APPLE CREPES

These apple crepes are easy to make and a delicious treat for any time of the day!

Number Of Ingredients 8

1 egg
50 g all purpose flour ((plain flour) approx 1/3 cup)
95 ml milk (1/3 cup plus 1 tbsp)
1 pinch salt
1 apple
1/2 tbsp unsalted butter (10g, approx - or a little more as needed)
1 tbsp brown sugar
1/4 tsp cinnamon (or a little more, to taste)

Steps:

  • Put all of the crepe ingredients in a blender and blend together until smooth. Alternatively mix with a hand blender. Set aside a couple minutes to rest while you prepare filling.
  • Peel and core the apple and cut into a relatively small dice. Warm the butter over a medium-low heat in a small-medium skillet/frying pan and add the apple pieces along with the sugar and cinnamon. Cook for a couple minutes until the apples are gently soft and caramelized. Set aside.
  • Warm a crepe pan over a medium heat and brush lightly with oil (if needed - may not if it's a seasoned non-stick). Using a small scoop or measure, take approximately 1/4 of the mixture at a time and swirl on the pan. The best way is to hold it as you pour on in the middle, and rotate the pan to circle it round.
  • Leave the crepe on the heat until the surface is dry and the edges start to brown and curl up. Flip over and cook a minute more on the other side. Remove from pan or flip over again and add a spoonful of the apple filling, roll up the crepe and serve. You can also add a little cream or ice cream.

¾ cup milk
1 ½ tablespoons vinegar
1 cup flour
3 tablespoons sugar
1 teaspoon cinnamon ((if you really love cinnamon you can add another ½ teaspoon))
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 egg
2 tablespoons oil
2 tablespoons butter
2 apples (peeled, cored, and diced)
2 tablespoons brown sugar
½ teaspoon cinnamon
⅓ cup maple syrup

Steps:

  • Preheat a skillet to medium-high heat (275 degrees).
  • Whisk together the milk and vinegar and allow to rest for 5 minutes.
  • While milk is curdling, whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
  • Whisk egg and oil into milk. Add wet ingredients to dry ingredients and stir until combined (don't over-mix, it should still have some lumps).
  • Spray skillet with cooking spray. Use a 1/4 cup measuring cup to pour batter onto skillet. Cook about 2 minutes until bubbles form and the edges start to look "dry". Use a spatula to flip the pancake and cook another 1-2 minutes on the other side. Set pancakes aside and repeat with remaining batter.
  • Add butter, apples, brown sugar, and cinnamon to a medium sauce pan. Stir over medium heat 3-5 minutes until apples are very tender. Stir in syrup. Serve apple topping over warm pancakes.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Combine flour, cinnamon, nutmeg, cloves, and salt in a small bowl.
  • Grease a pie pan or 8-inch square baking pan with cooking spray. Place apple slices in the prepared pan and sprinkle with flour mixture. Drizzle milk, maple syrup, and vanilla over top; toss to coat.

1/2 cup 2% milk
2 large eggs, room temperature
1/2 cup all-purpose flour
1/4 teaspoon salt
1 to 2 tablespoons butter
1/4 cup packed brown sugar
3 ounces cream cheese, softened
1/2 cup sour cream
1/2 teaspoon vanilla extract
1-1/2 cups thinly sliced unpeeled apples
1/4 cup chopped walnuts

Steps:

  • In a small bowl, combine milk, eggs, flour and salt. Beat until smooth. Heat a cast-iron or ovenproof skillet in at 450° oven until hot. Add butter to the skillet; spread over entire bottom. Pour in batter; bake for 10 minutes or until golden brown. , Meanwhile, combine sugar and cream cheese. Blend in sour cream and vanilla. I discovered this sweet topping when I had an abundance of apples to use up. It's a great alternative to bottled syrup. My family enjoys the tender apples and crunchy nuts over waffles, but the topping is also wonderful over sliced of pound cake or scoops of vanilla ice cream.

3 large tart apples, peeled and sliced
1-1/2 cups maple syrup
