NO RECIPE RECIPE: APPLES FOSTER
Steps:
- Melt butter in a large nonstick frying pan over medium heat. When the foaming subsides, add the vanilla, cinnamon, and salt. Sprinkle sugar evenly into pan and cook until bubbly.
- Remove the pan from the heat and arrange the apples on top in a single layer. Return the pan to stove and cook over medium heat until the apples are glossy and knife tender, about 5 to 7 minutes. Remove the pan from the heat and add the rum. Carefully light the rum, with a long kitchen match. Return the pan to the heat and cook, shaking gently, until the flames subside. Transfer the apple mixture to serving dishes and serve immediately over ice cream.
JERSEY BLACK BUTTER (LE NIERE BEURRE), AKA APPLE BUTTER
From Jersey Channel Islands, UK Between 1600 and 1700, twenty percent of Jersey's arable land was made up of orchards. Cider was made by farmers to give to their staff, making up part of their wages. The island's export trade in apples peaked in 1810 when 4.5 million litres left the island. A great tradition that exists as a result of Jersey's proliferation of apples is the production of 'black butter' or 'Le Niere Buerre'. Made from cider apples, the new cider is boiled over a fire for many hours - up to two days! When the cider is 'reduced' by half, apples, sugar, lemon, liquorice and spices are added. The mixture is continuously stirred with a wooden 'rabot' or paddle. Production of the butter is a very popular community event following each winter crop with traditional singing, dancing, storytelling and chatting going on into the early hours of the morning. Although not as common, the black butter evenings still take place. The tradition also exists further afield. In Pennsylvania USA, early immigrants took the custom with them but renamed it 'Apple Butter'.

- Take 4 pounds of full ripe apples, and peel and core them. Meanwhile put into a pan 2 pints of sweet cider, and boil until it reduces by half. Put the apples, chopped small, to the cider. Cook slowly stirring frequently, until the fruit is tender, as you can crush beneath the back of a spoon. Then work the apple through a sieve, and return to the pan adding 1lb beaten (granulated) sugar and spices as following, 1 teaspoon clove well ground, 2 teaspoons cinnamon well ground, 1 saltspoon allspice well ground. Cook over low fire for about ¾ hour, stirring until mixture thickens and turns a rich brown. Pour the butter into into small clean jars, and cover with clarified butter when cold. Seal and keep for three months before using. By this time the butter will have turned almost black, and have a most delicious flavour.

THE BEST APPLE PIE YOU WILL EVER EAT!
I've made this pie many times it is delicious every time! I made it for Thanksgiving everyone loved it and begged for the recipe. I got the crust recipe from a European cook book called The Essential Baking Cookbook. The filling comes from the latest edition of Better Homes and Garden Cookbook. It may seem silly to use to different recipes but this crust gets rave reviews everytime I make it! My mom and my mom's mom have been using the Better Homes and Garden cookbook their whole life. I bought the newest edition and I love it.

Steps:
- Lightly grease a 9 inch pie plate.
- Sift the flours into a bowl and rub in the butter, using your fingertips, until mixture resembles fine breadcrumbs.
- Stir in the sugar, then make a well in the center.
- Add almost all the water and mix with a flat-bladed knife, using a cutting action, until the mixture comes together in beads.
- Add more water if the dough is too dry.
- Gather together and lift out onto a lightly floured surface.
- Press into a ball and divide into two, making one half a little bigger.
- Cover with plastic wrap and refrigerate for 20 minutes.
- Preheat oven to 375 degrees F.
- Meanwhile, cut and peel apples.
- In a large bowl stir together the 3/4 cup sugar, the flour, cinnamon, and nutmeg.
- Add apple slices and gently toss until coated.
- Roll out the larger piece of pastry between two sheets of baking paper to line the base ans side of the pie plate.
- Line the pie plat with the pastry.
- Use a small sharp knife to trip excess pastry.
- Transfer apple mixture to the pastry-lined pie plate.
- Roll out the other pastry between the baking paper until large enough to cover the pie.
- Note: If doing a lattice pattern, weave on top of pie.
- Place on filling and seal.
- Cup slits and crimp edge as desired.
- If desired, sprinkle sugar on top of pie.
- To prevent over-browning, cover edge of pie with foil.
- Bake in 375 degrees F for 40 minutes.
- Remove foil.
- Bake in 20 minutes more until fruit is tender and filling is bubbly.
- Note: If you used a lattice pattern, bake 30 minutes instead of 20 minutes. After the 30 minutes, cover whole pie with foil and bake an additional 10 minutes or until fruit is tender and filling is bubbly.
- Cool on wire rack.
- If desired, serve with Vanilla Ice Cream.

- Preheat oven to 350 degrees F (175 degrees C.)
- In a large bowl, combine apples, cinnamon, nutmeg, white sugar and 1/2 cup baking mix. Stir together the milk and eggs and mix into apple mixture, Pour filling into pie plate and dot with butter.
- To make the Topping: In a large bowl, combine 1 cup baking mix, walnuts, brown sugar and margarine. Mix until crumbly and sprinkle over top of apples.
- Bake in the preheated oven for 60 minutes, or until apples are cooked and topping is golden brown.

- 1. In a large skillet over medium-high heat, melt butter and cook until it foams. Once foaming subsides, stir in sugar and spice and cook 1 minute to allow flavors to meld.
- 2. Lay apples into pan in a single layer and cook until fruit begins to caramelize, about 5 minutes.
