1 Tbsp Extra Virgin Olive oil1 whole free-range chicken, cut into pieces2 onions, chopped2 cloves garlic, chopped3 Tbsp tomato paste1 Tbsp sweet chilli chicken sauce1 can chopped tomatoes1 400g / 14oz can apricot halved, drained1 cup chicken stock1 tsp chopped fresh thyme

Steps:

  • Heat the olive oil in a large frying pan or saucepan and brown chicken pieces for 2-3 minutes on both sides until lightly browned. Set chicken aside. Drizzle a little more olive oil into the same pan and fry onion and garlic until soft, about 3-4 minutes. Add back the chicken, along with the tomato paste, sweet chilli sauce, herbs, tomatoes, apricots, water and chicken stock. Roughly break up the apricots with a wooden spoon. Stir all ingredients together and partially cover with a lid. Simmer on medium heat for 15-20 minutes until the chicken is cooked through. Serve hot with rice, couscous or mash, and greens. Sprinkle fresh thyme on top.

A recipe i adapted from the traditional Apricot Chicken Recipe my mother used to make. I was looking for a dish that had a thicker sauce with no bones that would allow for a less messy dish. with all the flavour of the original.

4 chicken breast fillets
6 slices rindless bacon
2 large brown onions
dried apricot (torn in half vertically)
1 cup plain flour
1 cup chicken stock
1/2 cup apricot nectar (one small tin)
Chinese five spice powder
salt and pepper

Steps:

  • Dice chicken into small cubes or strips which ever you prefer. salt and pepper chicken and lightly coat in plain flour.
  • Place chicken in a hot pan with olive oil and brown in batches removing from pan to pat excess oil off with absorbent paper.
  • Slice bacon rashers into strips and place in pan with roughly diced onions and cook untill onions are almost tender.
  • Add browned chicken pieces back to the pan and toss amongst the bacon and onion.
  • Add 1 cup of chicken liquid stock to 1/2 cups of apricot nectar. (add liquid as desired in this ratio to obtain desired thickness of casserole)Let simmer for 3-5 mins and thicken with cornflour if desired.
  • serve over rice or beside side dish of stir fried vegetables.

1 (40 g) packet French onion soup mix
425 ml apricot nectar
plain flour, for coating chicken pieces

Steps:

  • Coat chicken pieces in flour and place in casserole dish.
  • Sprinkle contents of soup packet over chicken.
  • Pour apricot nectar over chicken.
  • Cover casserole dish and bake at 180 C for 1 1/2 hours.
  • Serve over boiled rice.

12 chicken drumsticks
1 (2 ounce) packet onion soup mix
2 tablespoons cornflour
1 teaspoon ground ginger
2 cups apricot puree
salt and pepper
chives, chopped

Steps:

  • Place chicken drumsticks in a casserole dish.
  • Mix onion soup mix, cornflour and ginger into the apricot puree.
  • Season with salt and pepper.
  • Pour over the chicken.
  • Cover and bake at 180 degrees Celsius (350 degrees Fahrenheit) for 50 to- 55 minutes or until chicken is cooked.
  • To serve, sprinkle with chopped chives.

1 (2 ounce) packet French onion soup mix
1/2 cup flour

Steps:

  • Preheat oven to around 180 degrees celsius.
  • Lightly coat fillets with flour.
  • Mix french onion soup mix with apricot nectar.
  • Pour into casserole dish.
  • Place chicken fillets into dish.
  • Turn them over to make sure they're coated with nectar/soup mix.
  • Bake for around 35 - 45 minutes.
  • Serve with rice and steamed veg.
  • Dinner's done!

2 cans (15 ounces each) apricot halves
1/2 cup plus 2 tablespoons butter, divided
1 cup packed brown sugar
1/4 cup all-purpose flour
1-1/3 cups crushed butter-flavored crackers (about 36 crackers)

Steps:

  • Drain apricots, reserving 3/4 cup juice. Place apricots in a greased 11x7-in. baking dish. melt 1/2 cup butter; add the brown sugar, flour and reserved juice. Pour over apricots., Bake, uncovered, at 350° for 20 minutes. melt remaining butter; toss with crackers crumbs. Sprinkle over top. Bake 15-20 minutes longer or until golden brown.
