APPLE-WALNUT COOKIES
I've gotten into the habit of baking a dozen or so cookies to eat now and then freezing what remains for another day. Whether you're having a dinner party, last-minute guests, or just want a spur-of-the-moment treat, always having homemade cookies on hand--instead of a box of store-bought cookies that will be stale within a week--is just about the coziest thing ever.

Steps:
- Preheat the oven to 350 degrees F.
- In a large bowl, combine the flours, oats, baking soda, baking powder, salt, and cinnamon.
- Using a stand mixer or hand mixer, beat the butter and honey on medium speed for 1 minute, or until creamy. Add the egg and vanilla and beat on medium speed until smooth, about 1 minute.
- Slowly add the dry ingredients to the wet, mixing to incorporate as you go. Stir the apple and walnuts into the batter.
- Drop 1 tablespoon of dough at a time onto a baking sheet lined with parchment or a silicone baking mat, keeping space between the cookies (see Cook's Note). Bake for 12 minutes, or until golden. Remove to a cooling rack and serve.
APPLE WALNUT OATIES

- 1. Preheat oven to 375-degrees
- 2. In a mixing bowl combine: flours, starch, baking soda, baking powder, salt, nutmeg, allspice, cinnamon and set aside.
- 3. In a second bowl combine oil, sugar, flax egg, and vanilla.
- 4. Pour the liquid into the dry mix and mix together until well combined.
- 5. Next, add in oats, apples and walnuts and fold together.
- 6. On a nonstick cookie sheet, drop a heaping tablespoon of the mix. Really press the mix into your tablespoon so that it forms a nice compact ball.
- 7. Bake for 10-12 minutes until slightly golden.
- 8. NOTES For an extra crunchy top, I like to pop them under the broiler for a minute. Since there is fresh apple in these, by nature, the cookies will get softer each day they are stored. *If you're not gluten free or vegan, all-purpose flour and a regular egg can be used.
APPLE WALNUT BARS

- In a large bowl, cream butter and sugar until light and fluffy. Beat in egg. Combine the flour, baking powder, baking soda and cinnamon; gradually add to the creamed mixture, just until combined. Stir in apple and walnuts., Pour into a greased 8-in. square baking dish. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

- Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. In a medium bowl, stir together the quick oats, flour, baking powder, baking soda, salt, cinnamon and nutmeg, set aside.
- In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in the egg and applesauce. Stir the oatmeal mixture into the batter until well blended then fold in the chocolate chips, raisins and walnuts. Drop by rounded spoonfuls onto the prepared cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

- *Note:Oatmeal ingredients and cooking instructions based off my favorite brand of rolled oats and may vary from your own; I recommend following your own brand's directions to make 4 servings.
- Over medium heat, melt butter in skillet.
- Add apples and walnuts and sauté for a couple of minutes, then add pumpkin pie seasoning and cinnamon.
- Continue to sauté for another minute, stirring continuously.
- Once apples have softened a bit, add brown sugar and 2 tablespoons water.
- Continue to sauté for a few more minutes, until apples are"al dente".
- Remove from heat.
- Bring 4 cups water to a boil, add oats.
- Cook for 10-20 minutes over medium heat, depending on your desired thickness.
- When oatmeal is about 80% of your desired thickness, add apple mixture and mix in well.
- Add cinnamon and sugar to taste.
- Remove from heat and let stand until it reaches your desired consistency.
- Serve with a little bit of your favorite milk.
