APPLESAUCE CRUNCH CAKE
There's applesauce cake and then there's applesauce CRUNCH cake. Why go for ordinary when you can opt for extraordinary with a crunchy topping?

Steps:
- Preheat oven to 350 degrees. Lightly grease a 9x13-inch baking pan; set aside.
- Combine butter, brown sugar, flour, and nuts in a large bowl; mix until thoroughly combined. Set aside 1 cup for topping.
- Add egg, applesauce, cinnamon, and baking soda to butter and flour mixture; mix well. Pour into pan and sprinkle with 1 cup remaining topping.
- Bake for 50 minutes. Serve warm as is or topped with vanilla ice cream and caramel syrup (optional). Also tastes great as a cooled cake!

THE BEST HOMEMADE APPLESAUCE
After tasting the pure apple flavor of this homemade sauce, you just might never go back to the store-bought kind. Supermarket applesauce can be loaded with added sweeteners and flavorings. We use only a little sugar, plus lemon juice, salt and cinnamon, providing a balanced flavor and the perfect amount of sweetness.

- Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
- Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
- Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.

- Preheat oven to 375 degrees.
- Mix applesauce, brown sugar, raisins, and cinnamon in ungreased round pan, 9x1 1/2".
- Heat in oven for 15 minutes.
- Mix baking mix, sugar, and margarine until crumbly; stir in nuts.
- Sprinkle evenly over applesauce mixture. Bake until golden brown, about 25 minutes.

- Melt butter. Crush/blend vanilla wafers into small crumbs. Thoroughly mix butter, brown sugar, cinnamon, and vanilla wafer crumbs. Grease bottom of small cake pan or glass baking dish. Pour applesauce in it. Sprinkle vanilla wafer mix over the applesauce. Bake at 325 degrees for 30 minutes. Top with vanilla ice cream if desired.

- Mix the oats, 1/2 cup flour, and brown sugar in a bowl; cut in the butter or margarine until crumbly. Place half of the mixture in the bottom of a greased 8x8" baking dish.
- Combine the apples, 1 tablespoons flour, cinnamon, salt, water, and granulated sugar; place in the baking dish over the oat mixture.
