Balsamic-Glazed Salmon Fillets image

A glaze featuring balsamic vinegar, garlic, honey, white wine and Dijon mustard makes baked salmon fillets extraordinary.

6 (5 ounce) salmon fillets
4 cloves garlic, minced
1 tablespoon white wine
1 tablespoon honey
⅓ cup balsamic vinegar
4 teaspoons Dijon mustard
salt and pepper to taste
1 tablespoon chopped fresh oregano

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil, and spray with non-stick cooking spray.
  • Coat a small saucepan with non-stick cooking spray. Over medium heat, cook and stir garlic until soft, about 3 minutes. Mix in white wine, honey, balsamic vinegar, mustard, and salt and pepper. Simmer, uncovered, for about 3 minutes, or until slightly thickened.
  • Arrange salmon fillets on foil-lined baking sheet. Brush fillets with balsamic glaze, and sprinkle with oregano.
  • Bake in preheated oven for 10 to 14 minutes, or until flesh flakes easily with a fork. Brush fillets with remaining glaze, and season with salt and pepper. Use a spatula to transfer fillets to serving platter, leaving the skin behind on the foil.

2 tablespoons apricot preserves
1 teaspoon spicy brown mustard
4 (8 ounce) fresh salmon fillets

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Mix apricot preserves with mustard.
  • Place salmon fillets on the prepared baking sheet. Brush 1/2 of the apricot mixture over top.
  • Bake on the top rack of the preheated oven for 16 minutes. Pull from the oven and brush with remaining apricot mixture. Cook until salmon flakes easily with a fork, about 2 more minutes.

2 tablespoons unsalted butter
4 fresh apricots, pitted and halved
3 tablespoons balsamic vinegar
2 tablespoons honey
1/2 cup fresh ricotta

Steps:

  • In a medium skillet over medium heat, melt the butter and cook until the foam subsides. Place the apricots cut side down in the skillet and cook, stirring occasionally, until apricots are slightly tender and warmed through, 5 to 6 minutes. Meanwhile, in a small bowl, whisk together balsamic vinegar and the honey. When apricots are ready, and add honey-balsamic mixture to the skillet. Increase the heat to medium-high and cook, stirring frequently, until the apricots have cooked through and the glaze is bubbling, uniformly coating the apricots. To serve, place a scoop of ricotta on each serving plate, top with 2 apricot halves and drizzle with the honey-balsamic glaze from the skillet.

This sounds great!! It is made with jalapenos, mustard, and apricot preserves. It was a Guy Fieri Foodnetwork recipe that I simplified. The glaze should be cooked then cooled, so add about 30 minutes for the cooling step.

2 tablespoons oil
2 jalapenos, minced
1 tablespoon garlic, minced
1/2 cup white wine
3 tablespoons whole grain mustard
1 cup apricot preserves
4 (6 ounce) salmon fillets, skinned and boned
2 teaspoons salt
1 teaspoon fresh ground black pepper
4 sprigs fresh rosemary (3-inch)
1 lemon, zest of

Steps:

  • In a small saute pan over medium heat, heat oil.
  • When hot, add jalapenos and saute until caramelized.
  • Add garlic, and after a minute, deglaze with white wine. Then add the mustard and apricot preserves and bring to a simmer. Simmer over low heat for 20 minutes and let completely cool.
  • Preheat oven to 400 degrees F.
  • Place salmon fillets on parchment paper or non-stick foil on a baking sheet and lightly season the fillets with salt and pepper, and place a rosemary sprig on each fillet.
  • Spoon cooled apricot mixture over fillets.
  • Bake salmon approximately 13 minutes.
  • Garnish with lemon zest.
