until well combined. Mix in vanilla extract, nuts, and chopped apricots; spread onto top of baked layer.
