2 skinless, boneless chicken breasts
1 teaspoon dried oregano
¼ teaspoon cayenne pepper
1 pinch salt and ground black pepper to taste
1 tablespoon butter
1 (8 ounce) package chopped white mushrooms
¼ cup chopped white onion
1 tablespoon Worcestershire sauce
1 pinch salt and cracked black pepper to taste
1 splash red wine
½ cup shredded mozzarella cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Coat both sides of chicken breasts with oregano and cayenne pepper and place on a baking sheet. Season with salt and pepper.
  • Bake in the preheated oven for 15 minutes.
  • Melt butter in a nonstick skillet over medium heat. Add mushrooms, onion, Worcestershire sauce, and red wine. Cook and stir until vegetables shrink down a bit, about 5 minutes. Season with salt and cracked black pepper. Reduce heat to medium-low to low; cook until tender, 10 to 15 minutes.
  • Pour mushroom mixture on top of the chicken. Continue baking until chicken is no longer pink in the center and the juices run clear, about 8 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Sprinkle mozzarella cheese on top of the chicken and cook until cheese is bubbly, about 5 minutes more.

1/4 teaspoon hot sauce
1/8 teaspoon dried dill weed
1/8 teaspoon cumin
1 cup shredded colby-monterey jack cheese
2 cups corn chips, crumbled

Steps:

  • Directions:.
  • Whisk together the first 8 ingredients, coat chicken in mixture, and marinade for at least 2 hours.
  • Whisk together the next 9 ingredients, cover, and chill until needed.
  • Grill the marinated chicken breasts for 3-5 minutes per side, or until cooked through. Discard marinade.
  • Brush grilled chicken with reserved dressing, sprinkle with cheese, and broil until cheese has melted.
  • Serve the chicken over a bed of crumbled chips.

Steps:

  • Simmer milk and chicken broth for gravy over low heat, being careful not to scorch.
  • Add garlic, onion powder, pepper and salt to gravy.
  • In a small dish, stir together cold water and cornstarch.
  • Stir cornstarch slurry into gravy, stirring constantly, and increase heat, cooking until gravy is thickened.
  • Set gravy aside and keep warm.
  • Heat 2-3 inches of oil in a deep skillet to 350F.
  • Mix ingredients for dusting and coating in separate bowls.
  • Stir together dry ingredients for batter in a bowl.
  • Add oil, eggs, milk, and water, stirring with a whisk until mixture is smooth.
  • Place a chicken breast into the dusting mixture and cover both sides.
  • Then dip chicken breast in the batter and allow excess batter to drain.
  • Then place battered chicken breast in the coating mixture, covering batter evenly but not too thick.
  • Fry chicken at once for 6-8 minutes or until chicken reaches 165F.
  • Do the same with the other breasts, but do not crowd pan.
  • Drain chicken when cooked and serve hot with Country Gravy.

4 (6 ounce) skinless, boneless chicken breast halves
¼ teaspoon salt
¼ teaspoon lemon pepper seasoning
1 tablespoon vegetable oil
8 strips bacon
1 onion, sliced
¼ cup packed brown sugar
½ cup shredded Colby-Monterey Jack cheese

Steps:

  • Sprinkle chicken with salt and lemon-pepper.
  • Heat oil in a large skillet over medium heat; cook the chicken breasts in hot oil until no longer pink in the center and the juices run clear, 13 to 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove and keep warm.
  • Place bacon in large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; reserve 2 tablespoons drippings. Cook and stir onion and brown sugar in reserved drippings until onion is golden, about 5 minutes.
  • Place two bacon strips on each chicken breast half; top with caramelized onions and sprinkle with Colby-Monterey Jack cheese.

Robyn was accurate in naming this chicken recipe - it really is awesome! The flavor of all the fresh veggies cooked down with the chicken is fantastic. Melting your favorite cheese just brings this to a whole new level. We used pepper jack and loved the spice. But use your favorite. A great low-carb way to prepare a plain chicken...

Number Of Ingredients 8

6 boneless chicken breasts
salt, pepper and desired seasonings to taste
cooking oil and a little butter
8 oz fresh sliced mushrooms
1 green pepper, chopped
1/2 c chopped onion
a little minced garlic or garlic powder to taste
your favorite cheese (cheddar, muenster or pepper jack are my favorites)

Steps:

  • 1. Put a few tablespoons cooking oil (I use canola) and a couple of tablespoons butter into a skillet. Sauté the mushrooms, green pepper, onion, and garlic in butter/oil mixture until tender.
  • 2. Flatten the chicken, if desired; sprinkle with desired seasonings.
  • 3. Place the chicken into the pan.
  • 4. Cover with the vegetables and let simmer until chicken is cooked through.
  • 5. Note: You can also remove the vegetables while you're cooking the chicken and then when chicken is done, simply throw everything back onto the tops of chicken breasts. The choice is yours.
  • 6. Add shredded cheese or large slices of cheese.
  • 7. Cover with lid just long enough to melt cheese down through the vegetables and onto the chicken. (My favorite cheese to use is the pepper jack... mmm!)
  • 8. Makes 6 servings. Do not freeze.
  • 9. Serve with your favorite sides. Hint: To make this a little less fattening, try grilling your chicken on the outdoor grill and saute your vegetables in fry pan on top of stove as in recipe. Then continue with rest of recipe.
