I love this apricot oat bars recipe. The bars are delicious and very easy to make. Make them for a lazy Sunday and have them with a cup of coffee in the afternoon, make them for a potluck, so you can be the star of the party or just for yourself when you want something sweet and delicious.

1 1/2 cups all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups quick-cooking rolled oats
1 cup brown sugar
3/4 cup unsalted butter room temperature
3/4 cup apricot jam

Steps:

  • Preheat oven to 350F.
  • In a big bowl, sift together flour, baking powder, salt.
  • Add oats and sugar and mix well.
  • Cut in butter until the mixture resembles bread crumbs. The recipe works better if the butter is not very cold.
  • Pat 2/3 of crumbs in a pan with the size of 11x7x1 1/2 inch.
  • Spread the entire surface with apricot jam.
  • Top with remaining crumbs.
  • Bake for 35-40 minutes or until the surface is golden bown.
  • Cool and cut in 2 1/2 dozens.

Slightly buttery and crunchy with great oat flavor. Apricots and the slightly citrusy and peppery ginger are meant to be together! These bars are a great way to transform fruits and oats into something every kid, big and small, will devour!

1 cup gluten-free all-purpose flour
½ cup almond meal
½ teaspoon baking soda
¼ teaspoon salt
1 cup gluten-free rolled oats
½ cup packed light brown sugar
½ cup white sugar
½ cup unsalted butter, melted
2 teaspoons vanilla extract
¼ teaspoon almond extract
⅓ cup white sugar
1 tablespoon cornstarch
2 cups pitted and diced apricots
1 tablespoon diced fresh ginger

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch baking dish and line with parchment paper; grease parchment paper.
  • Whisk flour, almond meal, baking soda, and salt together in a bowl. Add oats, brown sugar, and 1/2 cup white sugar; whisk to blend and break up clumps of brown sugar. Pour melted butter, vanilla extract, and almond extract over flour mixture; stir with a spatula until moistened.
  • Press 2/3 of the flour mixture into the bottom of the prepared baking dish to make the crust.
  • Whisk 1/3 cup white sugar and cornstarch together in a small bowl. Add apricots and ginger and toss to coat.
  • Spread apricot mixture over the crust. Sprinkle remaining 1/3 of the flour mixture on top.
  • Bake in the preheated oven until top is golden brown and crisp and filling is bubbling, 35 to 40 minutes. Cool completely before cutting into bars, about 25 minutes.

7 dried apricots
40 g rolled oats
150 ml mint tea
30 g chopped mixed nuts

Steps:

  • Soak the apricots in enough boiling mint tea to cover them for 3 hours. If you are short on time simmer the fruit in the tea for 30 minutes.
  • Heat oven to 180C'350°F.
  • Drain apricots and puree reserving the tea. Place in a pan with the oats, nuts and 50ml of the mint tea. Cook over a low heat for 5 minutes.
  • Oil a baking sheet and press the mixture into it. Bake for 20 minutes.
