- In a large, heavy-bottomed pot or Dutch oven, add the bacon and canola oil, turn the heat to medium-high and cook the bacon until it starts to crisp, 4 to 5 minutes.
- Add the red onions and green pepper, season with salt and pepper and saute over medium-high heat until the vegetables have softened, about 5 minutes. Add the beans, barbecue sauce, maple syrup, vinegar and mustard. Bring to a simmer, cover, reduce the heat to low and continue to cook the beans, about 45 minutes. Remove the lid and cook uncovered until the sauce has reduced and thickened and the flavors have developed, about 15 minutes. Just before serving, adjust the seasoning with salt and pepper.

- Preheat oven to 325°. In a large skillet, cook beef and onion over medium heat until beef is no longer pink, 5-7 minutes, breaking up beef into crumbles; drain. Stir in remaining ingredients. Transfer to a greased 2-qt. cast-iron pan or baking dish. , Bake, uncovered, until the beans are as thick as desired, 45-60 minutes.

- In a large pot or dutch oven, cook the bacon. Remove to a paper towel lined plate to drain. Reserve 3 Tbsp drippings in pan.
- Add the diced onion to the pot and cook for 2 minutes until the onion becomes translucent. Add the ground beef. Add seasoned salt and black pepper. Cook until no pink remains in the ground beef. Drain any excess fat from the pan before adding to the bean mixture. Remove from the heat.
- Add the remaining ingredients to the cooked ground beef and onions along with crumbled bacon. Mix well. (May reserve some bacon to sprinkle on top, if desired.)
