It's just about candy making time. I have a bunch of candy recipes.

Number Of Ingredients 8

8 oz dried apricots ( 1 cup )
1 c shredded coconut
3/4 c pistachio nuts
1 tsp grated lemon peel
1 tsp lemon juice
1 Tbsp orange juice
2 Tbsp powdered sugar
granulated sugar

Steps:

  • 1. Steam apricots in the top part of double boiler over water for 10 minutes.
  • 2. Put apricot, coconuts, nuts and peel through food grinder together twice, using a fine blade.
  • 3. Add juices and powdered sugar, stir well. Shape into small balls, and roll in granulated sugar.
  • 4. Let dry several hours before using or storing in a airtight container.
  • 5. Makes about 2 dozen bolls.
  • 6. If desired, these may be dipped in chocolate coating. Let dry on waxed paper until chocolate is cold and firm.

1-1/2 cups dried apricots
2 cups sweetened shredded coconut
2/3 cup sweetened condensed milk
Confectioners' sugar

Steps:

  • Place apricots in a food processor; cover and pulse until chopped. Transfer to a large bowl; add coconut and milk. Shape into 1-in. balls; roll in sugar. , Place on a baking sheet. Refrigerate until firm. Store in an airtight container in the freezer or refrigerator.

White Chocolate Apricot and Coconut Truffles image

Deliciously sweet fruity truffles! The apricot and coconut complement each other perfectly and they look divine.

Number Of Ingredients 5

75 g dried apricots, finely chopped
1/2 cup desiccated coconut
2 tablespoons condensed milk
200 g white chocolate
1 teaspoon vegetable oil

Steps:

  • Mix apricots, coconut and condensed milk in a small bowl until well combined. Cover and refrigerate for 15 minutes.
  • Using your hands, roll teaspoonfuls of the mixture into balls and place on a tray lined with baking paper. Refrigerate again for 15 minutes.
  • Combine oil and chocolate in a small heatproof microwave container and microwave for 1 minute 30 seconds or until chocolate is melted. Stir well.
  • Using a fork, dip one ball of the apricot mixture into the chocolate mixture to coat all over and place again on the lined tray.
  • Repeat with remaining balls and chocolate mixture.
  • Refrigerate for 15 minutes or until chocolate has set.

½ cup butter, softened
¼ cup white sugar
1 cup all-purpose flour
⅔ cup dried apricots
1 cup water
2 eggs
1 cup packed light brown sugar
⅓ cup all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
1 teaspoon vanilla extract
1 teaspoon lemon juice
1 cup chopped walnuts
¾ cup flaked coconut
⅓ cup confectioners' sugar for decoration

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). In a medium bowl, mix together butter, sugar, and 1 cup flour. Press into the bottom of an ungreased 9x13 inch pan.
  • Bake for 25 minutes in preheated oven. In small saucepan, bring apricots and water to a boil, and cook for 10 minutes. Drain, chop, and set aside to cool.
  • In a medium bowl, beat eggs and brown sugar. Stir in 1/3 cup flour, baking powder, salt, vanilla, and lemon juice. Fold in nuts and chopped apricots. Stir in coconut, if desired. Pour over the prepared crust.
  • Bake for an additional 20 minutes in the preheated oven, or until firm. Cool, and dust with confectioners' sugar before cutting into squares.

1-1/4 cups all-purpose flour
1/4 cup sugar
1-1/2 teaspoons baking powder
1/2 cup cold butter
3 ounces cream cheese
1/2 cup sweetened shredded coconut
1/2 cup apricot preserves
GLAZE:
1/2 cup confectioners' sugar
2 tablespoons apricot preserves
1-1/2 teaspoons butter, softened
1-1/2 teaspoons whole milk

Steps:

  • In a large bowl, combine the flour, sugar and baking powder. Cut in butter and cream cheese until mixture resembles coarse crumbs. Add coconut and preserves; mix well. , Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheet. Bake at 350° for 10-12 minutes or until golden brown. Remove to wire racks to cool completely. , In a small bowl, combine all the glaze ingredients. Spoon over cookies.

2 cups finely chopped dried apricots
2-1/2 cups sweetened shredded coconut
1 can (14 ounces) sweetened condensed milk
1-1/4 cups chopped walnuts
Confectioners' sugar

Steps:

  • In a bowl, combine apricots and coconut. Add milk; mix well. Stir in walnuts. Chill for 30 minutes (the mixture will be sticky). , Shape into 1-in. balls and roll in confectioners' sugar. Cover and refrigerate for at least 2 hours before serving. Store in refrigerator.
